1 pork tenderloin (about 1 lb)
1/2 teaspoon salt
1/4 teaspoon paprika
1 large onion, thinly sliced (2 cups)
1/4 teaspoon sugar

Steps:

  • Cut pork into 1/2-inch slices. Sprinkle both sides of pork with salt and paprika.
  • Heat 10-inch nonstick skillet over medium-high heat. Cook pork in skillet 6 to 8 minutes, turning once, until no longer pink in center. Remove pork from skillet; keep warm. Wipe out skillet.
  • Heat same skillet over medium-high heat. Cook onion in skillet 1 minute, stirring frequently. Reduce heat to medium. Stir in sugar. Cook about 3 minutes longer, stirring frequently, until onion is soft and golden brown. Spoon over pork.

1 large sweet onion, thinly sliced
1 teaspoon sugar
2 teaspoons olive oil
1 pork tenderloin (1 pound)
1/4 teaspoon salt

Steps:

  • In a large skillet, cook onion and sugar in oil over medium-low heat until onion is tender and golden brown, about 30 minutes, stirring occasionally., Place the pork in a 13x9-in. baking dish coated with cooking spray. Sprinkle with salt and pepper. Top with onion mixture., Bake, uncovered, at 350° for 40-45 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

Perfectly cooked pork chops are browned and smothered with caramelized onions then pan-roasted in the oven.

2 cups water
1/4 cup kosher salt
1/4 cup plus 1 tablespoon brown sugar, packed, divided
1 large fresh sprig rosemary, plus 1 tablespoon minced
2 cups ice water
4 bone-in pork chops
2 tablespoons unsalted butter
1 teaspoon olive oil
2 large yellow onions, or Vidalia onions
Salt to taste
Freshly ground black pepper, to taste
1 tablespoon olive oil

Steps:

  • Brine the chops: Combine the water, 1/4 cup kosher salt , and 1/4 cup brown sugar in a medium saucepan over low heat, stirring to dissolve the salt and sugar. When the salt and sugar are dissolved, take the saucepan off the heat and add the rosemary sprig and iced water. Keep stirring until the brine is completely cooled down.
  • Put the pork chops in a large zip-top plastic bag, and pour in the brine. Squeeze the air out of the plastic bag and seal tightly. Lay the bag in a baking dish (in case there's any leakage) and refrigerate 4 hours and up to 8 hours. (Alternatively, arrange the pork chops in a baking dish in a single layer, pour the brine over the chops and cover with plastic wrap. Halfway through the brining time, turn the chops over.)
  • One hour before cooking, take the pork chops out of the refrigerator, drain and discard the brine and rosemary sprig. Pat the pork chops dry and cover loosely with paper towels.
  • Make the caramelized onions: Melt the butter and 1 teaspoon of olive oil in a large sauté pan over medium-high heat. Add the onions and sprinkle with 1 tablespoon brown sugar, about 1 teaspoon kosher salt, and several good grinds of fresh pepper. Cover for 10 minutes.
  • Remove the cover and stir the onions. Sauté for another 15 or 20 minutes, stirring the onions occasionally and watching that they don't burn. When the onions have caramelized to your liking, take the pan off the heat.
  • Preheat oven to 400 F. Lightly season the pork chops with kosher salt and freshly ground pepper, then sprinkle the minced rosemary over both sides of all the chops, pressing down lightly to adhere the rosemary to the pork.
  • Heat the 1 tablespoon of olive oil in an ovenproof skillet over medium-high heat. Brown the pork chops on both sides, 2 minutes per side. Cover the pork chops with the caramelized onions, then put the skillet into the oven.
  • Bake the chops 15 minutes until their internal temperature reaches 138 F on an instant-read thermometer . Remove the skillet from the oven, and let the chops rest 5 minutes before serving.

Steps:

  • Heat the oil in a large skillet over high heat.
  • Add the onion, ginger, garlic and chili and cook for 2 minutes.
  • Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.
  • Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.
  • Serve over rice or vermicelli noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! I like to have chunks of plain cucumber and carrots on the side which is a classic way of making Vietnamese bowls.

1 pound Pork Tenderloin
1 teaspoon Extra Virgin Olive Oil
1/2 teaspoon Dried Oregano
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Ground Pepper
1 teaspoon Salt
2 Tablespoons Extra Virgin Olive Oil
2 Medium Yellow Onions
1/2 teaspoon Salt
1/2 teaspoon Ground Pepper
1 Tablespoons Ghee or Butter
8 ounces Sliced Mushrooms
1 Tablespoons Balsamic Vinegar
1 teaspoon Dried Oregano

Steps:

  • You can make the Caramelized Onions & Mushrooms a day or two ahead and store them in the fridge or make them while you cook the pork tenderloin.
  • For the mushrooms, you can either buy them already sliced or whole and slice them yourself.
  • Peel the onion, slice in half, then thinly slice. Slices should be about the width of the chefs knife.
  • Once they are all sliced, separate the onions with your fingers.
  • To a large preheated skillet, drizzle the olive oil and then add the onions. Stir to coat in the oil, add salt and pepper. Cook the onions on medium-low heat for 20 minutes, stirring every 5 minutes or so.
  • Push the onions over to one side of the skillet and add the Ghee or butter to the open space and then the mushrooms. Saute the mushrooms for 10 minutes until browned.
  • Then mix the onions and mushrooms together, add the oregano and balsamic vinegar, and cook down for a final 10 minutes.
  • At this point, you can keep it warm or save it in a glass storage container in the fridge so that you can reheat it later.
  • Make the pork spice rub by adding to a small mixing bowl, the Dried Oregano, Garlic Powder, Onion Powder, Salt, and Pepper. Stir to combine.
  • Spray or rub all sides of the pork tenderloin with extra virgin olive oil, then sprinkle and rub the seasoning all over the outside. Then place the tenderloin under the broiler for 5-8 minutes until the top is nicely browned. Move the pork down to the center rack and cook at 400 F degrees for 10-15 minutes or until the internal temperature reaches 145 F.
  • When the pork tenderloin is done cooking, let it rest for 10 minutes tented with aluminum foil to allow the juices to redistribute. Then slice the pork and serve with the Caramelized Onions and Mushrooms.

  • In a large skillet over medium-high heat, brown onions in butter until translucent.
  • Add wine and onion confit and bring to a boil.
  • Reduce heat to medium and simmer until liquid is completely evaporated, around 40 minutes.
  • Meanwhile, mix pork, egg, and coriander together and season with salt and pepper to taste.
  • Shape into 4 equal-sized meat patties and set aside.
  • Preheat barbecue to medium-high.
  • In a large bowl, mix together lettuce, apple, and cilantro.
  • Mix mustard, olive oil, and lemon juice together for dressing.
  • Add dressing to chiffonade. Mix well.
  • Cook meat patties on the lower grill of the barbecue for around 3 or 4 minutes per side, turning once, or until a meat thermometer inserted in the thickest part of the patty reads 70°C (160°F).
  • When finished cooking, place one or two slices of cheese on the meat patties and lightly grill ciabatta buns.
  • Spread onion compote over 4 ciabatta halves.
  • Place a meat patty with melted cheese on the compote.
  • Garnish with chiffonade to taste and place other ciabatta half on top.
