CARROTS AND RAISINS (HEALTHY SNACK)
This came from my mother who managed to grow two kids taller(and I mean taller!) then herself. We ate these carrots all the time! Overall is a great snack that is tasty. I suggest to adjust to your taste, some like it soggy some not, just don't make it in advance, will lose the carotene ;) Make sure to exclude raisins if prepared for infants or toddlers under 5. Use your own judgment but raisins ARE choking hazard.

Steps:
- Place raisins in a small amount of water, so they plump up a little. (this step is optional) Grate carrots on a smallest part of your grater.
- Combine grated carrots, sour cream, raisins (take them out of water prior) and then add sugar (adjust to your taste).
- We love it just the way it is and my l'il one gets his nutrition.
- Beware, this combination may make your kids grow few inches taller. Carotene with sour cream and sugar is a dangerous mix for your kid's growth potential.

CARROT RAISINS BARS
These yummy bars are made with wholesome ingredients including grated carrots, raisins, honey and yogurt. They're delicious daytime or after-school snacks. You can pack this nourishing treat for lunch also. This recipe can be made into muffins too - use an ice-cream scoop to measure batter into greased or paper-lined muffin cups. ENJOY!!

Steps:
- Preheat oven to 375°F Grease or line a 9x13-inch baking dish with parchment paper.
- Combine bran, flour, carrots, brown sugar, raisins, baking powder, cinnamon, baking soda, nutmeg and salt in a large bowl,.
- Whisk yogurt, honey, oil and egg in a separate bowl. Add these ingredients to flour mixture. Stir well to combine. Batter will be thick.
- Place batter into prepared pan. Bake in preheated oven 20-25 minutes or until a toothpick inserted in the center comes out clean. Cut into 18 bars.
- If you are making muffins, bake at 375F, for 18-20 minutes, or until a toothpick inserted in the center of the muffin comes out clean.

MOIST AND LOW FAT CARROT-RAISIN-APPLE-MUFFINS
I got this recipe from beginnertriathlete.com this summer and have been making it constantly ever since. I have adapted it slightly by omitting the nuts and using skim milk instead of buttermilk. I make it with applesauce but you can substitute it for canola oil quite nicely.

Steps:
- Preheat the oven to 350°F and spray or grease the muffin tins.
- In a large bowl, stir flours, sugar, baking powder, baking soda, and cinnamon together.
- In a separate bowl, stir beaten eggs, milk, applesauce and vanilla together.
- Add liquid ingredients to the dry ingredients and stir.
- Add carrots, apple, raisins, and nuts.
- Spoon batter into tins and bake for about 30 minutes.

HEALTHY CARROT WALNUT RAISIN SALAD
I bought a small container of this salad from a health food store (Foods for Living) and really liked it. It had the ingredients listed on the label so I made up a batch guessing at the amount of each ingredient. It came out good. I hope you like it.

Steps:
- Put Raisins in a bowl and add some water to just cover the raisins and put it in the microwave on high for 45 seconds to plump them.
- Shred carrots into a bowl.
- Drain water from raisins and add them to the carrots.
- Add half of the chopped walnuts.
- Toss the Carrots, Walnuts and Raisins.
- For the Dressing.
- Put the ginger, Olive Oil, Honey, Lemon Juice and Apple Cider vinegar in a separate bowl and wisk together.
- Pour the dressing over the salad and toss/mix together until the dressing is mixed in well.
- Sprinkle the other half of the walnuts on top of the salad.
- Chill for 30 minutes.
- Serve.
EASY GLAZED CARROTS AND RAISINS
I usually make my glazed carrots with fresh baby carrots, butter, and honey. However, tonight I needed a quick side to go with my Easy One Pot Lentils and Rice. I did not have any fresh carrots or honey on hand (I need to get to the grocery store!) but I had a can or organic sliced carrots and some brown sugar. I decided to add raisins, because my 18 month old dd LOVES them, but cannot eat them unless they are chopped or cooked. (due to the fact that they are a major choking hazard) This is what I came up with. I served the lentils and rice as a rice ring, and served it with the carrots and raisins in the middle. (lifted out of the pan with a slotted spoon) My family really enjoyed it, and the kids appreciated the presentation! Whatever works to get them to eat healthy! ;o)

Steps:
- Put raisins into a small saucepan, add hot water. and let stand 5 minutes to plump raisins slightly.
- Meanwhile, drain and rinse the carrots.
- Add brown sugar, butter, and salt to the pan and stir to dissolve sugar.
- Bring glaze to a boil over medium-high heat and cook 1 minute.
- Add carrots to glaze and toss to coat.
- Bring to a boil, reduce heat to medium and simmer 5 minutes uncovered. You can serve the carrots at this point, but the longer they simmer, the thicker the glaze gets and the sweeter the carrots get.
- Enjoy!
