BANANA SPLIT
Our version of the classic ice cream treat replaces vanilla ice cream with hazelnut for an extra layer of flavor that's irresistible.

Steps:
- In a medium bowl, whip cream and vanilla-bean seeds with a hand mixer until soft peaks form.
- Place 2 banana halves in each of four dishes. Top with 1 scoop each of coffee, chocolate, and hazelnut ice creams. Drizzle with chocolate syrup and caramel sauce. Top with whipped vanilla cream, wet walnuts, and cherries; serve.
TRADITIONAL BANANA SPLIT
There is some debate in our ice cream parlor what the "traditional" split consists of. I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

Steps:
- Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
- Cut the ends of the banana off (about 1/4 inch) while still in the peel.
- Slice in half longways.
- Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
- Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
- Spoon the wet walnuts over all three scoops of ice cream.
- Top each scoop with some whipped cream and a cherry for each.
- Enjoy!

- Gather the ingredients.
- Peel the banana and slice it in half lengthwise. Place the banana slices against the sides of a long, narrow, shallow dish.
- Place the scoops of ice cream in a row between the banana slices.
- Squirt the chocolate syrup on the vanilla and strawberry ice cream.
- Spoon the marshmallow creme over the chocolate ice cream.
- Top everything with the whipped cream. Sprinkle it all with nuts and top each mound of ice cream with a cherry.

- Preheat oven to 450 degrees F.
- Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
- Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
- Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
- Remove from oven. Sprinkle with the rum before serving.
- Serve as-is, or with a scoop of vanilla or coconut ice cream.

- Line a baking sheet with parchment. Put the chocolate in a small microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Transfer the melted chocolate to a mug.
- Put the walnuts in another small bowl. Peel the bananas, trim the ends and cut each into six 2-inch pieces. Dip each piece halfway into the chocolate, and let any excess drip off. Roll the chocolate-dipped ends in walnuts, then set them on the prepared baking sheet. Refrigerate to set the chocolate. (The bananas can be refrigerated up to 2 hours.)
- Whip the cream in a small bowl until soft peaks form. Add the preserves, and stir to incorporate. Transfer the mixture to a pastry bag fitted with a large star tip. Pipe a star-shaped dollop on top of each banana. Garnish with a piece of cherry and sprinkles.

- Preheat oven to 350 degrees F (175 degrees C). Prepare 12 muffin cups with paper liners.
- Sift the flour, baking soda, baking powder, and salt into a bowl; set aside. In a large bowl, cream together butter and sugar until light and fluffy. CARAMELIZED BANANA SPLIT

- Heat sugar in a large heavy-bottomed saute pan over medium-high heat. Let stand until edge of sugar starts to melt and turn golden. Carefully swirl pan to incorporate all of the sugar. Continue cooking until sugar is a golden-brown caramel, 6 to 8 minutes.
- Reduce heat to low, and stir in butter. Add bananas, carefully roll in caramel, and cook, turning bananas occasionally until just soft, 3 to 5 minutes. Remove bananas from caramel, and place in serving dishes. Add 1/2 cup of vanilla ice cream to caramel sauce, and stir until smooth and creamy. Scoop remaining ice cream over bananas, pour caramel over ice cream, and sprinkle with chocolate shavings.
