CARROT CASHEW QUICHE



Carrot Cashew Quiche image

One of my mom's favorites for buffets or brunches and afternoon lunches. Served with a nice salad, this is a nice light meal.

½ cup butter
1 cup sliced carrots
1 cup cashews
½ cup honey
3 eggs
1 ½ cups heavy cream
½ teaspoon nutmeg
½ teaspoon salt
¾ cup shredded Cheddar cheese
1 (9 inch) pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt the butter in a skillet over medium heat. Stir in the carrots and cashews, and cook until carrots are tender and cashews are golden brown. Mix in the honey.
  • In a bowl, beat together the eggs, heavy cream, nutmeg, and salt.
  • Evenly spread the cheese in the bottom of the pie crust. Layer the carrot mixture over the cheese, and top with the egg mixture.
  • Bake 40 minutes in the preheated oven, until a toothpick inserted in the center comes out clean.

Doesn't sound like much, but it's tasty. Modified from Classic Vegetarian Cuisine by Rosemary Moon. I steam the carrots in the microwave.

Number Of Ingredients 12

2 medium onions, chopped
2 garlic cloves, chopped
1 tablespoon olive oil
4 medium carrots, cooked. (Retain cooking water.)
1 1/2 cups cashew nuts
2 cups whole wheat bread crumbs (vegan if desired)
1 tablespoon tahini
1 1/2 teaspoons caraway seeds
1 tablespoon tamari or 1 tablespoon other soy sauce
1/2 lemon, juice of (or 2 tablespoons red wine vinegar)
5 tablespoons water (from carrots if you kept it.)
salt & freshly ground black pepper

Steps:

  • Preheat oven to 350.
  • In a food processor, process cashews until they are ground into small pieces (the size of lentils or smaller). Add the cooked carrots, and process until the carrots are in similarly sized pieces (or fall apart, if they've been cooked soft).
  • Sweat onion and garlic in oil until soft.
  • In a large bowl, mix all ingredients and add salt and pepper to taste. The mixture should come together into a mass when pressed.
  • Press firmly into a greased 6 1/2 " x 3 3/4" x 3-inch loaf pan and cover with foil.
  • Bake 1 hour.
  • Remove foil and bake 10 min more.
  • Rest 10 minutes in the pan before unmolding.

This is my all time favorite soup. good anytime, I never tire of it. it has been a big hit at tea parties also. major comfort food. :-)

3 lb carrots, cubed
2 potatoes, large
3 clove garlic
water or stock. enough to cover ingredients
salt to taste
2 oz butter
1 onion, large
1/3 c cashews
1-2 c milk or cream
pinch nutmeg
1/2 tsp basil

Steps:

  • 1. Peel the carrots and cut them into chunks. Do the same with the potatos. Peel the garlic and leave whole. Put all ingredients and 1 tsp salt into the soup pot and cover with just enough water or stock. Bring to boil and simmer until carrots are tender.
  • 2. Chop the onion and saute in butter. Add the cashews and cook until the onion in transparent and the cashews are lightly browned. Add to simmering pot of soup.
  • 3. When the veggies are tender, remove from heat. Run the soup thru a blender, adding milk as needed. Add enough milk so that you have desird consistency. Return to the soup to the pot and heat gently. Season to taste with nutmeg, basil and salt.Do Not boil. please enjoy

3 teaspoons sugar
250 ml milk (boiled and cooled)

Steps:

  • Peel carrot and cut small pieces,
  • Take a bowl , pour nearly 50ml milk, add carrot pieces ,cashews and sugar, cook it till the raw smell of carrots is no more.
  • Allow to cool it.
  • Take Mixer Jar (big one which usually used making juices), add cooked carrots and cashews in, it, run mixie for few minutes, so that it becomes soft, add rest of milk, run the mixie for 5 - 10 mins depending. Carrots and cashew milk ready. Staight away serve or Cool it(leave in it fridge for atleast an hr) and Serve chill.
  • Ideal for school children, when they are back from school. Healthy Drink !
