BAHAMIAN BAKED GROUPER
This recipe is great for grouper fillets, but you can also use it with tilapia. It's both healthy and flavorful! You don't have to love fish to love this dish. Serve it with rice and cole slaw to complete the meal.

Steps:
- Arrange the grouper on a plate. Drizzle the lime juice over the fillets and season with salt, pepper, and red pepper flakes. Cover with plastic wrap and refrigerate overnight or 8 hours.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
- Lay the fillets in the prepared baking dish in a single layer. Arrange the tomato slices, onion slices, and bell pepper slices atop the fillets. Cover with aluminum foil.
- Bake in preheated oven until the fish flakes easily, about 1 hour.

SUPER GROUPER
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
- Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
- Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

MY GROUPER CHOWDER
This was one of those things where I happened to have these ingredients on hand and they all kind of just fell into the pot together. The hubby thought it was good enough that he demanded I immediately write it down.

Steps:
- In a heavy Dutch oven, heat butter and place grouper fillet skin side down and saute 1-2 minutes or until skin loosens from the flesh.
- Remove to plate discard skin.
- Add celery, bell pepper, and ham and saute 3-4 minutes.
- Add green onion and garlic and saute 1-2 more minutes.
- Add the stock, lemon juice, and hot sauce and bring up to a slow boil.
- Add potatoes and cook for about 15 minutes or until tender.
- Reduce heat and add the fish and cook until the fish can be broken up with a spoon.
- Add the milk- being careful not to boil- and heat through.
- Season to taste with salt and pepper.
- Serve with crusty french bread.

CARIBBEAN JERK GROUPER
Steps:
- In a large bowl, mix the jerk seasoning, olive oil, garlic, brown sugar, orange juice, and soy sauce. Clean the grouper fillets and remove the bones. Place the fillets in the marinade, then cover the bowl and refrigerate for 2 to 4 hours.
- Preheat a heavy skillet over medium-high heat. Remove the grouper fillets from the marinade and cook for 4 to 5 minutes, until fish is opaque throughout, turning the grouper every minute. Serve immediately.
CARIBBEAN JERK GROUPER
This recipe is from the Sea Shack Restaurant in Hilton Head, SC. It's easy to make, and the grouper tastes wonderful! Actual cooking time is just 5 minutes or so, depending on the thickness of your fish. If you can't find grouper, try for snapper, amberjack, or mahi mahi. **Prep time does not include marinating time.**

- Preheat the oven to 350°. Spread the baguette slices on a baking sheet and brush with 1/4 cup of the oil. Bake for 10 to 12 minutes, or until golden. Rub the croutons on 1 side with the halved garlic.
- Heat the remaining 2 tablespoons of oil in a large pot. Add the sliced garlic, onions and saffron and cook over moderately high heat, stirring, until the onions soften, about 6 minutes. Add the cumin, paprika, cinnamon and cayenne and cook for 2 minutes. Stir in the honey and tomato paste and cook until lightly caramelized, about 4 minutes. Add the clam juice, wine and water; bring to a boil.
- Add the potatoes and cook over moderate heat until tender, about 20 minutes. Transfer 3 cups of the potatoes and onions to a blender along with a little of the broth and puree until smooth. Stir the puree into the soup and bring to a boil. Season with salt and black pepper.
- Just before serving, add the fish and simmer just until it flakes easily. Ladle the chowder into bowls and pass the croutons and Rouille separately.
