CANNELLINI BEAN AND SAUSAGE STEW

Vegetable oil cooking spray
2 tablespoons extra-virgin olive oil
2 medium fennel bulbs, outer layers removed, chopped
1 medium onion, chopped
1 1/2 teaspoons kosher salt
1/2 teaspoon red pepper flakes
One 28-ounce can diced tomatoes
One 15-ounce can cannellini beans
One 10-ounce bunch kale, center rib removed, leaves chopped into 1/2-inch pieces
1 cup low-sodium chicken broth
4 turkey or chicken Italian sausage links

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a grill pan with vegetable oil cooking spray.
  • In a Dutch oven, heat the oil over medium-high heat. Add the fennel, onion, 1 teaspoon of the salt and the red pepper flakes. Cook, stirring constantly, until the vegetables are soft, about 5 minutes. Add the tomatoes (plus juices), beans, kale and broth. Bring the mixture to a boil. Cover the pan with a tight fitting lid and transfer to the oven. Cook until the vegetables are tender and the kale has wilted, 25 to 30 minutes.
  • While the stew is cooking, place a grill pan over medium-high heat or preheat a gas or charcoal grill. Add the sausages and grill, turning occasionally, until cooked through, about 20 minutes. Cool and cut into 1/2-inch-thick slices.
  • Remove the pan from the oven and add the cooked sausage slices. Season with the remaining 1/2 teaspoon of salt. Spoon the stew into bowls and serve.

3 Italian turkey sausage links (4 ounces each), casings removed
1 medium onion, chopped
2 garlic cloves, minced
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 cup water
1/4 cup white wine or additional reduced-sodium chicken broth
1/4 teaspoon pepper
1 bunch escarole or spinach, chopped
4 teaspoons shredded Parmesan cheese

Steps:

  • Cook the sausage and onion in a large saucepan over medium heat until meat is no longer pink; drain. Add garlic; cook 1 minute longer., Stir in the beans, broth, water, wine and pepper. Bring to a boil. Add escarole; heat through. Sprinkle with cheese.

2 cups dried cannellini beans, sorted and rinsed
7 cups water
10 fresh sage leaves, divided
1 medium roma tomato, cored and cut in half
1/4 cup olive oil
3 garlic cloves, minced
1 cup finely chopped onion
2/3 cup finely chopped carrot
2/3 cup finely chopped celery
1/8 teaspoon red pepper flakes
1 (15 ounce) can crushed tomatoes
1 1/2 cups chicken stock
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/3 cup mascarpone, cheese*

Steps:

  • In a large bowl, pour beans, add water to a level of 3 inches above beans and soak for 6 hours or overnight.
  • Drain.
  • Place beans in a soup kettle or Dutch oven; add 7 cups of water, 5 sage leaves and tomato. Bring to a boil; reduce heat and simmer uncovered for 1-1/2 to 2 hours or until beans are almost tender.
  • Drain and reserve beans; discard liquid, sage and tomato.
  • In a large saucepan, heat oil over medium heat.
  • Add garlic, remaining sage, onions, carrots, celery, red pepper flakes and sauté until tender. Add beans, crushed tomatoes, stock, salt and pepper.
  • Cover, reduce heat to low, continue to cook for 15-20 minutes.
  • Meanwhile in a large skillet, prepare sausages according to package directions.
  • Drain.
  • Cut sausage links into thirds.
  • Just before serving, gently stir mascarpone cheese into beans. Spoon prepared beans into individual bowls and top with sausage pieces.
  • Garnish with additional fresh sage. Serve.
  • *1/3 cup cream cheese, cubed, may be substituted for mascarpone cheese.

2 pounds mild Italian sausage links, casings removed
1 small onion, chopped
2 tablespoons garlic, minced
1 (32 ounce) carton beef stock
2 cups water
4 cubes beef bouillon
1 (16 ounce) can tomato sauce
1 (15.5 ounce) can cannellini beans, drained and rinsed
1 (15.5 ounce) can dark red kidney beans, drained and rinsed
1 (15.5 ounce) can garbanzo beans, drained and rinsed
1 (14.5 ounce) can cut green beans, drained and rinsed
1 (14.5 ounce) can Italian-style diced tomatoes, undrained
1 (14.5 ounce) can sliced carrots, drained
½ (6 ounce) can tomato paste
1 (1.25 ounce) package beefy onion soup mix
1 ½ cups shredded cabbage
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 teaspoon ground black pepper, or to taste

1 cup shell pasta
¼ cup shredded Parmesan cheese, or to taste

Steps:

  • Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, onion, and garlic; cook and stir until sausage is browned and crumbly and onion is translucent, 8 to 10 minutes.
  • Pour beef stock into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add water and bouillon cubes.
  • Add tomato sauce, cannellini beans, kidney beans, garbanzo beans, green beans, diced tomatoes with juice, carrots, tomato paste, soup mix, cabbage, garlic powder, Italian seasoning, pepper, and salt. Reduce heat to medium and simmer for 40 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain.
  • After soup has cooked for 40 minutes, add cooked shells. Simmer for another 5 minutes. Ladle into bowls and top with shredded Parmesan cheese.

1 ½ cups dry cannellini beans
4 (6 ounce) Italian sausage links with garlic and fennel
1 cup chopped yellow onion
⅓ cup dry white wine
1 teaspoon freshly ground black pepper
¼ teaspoon red pepper flakes
1 bay leaf
6 cups water, or to taste
1 teaspoon salt, plus more to taste
4 cups chopped kale
1 tablespoon extra-virgin olive oil, or to taste
6 tablespoons grated Parmigiano-Reggiano cheese, or to taste
6 pinches red pepper flakes

Steps:

  • Soak beans in cold water, 8 hours to overnight.
  • Drain beans and set aside.
  • Make a cut down the center of each sausage and peel off the casing. Transfer sausage into a dry soup pot over medium-high heat. Brown sausage, while breaking it up into small pieces with a wooden spoon, 5 to 7 minutes. Cook and stir until juices start to caramelize and stick to the bottom of the pan, creating a fond, 3 to 5 minutes.
  • Add onion and stir to coat in the rendered sausage fat. Cook until onion starts to turn translucent, about 5 minutes. Add white wine to deglaze the pot. Add black pepper, red pepper flakes, bay leaf, and water.
  • Add drained beans, increase heat to high, and bring to a boil. Once boiling, reduce heat to medium-low and simmer for 30 minutes. Add salt and continue to simmer until beans are tender, about 30 more minutes. Taste beans to be certain they are perfectly cooked.
  • Smash about 1/4 of the beans with a potato masher to give the stew a creamy texture if desired. Stir in chopped kale, increase heat to medium, and cook until tender, 10 to 15 minutes. Taste and adjust salt.
  • Ladle hot soup into bowls, drizzle with olive oil, and sprinkle with Parmigiano-Reggiano cheese and a pinch of red pepper flakes.

2 tbsp sunflower oil
8 Italian sausages
1 onion, peeled and finely chopped
2 sticks celery, trimmed and chopped
3 cloves garlic, peeled and finely chopped
400g can Cirio Chopped Tomatoes
Salt and freshly ground black pepper
3 sage leaves, roughly chopped
2 bay leaves
2 x 400g cans cannellini beans, drained

Steps:

  • Heat oil in a pan and fry sausages to brown lightly all over.
  • Turn down heat and add onion, celery and garlic over gentle heat to soften but not brown.
  • Pour over Cirio Chopped Tomatoes and bring to bubbling.
  • Season, then turn down to simmer for 10 minutes.
  • Add sage and bay leaves. Spoon in cannellini beans and stir.
  • Season again and cook for another 5 minutes to heat beans.

3/4 cup heavy cream
1/2 cup freshly grated parmesan cheese, divided
1 teaspoon lemon rind, freshly grated

Steps:

  • Preheat oven to 375 degrees.

  • Turn mixture into a greased 2 qt casserole.

  • Sprinkle on top of casserole.
