Steps:
- On a lightly floured cutting board, roll out 1 piece of puff pastry into a rectangle about 1/16-inch thick. Brush generously with the melted butter, then place in the refrigerator for 10 minutes to set the butter. Repeat with the remaining sheet of puff pastry.
- Lightly brush the top of the puff pastry with ice water. Arrange the candy bars in a line on the bottom edge, leaving a small space between each. Using a pizza wheel, cut the pastry into strips between the candy bars. Roll the candy bars up tightly, pressing the edges to seal. Place in the freezer to rest while oven heats up.
- Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment and arrange the croissants at least 4 inches apart, seam-side down. Brush well with melted butter, then bake for 15 minutes. Brush again with butter, rotate the pans, and bake until golden brown, about 10 minutes more. Allow to cool for at least 20 minutes before serving.

- Grease a 9x13 inch pan.
- Mix graham cracker crumbs, butter, peanut butter and powdered sugar together in a large mixing bowl. Press the mixture into the prepared pan.
- In a small pot melt chocolate chips and condensed milk together over a low heat. Stir until well mixed. Spread the chocolate mixture over the peanut butter mixture. Chill the cookie-bars for 4 hours. Cut and serve.

PAY DAY CANDY BAR
In December of 1996, Hershey Foods snagged the U.S. operations of Leaf Brands for a pretty penny. This added several well known candies to Hershey's already impressive roster, including Good & Plenty, Jolly Rancher, Milk Duds, Whoppers, Heath, and this delicious peanut roll, which we can finally clone at home. The center is sort of a white fudge that we can make by combining a few ingredients on the stove, then getting the mixture up to just the right temperature using a candy thermometer (you've got one, right?). Once cool, this candy center is coated with a thin layer of caramel, then quickly pressed onto roasted peanuts. Looks just like the real thing! This recipe will make eight candy bars. But it's up to you to make the dental appointment

Steps:
- Combine all ingredients for the centers, except the powdered sugar, in a small saucepan over low heat.
- Stir often as the caramel slowly melts.
- When the mixture is smooth, add 3/4 cup of powdered sugar.
- Stir.
- Save the remaining 1/2 cup of powdered sugar for later.
- Use a candy thermometer to bring the mixture to exactly 230 degrees, stirring often, then turn off the heat.
- When the temperature of the candy begins to drop, add the remaining 1/2 cup powdered sugar to the pan, then use a hand mixer on high speed to combine.
- Keep mixing until the candy cools and thickens and can no longer be mixed.
- That should take a minute or two.
- Let the candy cool in the pan for 10 to 15 minutes, or until it can be touched.
- Don't let it sit too long- you want the candy to still be warm and pliable when you shape it.
- Take a tablespoon-size portion and roll it between your palms or on a countertop until it forms a roll the width of your index finger, and measuring about 4 1/2 inches long.
- Repeat with the remaining center candy mixture and place the rolls on wax paper.
- You should have 8 rolls.
- Let the center rolls sit out for an hour or two to firm up.
- Combine the 20 caramels with the 1 1/2 teaspoons of water in a small saucepan over low heat.
- Stir often until the caramels melt completely, then turn off the heat.
- If you work fast this caramel will stay warm while you make the candy bars.
- Pour the peanuts onto a baking sheet or other flat surface.
- Using a basting brush and working quickly,"paint" a coating of caramel onto one side of a center roll.
- Quickly turn the center over, caramel-side-down, onto the peanuts and press gently so that the peanuts stick to the surface of the candy.
- Paint more caramel onto the other side of the roll and press it down onto the peanuts.
- The candy should have a solid layer of peanuts covering all sides.
- If needed, brush additional caramel onto the roll, then turn it onto the peanuts to coat the roll completely.
- Place the candy bar onto wax paper, and repeat with the remaining ingredients.
- Eat when completely cool.

Don't over-cook the chips or the chocolate will burn and seize up on you. Drop a candy bar center into the melted milk chocolate. Cover the candy bar with chocolate using 2 forks, 1 in each hand. When the candy is covered with chocolate, balance the bar on both of the forks, one at each end of the candy bar, and tap the forks on the top edge of the bowl so that much of the chocolate drops off. Carefully place the candy bar onto waxed paper and remove the 2 forks. Repeat with the remaining ingredients, and then chill the candy bars until firm.

- Beat 3 cups confectioners' sugar, cream cheese, lemon juice, and 1 teaspoon vanilla extract together in a large bowl using an electric mixer until frosting is smooth. Cover bowl with plastic wrap and refrigerate while preparing cake.
- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking pan.
- Beat brown sugar and butter together in a large bowl using an electric mixer until smooth; beat in eggs, 1 at a time, until smooth. Stir 2 tablespoons ginger, 1 teaspoon vanilla extract, and salt into brown sugar-butter mixture until incorporated.
- Beat flour and baking powder into brown sugar-butter mixture until batter is smooth; fold in 3/4 cup dried cranberries and white chocolate chips. Pour batter into the prepared baking pan, spreading evenly.
- Bake in the preheated oven until cake is lightly browned and a toothpick inserted in the center comes out clean, about 30 minutes. Cool cake completely, 4 hours to overnight. Remove frosting from refrigerator 1 hour before frosting the cake.
- Spread frosting evenly over cake; sprinkle with 1/4 cup dried cranberries and 2 tablespoons ginger.
- Whisk 1/2 cup confectioners' sugar and cream together in a bowl until smooth; drizzle over frosted cake. Cover cake with plastic wrap and refrigerate until chilled, about 2 hours.
- Cut cake in half lengthwise and each half into 8 equal rectangles. Cut each rectangle in half diagonally, creating 16 triangle-shaped bars.

- Coarsely chop peanuts and set aside.
- Add both bags of chocolate chips to a sauce pan and melt chocolate over med/low heat. Stirring occasionally until all chocolate chips are melted and smooth.
- Then add in peanut butter and stir until mixed in and melted.
- Fold in the nuts, and raisins. Mix until combined.
