- In a saucepan, saute onion in butter until tender. Sprinkle with sugar and Worcestershire sauce; cook and stir for 13-15 minutes or until onion is caramelized. , Add the broth, wine or water and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Place bread on an ungreased baking sheet. Broil 4 in. from the heat until toasted. Turn; sprinkle with cheeses. Broil until cheese is melted and bubbly. Ladle soup into bowls; top with toast.

- quarter and then slice onions and break apart nested pieces
- place onions pieces and olive oil into slow cooker and stir to coat
- cover and cook on low for 12-14 hours (It is great to do this overnight)
- add all ingredients but bread and cheese into slow cooker
- cover and cook on low for 4-6 hours
- when ready to serve, place soup into individual bowls
- place a piece of toasted French bread onto of soup and cover with cheese
- place bowl under broiler for 5 minutes until cheese is melted and bubbling

- Heat butter in a large, heavy pot over medium-high heat; cook and stir onions until they become translucent, about 10 minutes. Sprinkle onions with sugar; reduce heat to medium. Cook, stirring constantly, until onions are soft and browned, at least 30 minutes. Stir in garlic and cook until fragrant, about 1 minute.
- Stir sherry into onion mixture and scrape bottom of pot to dissolve small bits of browned food from the pot. Transfer onions into a slow cooker and pour in beef broth. Season to taste with sea salt; stir in thyme and bay leaf. Cover cooker, set on High, and cook 4 to 6 hours. If desired, set on Low and cook 8 to 10 hours.
- About 10 minutes before serving, set oven rack about 8 inches from the heat source and preheat the oven's broiler. Arrange bread slices on a baking sheet.
- Broil bread slices until toasted, 1 to 2 minutes per side.
- Combine Gruyere, Emmental, Parmesan, and mozzarella cheeses in a bowl, tossing lightly. Fill oven-safe soup crocks 3/4 full of onion soup and float a bread slice in each bowl. Top with about 2 tablespoons of cheese mixture per serving.
- Place filled bowls onto a baking sheet and broil until cheese topping is lightly browned and bubbling, about 2 minutes.

While we wanted to hit the same savory and rich notes of the original dip, we also wanted to create something new that would be worth the effort to make from scratch, without demanding too much effort. This wasn't too big a challenge for the Betty Crocker Test Kitchen experts, who came up with the idea of caramelizing onions in a slow cooker, so all you really have to do is chop the onions and forget about them for the rest of the day. With such a flavorful base, it doesn't take much to round out the recipe: cream cheese, a little mayo, fresh herbs, a dash of soy sauce-that's really all there is to it. - Spray 5-quart slow cooker with cooking spray. Mix onions, 2 tablespoons melted butter, the salt and pepper in slow cooker. Cover; cook on Low heat setting 10 to 12 hours or until onions are very tender and browned.

Bake half of the slices at a time on pan 15 to 20 minutes, turning once, until deep golden brown and crispy.

- Halve, peel, and thinly slice all of the onions. Drizzle 2 tablespoons of the olive oil over the bottom of the slow-cooker's crock. Add about half of the onions, sprinkle about half of the salt over the onions, drizzle another 2 tablespoons of the olive oil, and repeat with the remaining onions, salt, and olive oil. Sprinkle the thyme over everything and then use tongs to toss the contents so the onions are evenly coated with oil. Place the lid on the crock, turn the heat to HIGH, and let it cook for 9-10 hours, stirring and flipping the contents from bottom to top after 1 hour and again after 3 hours. After those stirs, you should not need to keep agitating the contents of the slow cooker unless your cooker runs hot. If you know it runs hot, it wouldn't hurt to move the onions around every couple of hours to prevent scorching. When the onions are deep golden brown to medium brown, turn the slow-cooker off and portion out the onions into freezer safe containers. I tend to do one batch
