CARAMELIZED TURNIPS AND APPLES WITH THYME

Caramelized Turnips and Apples with Thyme image

High-heat roasting caramelises apple and turnip wedges, turning them into the perfect side dish for fall or winter meals.

Categories     Side

Time 45m

Yield 4 servings

Number Of Ingredients 7

2 tablespoons olive oil
2 cloves garlic, peeled and minced
2 teaspoons fresh thyme
1 pound turnips (3 medium turnips)
1 pound apples (2 large apples)
Kosher salt
Freshly ground black pepper

Steps:

  • Adjust oven rack to the center position and preheat oven to 450 degrees. Line a sheet pan with parchment.
  • Add the olive oil, garlic, and thyme to a medium bowl.
  • Peel and trim the turnips, and cut each into chunky wedges. Halve, core and slice the apple into wedges about the same size as the turnip wedges. Add the turnip and apple to the bowl with the oil. Add salt and pepper to taste, and toss everything together very well so the turnips and apples are evenly coated with oil and seasoning.
  • Tip the turnip, apple, and any residual oil onto the sheet pan in a single layer. Roast for 25-35 minutes, or until the turnips are tender throughout, and nicely caramelized and brown. After 15 minutes, check the wedges and flip any that are already deeply brown on the bottom.
  • Remove from oven and serve right away.

BRAISED TURNIP GREENS WITH TURNIPS AND APPLES

Braised Turnip Greens With Turnips and Apples image

Spicy, sharp turnip greens, braised gently with a smoked ham hock, are a time-honored accompaniment on southern tables at any time of the year. This version, with the ivory turnips, golden apple, and pink ham nestled among the dark greens, is especially pretty.

CARAMELIZED APPLES

Caramelized Apples image

These caramelized apples are meant to be slightly sweet, not overpowering and sugary, so they're versatile in nature. Spicy-tart and thoroughly warming, these apples are a fabulous addition to crepes or homemade ice cream. They're equally at home as an unexpected garnish for mildly spicy grilled chicken or a tropical menu from Martinique. Cook's note: For a delicious "cheater" dessert, fill a store-bought tart shell with these apples. With the homemade goodness of the apples and apple cider reduction sauce, nobody will guess your secret!

Categories     Dessert

Time 20m

Yield 6 serving(s)

Number Of Ingredients 8

3 tablespoons butter
5 spicy-sweet crisp apples (Jonagold, Crispin, Honeycrisp)
1 tablespoon granulated sugar
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon lemon zest
1/3 cup apple cider
1/2 teaspoon cornstarch, as needed

Steps:

  • Melt the butter in a large skillet over medium heat.
  • Add the apples to the pan and sprinkle with 1 tablespoon sugar.
  • Sauté the apples, stirring frequently, for 6-8 minutes, until they just start to turn tender.
  • Sprinkle the apples with the remaining sugar, cinnamon, and lemon zest.
  • Toss the mixture gently and cook over medium heat for an additional 2 minutes, until the sugar begins to caramelize and the apples are crisp-tender.
  • Transfer the apples from the skillet to a serving bowl with a slotted spoon.
  • Turn the heat to high and add the apple cider to the skillet, scraping up any browned bits.
  • Reduce the heat slightly and allow the cider and the pan juices to simmer for 1-3 minutes, until the sauce has reduced and thickened slightly.
  • If you desire a thicker sauce, dissolve the cornstarch in a teaspoon of water, stir it into the sauce, and allow it to thicken for a moment.
  • Pour the finished sauce over the warm apples and serve immediately.

ROASTED TURNIPS AND APPLES WITH HONEY

Roasted Turnips and Apples with Honey image

When root vegetables are in season, take advantage of ingredients like turnips by combining them with other autumn favorites like fresh apples. I've added cider vinegar and orange blossom honey to bring even more flavor to this dish.

Provided by Michael Tusk

Categories     side-dish

Time 35m

Yield 4 servings

Number Of Ingredients 8

4 tablespoons unsalted butter
6 medium turnips, mixed varieties, peeled
4 scallions, trimmed of dark green ends
Salt
Freshly ground black pepper
2 apples, preferably Jonagold or Honey Crisp
1 tablespoon honey, preferably local orange blossom
1 teaspoon apple cider vinegar

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a small saucepan over low heat. Quarter and slice the peeled turnips into ¼-inch slices. Place in a medium mixing bowl. Slice the scallions into 1" to 2" segments and add to the sliced turnips. Drizzle the melted butter over the turnip/scallion mixture. Season with salt and pepper, to taste. Quarter, core, peel, and cut 1 of the apples into ¼-inch to ½-inch slices. Add to the turnip mixture. Toss gently to coat. Spread the turnip mixture onto a rimmed baking sheet lined with parchment paper and place in the oven.
  • After 10 minutes, toss the mixture on the tray, to promote even browning and caramelization. Return the tray to the oven on the bottom rack for an additional 10-12 minutes.
  • Remove the tray from the oven. Drizzle the honey over the vegetables and return to the oven for an additional 1-2 minutes.
  • Remove the tray from the oven. Drizzle the apple cider vinegar over the warm vegetables. Toss gently to coat. Mound the turnips and apples on a wide platter, and shave the remaining apple over the warm vegetables. Serve immediately.
