When plums are in season, I make this every other week. I originally adapted the recipe for use with chicken, but discovered it was even better with pork. I fixed it for 70 people for my granddaughter's christening and everyone wanted the recipe.

1 tablespoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/4 teaspoon pepper
1/4 teaspoon ground cloves
1 boneless whole pork loin roast (3 to 4 pounds)
2 tablespoons olive oil, divided
1 large onion, chopped
2 tablespoons sugar
1/2 cup cranberry juice
1 cup chicken broth
4 medium fresh plums, pitted and sliced

Steps:

  • In a small bowl, combine the first six ingredients; rub over roast. In a Dutch oven, brown roast in 1 tablespoon oil on all sides. Remove roast and set aside., In the same pan, cook onion in remaining oil over medium heat until tender. Add sugar; cook, stirring occasionally, 3-4 minutes longer. Add cranberry juice; bring to a boil. Cook until liquid is reduced by half., Return roast to the pan; add broth. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours. , Add plums; cover and simmer 30-45 minutes longer or until a thermometer reads 145°. Let stand 10 minutes before serving. Thicken pan juices if desired.

1 pork tenderloin
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 red onion, sliced
2 shallots, sliced
3 fresh thyme sprigs, or more to taste
2 firm plums, pitted and each cut into 4 wedges
1 cup water
1 tablespoon balsamic vinegar
1 teaspoon cold butter

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Generously season pork tenderloin with salt and black pepper.
  • Heat oil in a large, oven-proof skillet over medium-high heat. Cook tenderloin until browned on all sides, 2 to 4 minutes per side. Transfer tenderloin to a plate.
  • Saute onion with a pinch of salt in the same skillet until just softening, 3 to 5 minutes. Add shallots, reduce heat to medium, and cook and stir until shallots and onion are golden brown and caramelized, about 10 minutes.
  • Stir thyme into onion mixture; place tenderloin over onion mixture, and set plum quarters, skin-side down, around pork tenderloin. Transfer skillet to preheated oven.
  • Cook until pork is slightly pink in the center, about 20 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Transfer pork and plums to a plate.
  • Place skillet over medium-high heat and pour water and balsamic vinegar into onion mixture. Bring mixture to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Cook and stir until liquid is reduced by half, 5 to 10 minutes; remove from heat. Whisk butter into mixture until melted and sauce is shiny. Pour sauce over pork and plums.

3 kg/ 6 lb boneless skin on pork shoulder, NOT scored (, unrolled / netting removed (Note 1 & 6))
3 tsp cooking / kosher salt ((NOT salt flakes or table salt, Note 7))
1 1/4 tsp black pepper
2 tsp fennel seeds ((or other herb/spice of choice))
1 tbsp+ 1 tsp olive oil
1 garlic bulb (, halved horizontally)
2 onions (, halved (brown, white, red))
2 cups dry white wine, or alcoholic or non-alcoholic cider ((Note 2))
1/4 cup flour ((Note 5))
2 cups chicken broth/stock (, low sodium)
Salt and pepper

Steps:

  • Dry skin: Pat the skin dry with paper towels. If time permits, leave in the fridge uncovered overnight (even 1 hr helps). If not, pat extra well.
  • Preheat oven to 220°C/430°F (200°C fan).
  • Season flesh: Sprinkle pork flesh with 1 1/2 tsp salt, all the pepper and all fennel seeds and 1 tbsp olive oil. Rub into flesh, right into all the crevices and cracks.
  • Salt skin: Flip pork, drizzle skin with 1 tsp oil, then rub all over with fingers. Sprinkle all over with remaining 1 1/2 tsp salt, taking care to get even coverage. Un-salted patches will not become bubbly crackling, it will be a hard flat sheet.
  • Garlic & onion bed: Place halved garlic bulbs and onion in roasting pan. Place pork skin side up on top of them.
  • Wine: Carefully pour wine into the pan, being sure not to wet the skin. Transfer to oven.
  • Lower oven: Immediately turn oven down to 160°C/320°F (140°C fan).
  • Slow roast: Roast for 2 1/2 hours.
  • Level at 1 1/2 hours: Check pork after 1 1/2 hours to see if the pork is warped and the skin's overall surface is significantly unlevelled. If so, adjust to make the skin surface as level as possible using balls of foil and moving large dislodged pork pieces to the side (key tip for crispy crackling, Note 3). Then return to oven for the remaining 1 hour.
  • Check pan & salt on skin: If pan is drying out, add some water. If there are bald patches on the skin without salt (eg it fell off), spray lightly with oil spray (or brush lightly with oil) then sprinkle with salt. (Remember, salt = bubbly skin!)
  • Increase heat: Turn oven up to 250°C/485°F (all oven types), or as high as it will go if your oven won't go this high.
  • Make skin crisp: Return pork to oven for 30 minutes, rotating pan as needed, until skin is crisp and bubbly all over. If needed, use foil patches, secured with water soaked toothpicks, to cover parts that are done and keep crisping up remaining patches.
  • Rest: Transfer pork to serving platter, tent loosely with foil (don't worry, crackling stays super-crisp) and rest for 20 minutes (stays warm up to 1 hour). Then slice using a serrated knife.
  • Serve with gravy. Don't pour gravy over crackling - pour it off to the side! See note for reheating.

  • Combine 8 cups coarse salt, 2/3 cup black pepper, allspice, and juniper berries in same roasting pan. Stir to blend. Add 1 cup water and stir to moisten.   • Roast pork in salt crust until instantread thermometer inserted straight down into pork from top center registers 165°F, about 2 1/2 hours.
  • Transfer roasting pan to work surface. Let pork rest 10 to 20 minutes. Remove all salt from around pork. Transfer pork to cutting board, brushing off any remaining salt. Position roast so that bones are vertical. Cut between bones and meat to remove bone slab in 1 piece.

¼ cup rice vinegar
3 cloves garlic, minced
2 tablespoons Asian fish sauce

1/2 teaspoon sweet paprika

Steps:

  • Cook the pork: Season the pork all over with the salt, then sift the paprika through a fine mesh sieve over the pork. Heat a cast iron skillet large enough to hold the pork. Add the oil and when it begins to smoke lightly, use a pair of metal tongs to place the pork into the hot oil. Cook over high heat, turning the pork often, browning on all sides, until it reaches an internal temperature of 145 degrees F in the thickest part of the tenderloin, about 15 minutes total (if you like a little more "done", cook a few minutes longer on each side). Remove the pork and allow it to "rest" on a flat surface. If you like a little more "done", cook a few minutes longer on each side.
  • Make the sauce: In a medium bowl, combine the vinegar, soy sauce, honey, fish sauce, and ginger. Add the scallions. Taste for seasoning. Set aside.
  • Assemble the wraps: On a large serving platter, arrange "cups" of lettuce leaves, 2 to 3 layers of lettuce per cup. Form the cups with one leaf inside another with the lettuce spines stacked on top of the other.
  • Slice the pork into 1/4-inch thick rounds. Top each lettuce cup with 3 or 4 slices of pork. Season the pork with a little more salt, then top with the chiles. Drizzle the meat with some of the sauce. Top with the cilantro leaves. Top with more sauce if you like.

3 pork loins, fat and any tough muscle trimmed (this is the whitish-grey muscle that you should always trim off as it toughens the meat when cooking)
4 fresh wheat tortillas (or corn if you are going gluten free)
For the marinade:
2 tbs ready made apple sauce
1 tbs brown sugar
2 tbs plum sauce
1 tsp freshly grated ginger
½ tsp freshly cracked pink peppercorns
½ tsp allspice
½ tsp cinnamon
Salt and black pepper for seasoning
3 tbs olive oil
For the plum salsa:
5 semi ripe red plums (don’t use the ones that are too ripe as you want a crunch to the salsa)
1 tsp pomegranate molasses (or 1 tbs honey mixed with 1 tbs lemon juice if you can’ t find pomegranate molasses)
1 ½ tbs rapeseed oil
Grated rind of ½ orange
Salt and black pepper for seasoning

Steps:

  • Mix all the ingredients for the pork loin marinade. Cover and leave to chill in the fridge for at least 2 hours. In the meantime, prepare the plum salsa. Slice the plum into small wedges. Combine all the rest of the salsa ingredients in a glass bowl and add the plum wedges. Leave to chill until required. 20 minutes before serving, remove the pork for the fridge and bring back to room temperature. Heat a wide frying pan, adding 1 tbs olive oil to heat until hot but not smoking. Place the pork loins into the oil, turning round regularly to sear and brown all over. Lower the heat, add the remaining marinade from the bowl, cover and lower the heat to medium. Cook, turning occasionally for even cooking, basting with the marinade for around 12 minutes. Every 2 â€" 3 minutes, add a splash of water, so the marinade does not dry and burn. You want to keep it a thick marinade at all times and avoid burning it on the bottom of the saucepan. Remove the meat from the pan and let it rest on a clean chopping board, covered with foil paper. Keep the leftover marinade juices from the pan. Now for the assembly. Gently heat one wrap and cut into quarters. Wrap in a soft cloth and heat in the microwave for 40 seconds or so until slightly softened. Don’t heat them too long as they will get hard. You want them soft enough to fold. Add 2 tbs cranberry sauce and ½ cup water to the remaining marinade sauces from the pan. Heat until slightly thickened for 2 minutes. Slice each pork loin into approximately 10 thin slices each. Spread 1 tsp of the sauce onto a wrap triangle. Place one slice of pork on the sauce. Top with a heaped teaspoon of plum salsa. Finish by bringing the two opposing sides of the wrap together, securing with a nice bamboo style cocktail stick or regular toothpick. Place your wraps on a large rustic platter, with a heap of the leftover plum salsa on the side with a small bowl of the remaining dipping sauce. Watch how quick these get devoured!
