CABBAGE-CARROT CASSEROLE

My grandmother passed this recipe down to me. People who don't even like cabbage love this dish.

2 cubes chicken bouillon
2 cups water
2 pounds cabbage, sliced into thin strips
2 large carrots, grated
2 tablespoons butter
2 tablespoons all-purpose flour
½ cup milk
2 ounces shredded Cheddar cheese, or more to taste
¼ teaspoon paprika, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dissolve bouillon cubes in water in a large pot over medium-high heat. Cook cabbage and carrots in the seasoned water until tender, 20 to 30 minutes. Drain, reserving 1/2 cup of the cooking liquid. Transfer cabbage and carrots to an 8x11-inch casserole dish.
  • Melt butter in a saucepan over medium heat. Stir flour into melted butter until hot, about 1 minutes. Pour reserved cooking liquid and milk into the flour mixture; stir until smooth. Add cheese to milk mixture; cook and stir until cheese is melted and the mixture is smooth and thick. Pour cheese sauce over cabbage and carrots; stir to coat. Season with paprika.
  • Bake in preheated oven until hot and bubbly, 20 to 30 minutes.

Cabbage and Carrots are sauteed with fragrant ginger and garlic. This is usually served as a side dish to stews in Guyana and the Caribbean.

1/2 head cabbage, finely shredded
1 carrot, shredded
2 garlic cloves, crushed
1/2 medium onion, finely chopped
1/2 teaspoon fresh ginger, crushed
1/8 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon white vinegar
1 tablespoon canola oil

Steps:

  • Heat canola oil in a saucepan over medium heat. Add onion and cook until soft. Add ginger and garlic, cook for about 1 minute, stirring frequently. Add carrots, cabbage, salt and black pepper; Cook for 10 minutes, stirring occasionally. Next add the vinegar and stir to combine. Remove from heat. Serve warm.
  • Notes: I prefer the cabbage to be crisp but if you prefer it to be softer you can add about 1/4 vegetable or chicken stock, and cook for an additional 10 minutes or until it is the texture that you desire. If using stock, be sure to adjust the amount of salt in the dish since stocks do tend to have sodium.

½ cup margarine
1 teaspoon vanilla extract
3 eggs
3 tablespoons all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes. Drain and mash. Stir in margarine, vanilla extract and eggs; mix well. Sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.
  • Bake for 45 minutes.

6 tablespoons butter, melted
1/2 teaspoon salt (or to taste)
1/4 teaspoon white pepper (or to taste)
4 eggs
1 cup heavy cream

Steps:

  • Preheat oven to 350°F; lightly spray a 2 quart casserole dish with non-stick cooking spray.
  • Boil or steam carrots in until very soft (20 minutes); drain.
  • Add butter, salt, and pepper; purée carrots in food processor until smooth.
  • Cool slightly.
  • Add eggs and cream; blend well.
  • Fill casserole dish or ramekins with mixture.
  • Set in a baking pan of hot water and bake for 30-35 minutes.
  • Serve hot.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot of boiling water, cook the carrots until very tender. Drain, and transfer to a large mixing bowl.

3/4 cup water boiling
1 (8-ounce) can crushed pineapple drained well and juice reserved
3/4 cup mayonnaise commercial or Basic
1 cup cabbage finely sliced
1 cup carrot finely shredded
1/2 cup raisins golden
1/2 cup walnuts chopped
3 eggs white stiffly beaten

Steps:

  • Dissolve gelatin in boiling water. Add reserved pineapple juice. Beat in mayonnaise and pour into a greased loaf pan freeze until firm 1-inch from edge but soft in center, about 20 minutes. Make a collar around a 1-quart soufflé dish. In a large mixer bowl, beat gelatin mixture until fluffy fold in pineapple, cabbage, carrots, raisins and walnuts, then egg whites. Pour into soufflé dish and chill until set. To serve, remove collar and serve from soufflé dish.
