EASY CARAMEL POPCORN



Easy Caramel Popcorn image

This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

Number Of Ingredients 8

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

1 -2 gallon prepared popcorn
2 cups brown sugar
1 cup butter
1/2 cup corn syrup or 1/2 cup maple syrup
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 cup peanuts (Optional)

Steps:

  • Preheat oven to 250.
  • Prepare popcorn and set aside.
  • In a sauce pan bring to a boil brown sugar, butter and syrup.
  • Boil at a slow boil for 5 minutes without stirring.
  • Remove and add baking soda, salt, vanilla and peanuts.
  • Pour over popcorn and toss.
  • Lay out on greased cookie sheets and bake for 1 hour stirring every 20 minutes.
  • Store in Large Zip Lock Bags.

1 teaspoon salt
½ teaspoon baking soda

5 quarts popped popcorn

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
  • Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

12 cups popped popcorn
1 cup packed brown sugar
1/2 cup butter, cubed
1/4 cup light corn syrup
1/2 teaspoon salt

1/2 cup confectioners' sugar
2 teaspoons apple pie spice
12 ounces white baking chocolate, chopped

Steps:

  • Preheat oven to 250°. Place popcorn in a greased shallow roasting pan. In a large heavy saucepan, combine brown sugar, butter, corn syrup and salt. Bring to a boil over medium heat, stirring constantly. Cook, without stirring, 5 minutes., Remove from heat; stir in vanilla and baking soda (mixture will foam). Quickly pour over popcorn and mix well. Bake 1 hour or until dry, stirring every 15 minutes. Remove to waxed paper to cool completely., In a small bowl, mix confectioners' sugar and pie spice. In a microwave, melt white baking chocolate; stir until smooth. Transfer cooled caramel corn to a large bowl; sprinkle with confectioners' sugar mixture and toss to coat. Drizzle with melted chocolate; toss to coat. Return to waxed paper; let stand until set.

7 oz marshmallow
⅔ cup peanut butter, divided
8 cups popcorn, popped
nonstick cooking spray, for greasing
2 cups dark chocolate chip
2 cups milk chocolate chips
1 ½ cups heavy cream
4 tablespoons powdered sugar, divided
2 teaspoons vanilla extract, divided
3 tablespoons milk

Steps:

  • Melt the butter in a large pot over medium heat, then add the marshmallows and stir until starting to melt. Add ⅓ cup (80 g) of peanut butter and stir until completely melted. Remove the pot from the heat.
  • Add the popcorn to the pot and stir to coat completely. Let cool for 2 minutes.
  • Grease a 9-inch (23-cm) springform pan with nonstick spray. Press the popcorn mixture into the pan using the bottom of a measuring cup, creating an even layer along the bottom and halfway up the sides. Set aside.
  • Add the dark chocolate chips and milk chocolate chips to a medium bowl and melt in the microwave, stirring every 30 seconds, about 2 minutes total. Set aside to cool to room temperature.
  • In a separate medium bowl, whip the cream with an electric hand mixer until stiff peaks form, then add 3 tablespoons of powdered sugar and 1 teaspoon of vanilla and beat to incorporate.
  • Fold the whipped cream into the cooled chocolate.
  • Spoon the chocolate mixture into the popcorn crust. Spread evenly.
  • In a small bowl, combine the remaining ⅓ cup (80 g) peanut butter, 1 tablespoon powdered sugar, 1 teaspoon of vanilla, and the milk, stirring until smooth. Transfer to a small piping bag or zip-top bag.
  • Pipe lines across the surface of the pie. Drag a toothpick through, perpendicular to the lines, alternating directions from top to bottom.
  • Chill the pie in the refrigerator for at least 4 hours.
