1 medium spaghetti squash
Extra-virgin olive oil, such as Colavita
Kosher salt
Freshly cracked black pepper
2 medium yellow onions, sliced
1 (8 ounce) box mushrooms, sliced
½ cup vegetable broth, white wine or water
1 cup tomato sauce
1 teaspoon garlic powder
3 eggs, whisked

Steps:

  • 1. Preheat the oven to 400°F, line a baking sheet with baking paper and grease a 8x8 casserole dish with olive oil. 2. Cut spaghetti squash in half lengthwise, scoop out seeds, season with olive oil, salt and pepper and place cut-side down on the prepared baking sheet. Bake for 45 minutes, until the skin of the squash is fork tender. 3. While squash is baking, prepare caramelized onions and mushrooms. Heat olive oil in a frying pan over medium-high heat, add onions and mushrooms. Lower the temperature to medium and cook onions and mushrooms until beginning to brown, about 10 minutes, stirring occasionally to prevent burning. Add broth, wine or water to the pan and using a flat edged wooden spoon "scrape" the bottom of the pan to pick up the brown bits. Cook onions and mushrooms for 8-10 minutes more, until there is no more liquid in the pan. 4. Remove squash from the oven, scoop out flesh and place in the prepared casserole dish. Stir in caramelized onions, mushrooms, tomato sauce, garlic powder, whisked eggs and season with ½ teaspoon salt and ½ teaspoon pepper. Mix everything together until you can no longer see eggs. 5. Bake uncovered at 400°F for 1 hour, until the top of the casserole has formed a golden crust that is brown around the edges. Let rest for 10 minutes before serving. 1/2 lb bacon
1 large onion, sliced
2 garlic cloves, minced
salt
pepper
parmesan cheese, to taste

Steps:

  • Cut the squash in half and carefully remove the seeds. Turn upside down in a baking pan. Bake at 375-degrees for about 45 minutes.
  • Cool for 10 minutes, then using a fork, scrape out squash into serving bowl.
  • While squash is cooling, cut bacon with scissors into 1 inch pieces. Cook bacon to half done. Drain off most of bacon grease.
  • Add onions and garic to bacon in pan. Cook together until bacon crisps and onions caramelize, about 5 minutes.
  • Pour bacon/onion mixture over squash. Season with salt, pepper and parmesan cheese.

  • 1. Preheat the oven to 400°F and grease an 8x8 casserole dish with olive oil. 2. Cut the spaghetti squash in half lengthwise, scoop out the seeds and place the squash cut-side down on a baking sheet. Bake for 45 minutes, until the skin of the squash is fork tender. 3. While the squash is baking, prepare the caramelized onions and mushrooms. Heat the olive oil in a frying pan over medium-high heat, then add the onions and mushrooms. Lower the temperature to medium and cook the onions and mushrooms until beginning to brown, stirring occasionally to prevent burning, for around 10 minutes. Add the water to the pan and stir the onions and mushrooms to pick up the brown bits in the bottom of the pan. 1 -2 tablespoon butter or 1 -2 tablespoon olive oil
1 large onion
1 yellow squash
1 zucchini
2 cups snap peas (optional)
seasoning (I use celtic sea salt, red and black pepper, and Lawry's)

Steps:

  • Slice onion into medium-sized pieces.
  • Slice squash into rounds.
  • Cut ends off snap peas (if necessary).
  • Melt butter in pan and add vegetables and seasoning.
  • Cook over med-low heat stirring periodically and covering pan in between to soften veggies.
  • Cook until very tender and light to medium brown (squash pieces will begin to fall apart).

The caramelized onions add sweetness to the salty olives and Parmesan, while red chile and garlic make the dish's flavors pungent and deep. A squeeze of fresh lemon right at the end brightens everything, adding a mild tang. Feel free to play around with the basic formula, swapping capers or even a small tin of sardines or tuna for olives, vinegar for the lemon, arugula or spinach for the parsley, and other cheeses (feta or pecorino) for the Parmesan.

1/4 cup extra-virgin olive oil
2 large white or Spanish onions, halved and very thinly sliced
12 ounces spaghetti
6 garlic cloves
1/2 teaspoon chile paste or red-pepper flakes, or to taste
2 anchovies, chopped (optional)
1 cup chopped mix of parsley and basil (or use all parsley)
1/3 cup chopped cured Moroccan or other intensely flavored black olives
2 tablespoons unsalted butter, cubed
Lemon wedges, for squeezing
Grated Parmesan, for serving (optional)

Steps:

  • Put a large pot of heavily salted water on and let it come to a boil.
  • Meanwhile, cook the onions: Heat 1/4 cup oil in a 12-inch skillet over medium heat. Add onions and cook, stirring occasionally, until tender and pale golden at the edges, 20 to 25 minutes. Lower heat if the edges start to brown too quickly or raise heat if onions aren't turning golden quickly enough.
  • When the water comes to a boil, cook spaghetti according to package directions until just al dente. Reserve 1 cup pasta water; drain pasta.
  • Thinly slice 4 garlic cloves, and stir into golden onions, along with red-pepper flakes. Continue to cook until onions are a rich brown, about 10 minutes longer. If the garlic starts to burn, lower the heat.
  • Finely grate remaining garlic cloves, and mash into anchovies using the flat side of your knife. Move some of the onion mixture to the side of the pan and add anchovy paste to bare spot in the skillet. Cook paste for 1 minute, then add herbs and olives, stir everything together, and cook another 1 minute.
  • Stir in cooked pasta, butter, and salt to taste, tossing to coat pasta. Add pasta water if it looks dry. Serve with a generous squeeze of lemon, and sprinkle with Parmesan and more chile on top, if desired.

1 spaghetti squash, halved and seeded
3 tablespoons light margarine
1 small yellow onion, thinly sliced
1 teaspoon red pepper flakes
¼ teaspoon garlic powder
salt and freshly ground black pepper to taste
¾ cup fat-free sour cream
1 cup shredded light Cheddar cheese
cooking spray

Steps:

  • Place spaghetti squash in a covered dish and add 1/4 inch of water. Microwave for 10 to 12 minutes. Scrape insides of squash with a fork and transfer to a small bowl.
  • Heat margarine in a medium skillet over medium heat while spaghetti squash is cooking and cook onion, red pepper flakes, garlic powder, salt, and pepper until the onion is browned, 5 to 10 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish with nonstick cooking spray.
  • Mix spaghetti squash, onion mixture, sour cream, and 1/2 of the Cheddar cheese together. Transfer to the prepared baking dish and top with remaining Cheddar cheese.
  • Bake in the preheated oven for 20 to 25 minutes. Turn on broiler for the last 2 to 3 minutes and broil until gratin is golden brown on top.
