3 cup apple cider or apple juice
1.5 cup packed brown sugar
0.5 cup granulated sugar
2 tablespoon lemon juice
0.5 teaspoon ground cinnamon

Steps:

  • Quarter and core unpeeled apples. In an 8- to 10-quart heavy pot combine apples and apple cider. Bring to boiling; reduce heat. Simmer, covered, for 30 to 35 minutes or until apples are very tender, stirring frequently.
  • Press apple mixture through a food mill or sieve into a large bowl. Discard peels and seeds. Measure 7 1/2 cups pulp; return to pot. (If you have leftover apple mixture, chill it and serve it as applesauce.)
  • Stir in brown sugar, granulated sugar, lemon juice, and cinnamon. Bring to boiling; reduce heat. Cook, uncovered, over very low heat for 1 1/2 to 1 3/4 hours or until mixture is very thick and mounds on a spoon, stirring frequently.
  • Ladle hot apple butter into hot sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.
  • Process filled jars in a boiling-water canner for 5 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.

6 pounds apples - peeled, cored, and cut into small cubes
2 cups brown sugar
2 teaspoons ground cinnamon
½ teaspoon ground allspice
¼ teaspoon salt
¼ teaspoon ground cloves
2 (11 ounce) packages individually wrapped caramels, unwrapped

Steps:

  • Combine apples, brown sugar, cinnamon, allspice, salt, and cloves in a slow cooker.
  • Cook on High until apples are tender enough to easily mash with a fork, 3 to 5 hours. Puree apple mixture with an immersion blender until smooth.
  • Microwave unwrapped caramels in a microwave-safe dish until melted, about 30 seconds. Add to slow cooker and cook for 1 to 2 hours.
  • Inspect ten 8-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water for at least 5 minutes. Wash new, unused lids and rings in warm soapy water.
  • Pack apple butter into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1 tablespoon lemon juice
1 teaspoon cinnamon
½ teaspoon salt
2 tablespoons flour
1 cup brown sugar
½ cup butter, chopped into small pieces
1 teaspoon cinnamon
½ cup white sugar
½ cup brown sugar
⅓ cup flour

Steps:

  • Preheat oven to 350ºF (180ºC).
  • Core apples and cut into ¼-inch (6 mm) slices, then cut those slices in half width-wise.
  • In a large bowl, combine apples and all filling ingredients. Stir well and transfer to a 13x9 inch (23x33 cm) baking dish.
  • For the topping - in a separate bowl, combine all topping ingredients and mash together with a fork until it forms into small and medium-sized clumps.
  • Sprinkle the topping evenly over the apples.
  • Bake for 40-45 minutes or until the liquid has thickened and the apples are tender.
  • Cool for 10 minutes and serve with a scoop of vanilla ice cream.

1 1/2 cups gingersnap cookie crumbs
1/4 cup butter or margarine, melted
20 caramels, unwrapped
3/4 cup apple butter
3 packages (8 oz each) cream cheese, softened
1/4 cup sugar
2 tablespoons Gold Medal™ all-purpose flour
3 eggs
30 caramels, unwrapped
1/2 cup half-and-half

Steps:

  • Heat oven to 300°F. Wrap outside of 9- or 10-inch springform pan in heavy-duty foil. In small bowl, mix cookie crumbs and butter. Press in bottom and 1/2 inch up sides of ungreased pan.
  • In medium microwavable bowl, microwave 20 caramels and 1/2 cup of the apple butter uncovered on High 2 1/2 to 3 minutes, stirring every 30 seconds, until melted. Stir in remaining 1/4 cup apple butter; set aside to cool.
  • In large bowl, beat cream cheese, sugar and flour with electric mixer on medium speed about 1 minute or until smooth and creamy. On low speed, beat in eggs, 1 at a time. Reserve 1/2 cup batter. Fold caramel mixture into remaining batter without mixing it in completely, leaving a few streaks. Pour over crust. Drop spoonfuls of reserved batter over the top. Cut through batter several times with knife for marbled design.
  • Bake 1 hour 15 minutes to 1 hour 25 minutes or until center looks almost set when pan is jiggled. Without releasing side of pan, run metal spatula carefully around cheesecake to loosen. Turn oven off; open oven door at least 4 inches. Leave cheesecake in oven 30 minutes, then remove from oven; cool completely at room temperature, about 2 hours. Cover and refrigerate at least 4 hours or overnight. Run metal spatula around cheesecake to loosen again. Remove side of pan; leave cheesecake on bottom of pan to serve.
  • In 1-quart saucepan, heat 30 caramels and the half-and-half over low heat, stirring frequently, until caramels are completely melted. Serve warm or cool over slices of cheesecake.

¼ teaspoon ground allspice
2 cups boiling water

Steps:

  • Make the caramel sauce: In a medium saucepan, combine the heavy cream, brown sugar, and honey. Bring to a boil over medium heat and cook until the sugar is dissolved, about 2 minutes.
  • Reduce the heat to medium-low and simmer for 5 minutes, stirring occasionally, until the caramel starts to thicken. Remove the pot from the heat and whisk in the butter. Pour into a heatproof measuring cup or jar and let cool until ready to use. The caramel sauce can be stored in an airtight container in the refrigerator for up to 1 month.
  • Make the hot buttered rum batter: In a medium bowl, combine the butter, brown sugar, cinnamon, nutmeg, cloves, and allspice and mix with an electric hand mixer on medium speed until smooth. The batter will keep in an airtight container in the refrigerator for up to 1 month.
  • To assemble, add 2 tablespoons of batter to each mug. Pour 4 ounces (½ cup) of boiling water into each mug and stir to dissolve the batter.   • Add in Musselman's Apple Butter and caramel sauce and beat until fully incorporated.
  • Add in 1/2 cup powdered sugar and mix well, until dip starts to turn fluffy.

2 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour

1/4 teaspoon salt
1-1/2 cups buttermilk
2/3 cup packed brown sugar
1/2 cup all-purpose flour
1/4 cup cold butter
3/4 cup finely chopped pecans
1/2 cup old-fashioned oats
6 cups thinly sliced peeled Gala or other sweet apples (about 6 medium)
18 caramels, unwrapped
1 tablespoon buttermilk
Optional toppings: Vanilla ice cream, whipped cream, additional chopped pecans and ground cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, cinnamon, ginger and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Pour into a greased 12-in. cast-iron or other ovenproof skillet., For topping, in a small bowl, mix brown sugar and flour; cut in butter until crumbly. Stir in pecans and oats; sprinkle over batter.
