Steps:
- Melt 2 tablespoons butter in large nonstick skillet over medium heat. Add apples and sauté until beginning to soften. Add the sugars, nutmeg and cinnamon and cook until soft and caramelized, about 5 minutes more. Remove from heat.
- Assemble quesadilla. Spread caramel sauce over one tortilla. Top with cooked apples and the second tortilla.
- Wipe skillet clean and melt remaining butter over medium heat. Add quesadilla and cook, flipping halfway through, until golden on both sides, about 2 minutes per side. Immediately coat both sides in cinnamon-sugar. Serve warm with ice cream.

- Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
- Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

- Preheat a large nonstick skillet over medium heat for 1 minute.; Add butter to the skillet, once melted, add sliced apple and cook for 5-6 minutes. Mix in brown sugar and cook for 1 minute. Mix in pecans and cinnamon, then continue to cook for 1 minute. Divide mixture into 2 portions and set aside.; Preheat a skillet or pan for 1 minute over medium-low heat. The temperature of the skillet is important so that the tortillas do not harden or overcook before the cheese fully melts. Heat tortillas for 30 seconds on one side and flip. Add ¼ cup of cheese, half of the apple mixture, add ¼ cup of cheese on top of the apple mixture. Top with the other tortilla. Cook until the cheese is melted and the tortillas are golden brown on each side (about 1½ minutes per side).; Warm caramel sauce in the microwave for 1 minute. Cut quesadilla into quarters, drizzle with caramel sauce, and sour cream on top. Enjoy!

- Chop apples coarsely; toss with lemon juice, sugar and cinnamon in a large bowl.
- Combine cream cheese and powdered sugar in a separate large bowl. Set aside.
- Heat 1 tbsp butter in a large nonstick skillet over medium-high heat. Saute apples and pecans about 5 minutes or until apples are tender. Remove from heat and stir into cream cheese mixture. Return skillet to heat.
- Melt 1 tsp butter in skillet; tilt skillet to spread butter. Place 1 tortilla in skillet; turn to coat both sides. Heat tortilla 30-60 seconds, turning as needed to prevent burning, until torilla is slightly crispy. Remove skillet from heat. Spoon 1/6 apple-cream cheese mixture (about 1/3 cup) down center of tortilla. Fold tortilla in half. Press lightly with spatula to close. Place quesadilla on a baking sheet in a low oven, uncovered, to keep warm.
- Repeat step #4 to make 5 more quesadillas. Reduce heat under skillet to Medium or move skillet on and off heat, as needed, to prevent burning.
- Serve quesadillas warm and drizzled with caramel topping.

- Whisk 2 1/2 cups flour and salt together in a bowl. Cut in shortening with 2 knives or pastry blender until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, tossing with a fork, until flour mixture is moistened and dough comes together. Do not add more water than you need. Divide the dough in half and shape into 2 balls. Wrap in plastic wrap and refrigerate, at least 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C). Line a 9-inch pie pan with wax paper.
- Melt 1/2 cup unsalted butter in a saucepan over medium heat. Stir in 3 tablespoons flour to form a paste. Stir in 1/4 cup white sugar, 1/2 cup brown sugar, 1/4 cup water, vanilla extract, cinnamon, and nutmeg; bring to a boil. Reduce heat and simmer until filling mixture is thickened slightly, about 3 minutes.
- Melt 1/3 cup butter in a separate saucepan over low heat. Add 1/2 cup brown sugar and whisk until smooth, about 2 minutes. Stir in pecans.
- Spread pecan mixture evenly onto lined pie pan. Roll out one ball of dough; line pie pan over pecan mixture. Toss apples with filling mixture; pour into pie plate. Roll out second ball of dough and place over apple filling. Crimp edges of bottom and top crusts together. Cut several small slits into top crust to vent. Place pie on foil-lined baking sheet.
- Bake pie in the preheated oven until crust is golden brown, about 1 hour.
- Remove pie from oven and allow to cool slightly, 5 to 10 minutes. Place a serving plate gently over pie and carefully flip to invert, being careful not to come in contact with molten sugar. Peel off waxed paper; cool for 1 hour.

On my search for a recipe from a local restaurant I came across this one that sounds somewhat familiar. I've posted the original recipe which uses Stouffer's Harvest Apples but you can also use your favorite apple pie filling, however, be sure to precook before filling the quesadillas.

- Cimbine sugar and cinnamon in small bowl.
- Melt butter in large skillet over medium-low heat; heat each tortilla on one side for 3 minutes or until golden.

Steps:
- Mix brown sugar, 1/2 teaspoons cinnamon, and nutmeg together in a small bowl.
- Melt 1 Tbl. butter in saute pan, add apple and sugar/cinnamon/nutmeg mix, stir and saute over medium heat for two minutes.
- Remove from heat and place in small bowl.
- Brush one side of each tortilla with the second Tbl. butter.
- Mix the white sugar and 1/2 teaspoons cinnamon and sprinkle on the buttered side of both tortillas.
- Heat saute pan over medium heat.
- When hot add one tortilla, buttered& sugared side down.
- Top with apple mix and drizzle with ice cream topping.
- Place second tortilla on top, buttered/sugared side up.
- Saute for 1-2 minutes, until browned and crisp.
- Flip and saute for another 1-2 minutes.
- Remove from pan and place on plate, top with ice cream, if desired, and enjoy apple heaven!

- Place in a pan with 1 tablespoon of water, cover and cook until just soft, stirring occasionally.
- Combine sugar and cinnamon in small bowl.
