SLIGHTLY PICKLED HONEYDEW WITH HERBS
A cross between a pickle and a salad, these sweet and spicy melon wedges make a great side for grilled meats, especially those with Asian-inspired marinades or sauces. They can also be diced and added to ceviche, a salad, or wrap. Unlike most pickles, these don't get better with age, so use them within a day before their tender flesh starts to break down. If you like it spicy, use Thai chiles; for less heat, use Fresnos.

Steps:
- Cut the honeydew into half. Save half for another use. Remove the rind. Cut into 3 wedges and then slice across to make 1/2-inch-thick triangles. You should have about 6 cups. Put the fruit in a resealable plastic bag.
- Put the vinegar, sugar and chiles in a small saucepan. Bring to a boil, stirring occasionally, and boil for about 30 seconds. Transfer to a small bowl and stir in 1 cup of ice. When the mixture is tepid, pour it over the melon, and seal, pressing out the air. Lay the bag flat in a shallow dish and chill for at least 4 hours and up to overnight, flipping the bag after about 2 hours.
- Remove the melon from the brine, shake off excess liquid, and place on a platter. Sprinkle some peanuts and herbs over the top, if using, and serve.

CRISP PORK BELLY WITH CARAMEL VINEGAR
Steps:
- Score the skin of the pork belly in a criss-cross pattern using a sharp knife. Rub the sea salt into the pork skin, and set the meat aside for 30 minutes.
- Preheat the oven to 425 degrees F.
- Wipe the salt from the pork skin with a paper towel and dry well. Drizzle a large roasting pan with enough olive oil. Place the pork belly in the pan, skin-side down, and drizzle with additional olive oil and season with salt and pepper, to taste. Sear the pork in the preheated oven for 30 minutes. Then, reduce the oven temperature to 375 degrees F and continue roasting for another 1 1/2 hours. At this point, carefully turn the pork over and roast for another 20 minutes, or until the skin is crisp.
- Remove the pork from the oven, tent the meat loosely in foil and set it aside to rest for at least 15 minutes. Slice the pork belly and drizzle it with some caramel vinegar. Serve with steamed rice, Bok Choy, and freshly chopped red chile.
- Serving suggestion: steamed rice.
- Put the sugar, vinegar, star anise and cinnamon in a small saucepan and cook, stirring, over medium heat until the sugar has dissolved. Bring to the boil and simmer for 5 minutes, or until the mixture is syrupy.
- Stir in the chicken stock and simmer for another 5 minutes, or until slightly reduced. Add the orange juice and peel, reduce the heat to low and simmer gently until thick and syrupy. Season to taste.
- Put the soy sauce and sugar in a small saucepan over low heat and stir to dissolve the sugar. Simmer until the soy sauce has reduced by half. Remove from the heat and stir in the lime juice.
- Blanch or steam the bok choy until it is bright green and tender crisp. Drizzle with the sweet soy and lime and serve immediately.
CARAMEL-LACQUERED PORK BELLY WITH QUICK-PICKLED HONEYDEW
Steps:
- 1.In a small bowl, combine the salt with 1 tablespoon of the sugar. Sprinkle the salt-sugar all over the pork belly. Wrap the pork in plastic, transfer to a plate and refrigerate overnight. 2.Preheat the oven to 375°. Rinse the pork and pat dry. Set the pork in a small baking dish, fat side up, and add 1/2 cup of water. Bake for 45 minutes. Reduce the oven temperature to 325° and bake for about 45 minutes longer, until the meat is very tender. Let the pork cool, then cover and refrigerate until chilled, at least 2 hours. 3.In a saucepan, cook 1/4 cup of the sugar over moderately high heat until it starts to melt, 2 minutes. Swirl the pan and cook over moderate heat until it is completely melted, 5 minutes. Using a wet pastry brush, occasionally wash down the side of the pan to release any sugar crystals. Add the remaining 1/4 cup of sugar and cook, swirling, until a richly brown caramel forms, 5 minutes. Turn off the heat and pour in 1/3 cup of water. Turn the heat to high and cook, stirring, until the caramel is smooth. Remove the pan from the heat and stir in the fish sauce, tamarind, chile and lime juice. 4.In a large bowl, combine the lime juice with the fish sauce, sugar, chile and 2 tablespoons of water; stir to dissolve the sugar. Add the honeydew and toss to coat. Refrigerate for 1 hour, stirring a few times. 5.Preheat the oven to 400°. Cut the cold pork belly into 1 1/2-inch cubes. In a medium cast-iron skillet, heat the caramel over moderate heat. Add the pork and turn to coat with caramel. When the sauce starts to bubble, transfer the skillet to the oven and bake for 20 minutes, turning the pork 3 or 4 times until the cubes are evenly crisp. 6.Using a slotted spoon, transfer the pork belly to plates. Spoon the caramel over the pork. Add the basil to the honeydew salad and spoon it next to the pork. Sprinkle with the cashews and serve

I wasn't really sure I understood the true essence of unctuousness, but after eating this caramel pork belly I'm pretty sure I get it now. Each bite was pure pleasure. I'm usually a very fast eater, but I tried to eat as slowly as I possibly could. It was just so unctuous.

- Preheat oven to 200 degrees F (95 degrees C).
- Lay a large sheet of aluminum foil on a flat work surface. Lay 1/2 the green parts of the green onions down in the center of the foil. Place pork belly, fattiest-side down, on top of the green onions and top pork belly with remaining 1/2 the green parts of the green onions; sprinkle with salt. Fold aluminum foil tightly around pork and green onions. Wrap pork belly again in another sheet of aluminum foil. Place wrapped pork, seam-side up, in a loaf pan.
- Cook pork belly in preheated oven for 5 1/2 hours. Turn off the oven heat and let cool in the oven for 2 hours. Remove from oven and chill in the refrigerator for 8 hours to overnight.
- Remove pork from foil and discard green onions. Cut pork into 8 pieces.
- Cook bacon in a skillet over medium heat until crisp all over, 2 to 4 minutes per side.
- Whisk brown sugar, rice vinegar, fish sauce, ginger juice, and soy sauce together in a bowl.
- Remove most of the fat from the skillet and discard. Add 1 tablespoon of the brown sugar glaze and increase heat to medium-high. Cook until pork is glazed on all sides and pieces are caramelized, about 10 minutes. Make a well in the center of the skillet and add chopped white parts of the green onion, garlic, and peppers. Saute until fragrant, about 1 minute.
- Pour water and remaining brown sugar glaze into skillet; simmer until sauce thickens, 3 to 5 minutes.

CARAMELISED PORK BELLY
From the Australian Magazine Feast. My husband made this for guests last night and it was the star of a lovely dinner. It's a gorgeous mix of salty and sweet.

- Place 2 cups water, stock, soy, ginger, star anise and pork in a large saucepan and bring to the boil. Reduc heat to low, cover and simmer for 1 1/2 hours or until the pork is tender. Remove from the heat and cool.
- Stain and reserve stock for next time (we have frozen ours). Pat the pork dry with a paper towel.
- Heat a frying pan over medium heat skin-side down or until the skin is crisp. Russ gave up and did this under the griller/broiler watching it carefully so as it didn't burn.
- Transfer to a plate and reserve the frying pan. When the pork is cool enough to handle, cut it into 1cm chunks.
- Add the palm syrup to the reserved pan and cook over medium heat for 5 minutes or until the syrup has reduced slightly. Return the pork chunks to the pan and cook turning gently for 3 minutes or until the pork is coated with the syrup.Stir through the fish sace and serve. Yum!

CARAMELIZED PORK BELLY (THIT KHO)
This dish is very popular in Vietnamese households for everyday eating but is also traditionally served during Tet, the Vietnamese Lunar New Year. The longer you cook the pork belly, the more tender it becomes. If you make this dish ahead, the fat will congeal on the surface, making it easier to remove, and a little healthier! This also allows the flavors to meld a little more. Serve with rice.

- Slice pork belly into 1-inch pieces layered with skin, fat, and meat.
- Heat sugar in a large wok or pot over medium heat until it melts and caramelizes into a light brown syrup, about 5 minutes. Add pork and increase heat to high. Cook and stir to render some of the pork fat, 3 to 5 minutes.
- Stir shallots and garlic into the wok. Add fish sauce and black pepper; stir to evenly coat pork. Pour in coconut water and bring to a boil. Add eggs, reduce heat to low, and simmer, covered, until pork is tender, about 1 hour.
- Remove wok from the heat and let stand, about 10 minutes. Skim the fat from the surface of the dish.
