CARAMELIZED ONION, APPLE AND GOAT CHEESE BLINTZES
They say ignorance is blintz (do they?) But you'll want to be in the know when it comes to these Caramelized Onion, Apple and Goat Cheese Blintzes!

- Let's start with the blintz batter. Combine flour, sugar and salt in a large bowl. In a seaprate bowl, whisk together eggs, milk and 1 tablespoon melted and cooled butter. Mix the dry into the wet until no lumps remain. Let batter rest in refrigerator at least 1 hour to let gluten relax.
- While batter is chilling, make filling. Heat a wide, thick-bottomed saute pan over medium-high heat and add oil to heat. Add onions with a little salt (about ¼ tsp). As soon as onions start to brown, reduce to medium-low. Keep cooking for up to 40 minutes or an hour until the onions are very caramelized, stirring often. If they start to burn a little, add a little water.
- Once the onions are nearly ready, add 1 tablespoon butter and apples and saute for 10 minutes until apples and soft but not mushy. Season to taste with salt and black pepper. Add in fresh thyme and honey and stir to combine.
- To make blintzes, butter a 9-inch nonstick pan with a thin coat of butter over medium high heat. Then pour ¼ cup of batter into pan to coat bottom. Swirl pan to coat evenly. After about a minute you will see the ends begin to curl up- your blintz is done! No need to flip. Slide blintzes onto parchment paper to allow to cool. Do not layer blintzes together when they are hot or they will stick. If you find your batter is a little thick to swirl, add a touch more milk.
- Spread heaping tablespoon of onion apple mixture towards bottom of each blintz and top with a dollop (about 2 teaspoons) of goat cheese. Fold bottom of blintz up to cover filling and then fold the sides in. Roll like a burrito. Add 1-tablespoon butter back to medium nonstick pan over medium high heat and cook on each side until golden brown- or about 1-2 minutes per side.
- Top blintzes with extra filling, walnuts, pomegranate arils and a drizzle of honey. Eat!
- You can make the pancakes and filling ahead of time up to two days before serving.

- In 12-inch nonstick skillet, heat oil over medium-high heat. Stir in onions; cook uncovered 10 minutes, stirring every 3 to 4 minutes.
- Reduce heat to medium-low. Stir in salt, brown sugar, and vinegar. Cook 30 to 35 minutes longer, stirring every 5 minutes, until onions are deep golden brown (onions will shrink during cooking). Cool slightly.
- Heat oven to 325°F. Place bread slices on ungreased cookie sheet; spray lightly with non-stick cooking spray. Bake 6 to 9 minutes or until crispy.
- Meanwhile, in small bowl, combine goat cheese and cream cheese; blending until smooth; set aside.
- Place 1 teaspoon caramelized onions onto each bread slice; top with 1 rounded teaspoon cheese mixture. Sprinkle with herbs.

CARAMELIZED ONION, APPLE AND GOAT CHEESE MELTS
Caramelizing onions can be a lesson in patience, but you need to cook these onions for only half the usual time, just enough to break them down and turn them a light golden brown. Once cooked, they make up the bulk of the filling for these sandwiches. Folding the warm onions into the goat cheese softens the cheese, helping it glide easily over the bread. The cheese helps bind everything together, so nothing slips out while the sandwich is toasting in the pan. You can use apples or pears here; either adds some fresh crunch. Seasoned with woody thyme and zippy kalamata olives, this sandwich makes a hearty lunch, or a light supper paired with soup or salad.

- Heat 2 tablespoons oil in a large nonstick skillet over medium. Add the onions and salt and cook, tossing frequently, until the onions turn creamy and golden, 15 to 18 minutes.
- Add thyme and red-pepper flakes and stir for another 30 to 45 seconds until fragrant. Transfer the onions to a small bowl and stir in the goat cheese and olives.
- Place 4 slices of bread on the counter and divide the onion mixture among them, spreading to the edges. Top with the apple or pear slices, then the remaining bread, pressing down gently to adhere.
- Wipe the same skillet down with a paper towel, then add 1 to 2 teaspoons olive oil (or more as needed to coat the bottom of the pan) and heat over medium. Working in batches, if needed, add the sandwiches and cook 1 to 2 minutes per side, pressing them gently to compress them as they cook, until the bread is toasted and deeply golden brown. If working in batches, add more olive oil as needed and cook remaining sandwiches. Slice and serve.
BAKED GOAT CHEESE WITH CARAMELIZED ONION, GARLIC AND MISSION FIGS

- Preheat the oven to 350 degrees F.
- Crumble the goat cheese into an oven safe dish and set aside.
- In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.
- Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot, leaving behind any of the pluming liquid. Add the figs to the cooked onions, stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, until the edges begin to bubble.
- Remove and serve immediately with sliced baguettes.
CARAMELIZED ONION AND GOAT CHEESE TARTS
Steps:
- In a large heavy-bottomed skillet over medium heat, add the oil and butter. When the butter is melted, add the onions, sugar, and salt, to taste. Cook until the onions begin to brown. Adjust the heat to low and cook slowly, turning often, until the onions are golden brown and caramelized, about 10 to 15 minutes. Remove the onions from the heat and set aside to cool.
- Preheat the oven to 375 degrees F.
- In a bowl combine the goat cheese, egg, cream, and thyme. Pour the mixture into a small resealable plastic food storage bag. Snip off a corner of the bag to use it for piping.
- Lay the pie crusts out flat on a clean surface and with a 2 1/2-inch round cutter cut out 12 circles from each crust. Press them into the cups of the mini-muffin tin. Fill each cup 1/2 way with the cooled onions. Pipe the cheese mixture on top of the onions, filling the cups. Bake the tarts until the filling is set, about 15 to 20 minutes. Let the tarts cool slightly, and then remove them from the muffin tin and serve.

- Heat the oil in a large deep frying pan over a low heat.
- Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
- Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.

CARAMELIZED ONIONS, APPLE, WALNUTS AND GOAT CHEESE PIZZA
Elegant, rich, creamy, and honestly not hard. Premade pizza dough and just a few ingredients make this a great appetizer or a great side to some roasted chicken or pork. I like to make this in a rectangle, but you can make this round and serve as pizza slices. What ever is easiest for you. This is a wonderful starter for a dinner party with friends. This served along a nice rich fall salad with roasted vegetables is a perfect first course. Roasted duck or cornish hens, a slow roasted pork roast with braised sweet potatoes in a maple bourbon sauce or a rich guinness beef stew. Fall flavors.

- Onions and Apples -- In a large non stick skillet on medium high heat, add the butter, olive oil, onions and start to caramelize. Cook about 5 minutes until they start to brown. Then add the apples, thyme, salt and pepper to taste and cook for approximately 20 minutes until the apples get very soft and brown and almost appear to melt "spreadable.".
- Crust -- I use a baking sheet for this and spray with Pam. Then spread out and lightly roll the pizza dough into a rectangle to fit in the baking pan. Make sure to press the dough out and then prick with a fork all over the crust. This will prevent the crust from "puffing up" or "bubbling" when you cook it. I mix the olive oil, garlic and pepper and brush over the top of the crust and cook at 425 for about 10-12 minutes until it gets slightly brown. Remove from the oven and slightly cool.
- Topping -- Spread the apple onion mixture over crust and garnish with the goat cheese and walnuts fine chopped.
- Broil -- I like to broil the pizza for just 3-5 minutes on the middle rack until the cheese starts to soften and melt.
- Serve -- Cut into squares and serve along side a salad or with any grilled dish. It is a great savory/sweet appetizer or starter dish.
GOAT CHEESE AND CARAMELIZED ONION TARTS
Absolutely sinful as an appetizer or accompaniment to a salad! The oozing goat cheese, contrasted against the caramelized onions, topped off with some balsamic vinegar...need I say more?

- Cut thawed puff pastry into six 3- to 4-inch rounds using a cookie cutter. Roll edges of each pastry slightly to form 6 small tarts. Set aside.
- Heat olive oil in a skillet over medium-high heat; stir in sweet onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and set aside.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bring 1/3 cup balsamic vinegar to a boil in a saucepan. Reduce heat and let simmer until thickened, 5 to 10 minutes. Stir in 2 tablespoons balsamic vinegar and brown sugar. Remove from heat and set aside.
- Divide cooked onions between the 6 tart shells and place on a baking sheet. Sprinkle goat cheese evenly on top of each tart.
- Bake in the preheated oven for 7 minutes. Remove from the oven and drizzle each with balsamic vinegar reduction.
- Return tarts to the oven and continue to bake until cheese is bubbly and tarts are golden brown, about 8 minutes more.
