2 pounds fresh baby carrots
1/2 cup jellied cranberry sauce
1/4 cup butter, cubed
1/4 cup packed brown sugar
1 tablespoon lemon juice
1/2 teaspoon salt

Steps:

  • Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until tender. Drain and set aside., In the same pan, combine the cranberry sauce, butter, brown sugar, lemon juice and salt. Cook and stir until cranberry sauce is melted and mixture is smooth. Add carrots; stir to coat. Heat through.

1 3/4 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground allspice
1 1/2 cups granulated sugar
1 cup mayonnaise or sour cream
3 eggs
1 tablespoon ginger-flavored brandy or water
2 cups shredded carrots (about 4 medium)
1 can (8 oz) crushed pineapple in juice, undrained
1/2 cup chopped pecans or walnuts
1/2 cup sweetened dried cranberries
2 packages (3 oz each) cream cheese, softened
3 tablespoons butter or margarine, softened
1/2 teaspoon ginger-flavored brandy or vanilla
1/8 teaspoon salt, if desired
2 1/2 to 3 cups powdered sugar
Sugared cranberries, if desired
Sugared orange peel, if desired

Steps:

  • Heat oven to 350°F. Grease bottom and sides of three 8-inch square pans or three 8-inch round cake pans with shortening; lightly flour.
  • Mix flour, baking soda, baking powder, cinnamon, 1/2 teaspoon salt and the allspice; set aside. In large bowl, beat granulated sugar, mayonnaise and eggs with electric mixer on medium speed, scraping bowl occasionally, until blended. Beat in 1 tablespoon brandy. Gradually beat in flour mixture until batter is smooth. Stir in carrots, pineapple, pecans and dried cranberries. Pour into pans.
  • Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire rack. Cool completely, about 1 hour.
  • In medium bowl, beat cream cheese, butter, 1/2 teaspoon brandy and 1/8 teaspoon salt on medium speed until smooth. Gradually beat in powdered sugar on low speed until smooth and spreadable. Fill layers and frost side and top of cake with frosting. Garnish with cranberries and orange peel. Store covered in refrigerator.

1 cup whole wheat flour
1 tablespoon chia seeds
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

½ cup unsalted butter, room temperature
½ cup brown sugar, or to taste
¼ cup white sugar, or to taste
1 egg
1 banana
2 cups grated carrots
1 tablespoon grated orange zest
¾ cup cranberries, or more to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line 12 muffin cups with paper liners.
  • Mix all-purpose flour, whole wheat flour, chia seeds, baking powder, salt, cinnamon, nutmeg, and ginger together in a large bowl.
  • Beat butter, brown sugar, and white sugar together with an electric mixer in a large bowl until light and fluffy. Beat egg into the butter mixture. Mash banana into the butter mixture until smoothly incorporated. Fold carrot and orange zest into the mixture.
  • Mix flour mixture into the butter mixture about 1/2 cup at a time to make a batter. Fold cranberries into the batter. Divide evenly between prepared muffin cups to fill nearly to the top.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 30 minutes. Cool in the pans for 5 minutes before removing to cool completely on a wire rack.

  • Soften butter in a medium-sized saucepan over medium-low heat.
  • When butter is melted, add maple syrup and sugar, stirring until the sugar has completely dissolved and there are no clumps. Remove the saucepan from the heat and add cranberries, apple, and carrots, toss to coat completely.
  • Transfer all ingredients to the slow cooker and cook on low for 3 hours.*

2 tablespoons butter
1/4 cup brown sugar
1/2 cup cranberry sauce

Steps:

  • Bring a pan of water to boil and add the carrots. Cook for 8-10 minutes, (until crisp-tender). Drain and put aside.
  • In a pan over medium-high heat, combine the butter, brown sugar and cranberry sauce, stirring until smooth. Simmer 2 minutes, then add the carrots and glaze for 5 minutes. Season with salt and pepper, if desired.

1 lb carrot, peeled and cut into about 2-1/2x1/2-inch sticks (you can make them a little larger if desired)
1/2 teaspoon salt
1 -2 tablespoon brown sugar
1 teaspoon cinnamon
3/4 teaspoon mustard powder
1/4 cup orange juice
3 tablespoons butter
1/2 cup dried sweetened cranberries (I use Ocean Spray dried Craisins)
black pepper
1/2 cup coarsely chopped pecans

Steps:

  • Place the carrot sticks with about 1/2 teaspoon salt in a saucepan; cover with water and bring to a boil, reduce heat and cook for about 7-9 minutes, just until tender-crisp; drain very well (or you can steam the carrots also).
  • In a small mixing bowl combine the brown sugar, cinnamon, mustard and about 1/2 teaspoon salt, add in the orange juice; whisk to combine.
  • Melt butter in a skillet, add in carrots and the orange juice mixture.
  • Cook for 2-3 minutes or until the carrot sticks are coated, stirring frequently.
  • Add in sweetened dried cranberries; cook until heated through.
  • Season with pepper if desired.
  • Garnish with chopped pecans.
