GRANDMA'S ROASTED DUCK

Steps:
- Preheat oven to 325°. Pierce duck skin all over with a fork. Mix remaining ingredients; rub over outside of duck. Place duck on rack in a shallow roasting pan; add 1 inch of water., Roast duck, uncovered, until a thermometer inserted in thigh reads 180°, 1-1/2 to 2 hours. Remove from oven; let stand 15 minutes before carving. If desired, skim fat and thicken pan drippings for gravy. Serve with duck.

GRANDMA'S SIMPLE ROAST CHICKEN
This is actually from Cooking Light, not my grandma, but it is moist and delicious and quite easy. If your chicken is on the small side, don't use quite as many veggies--they won't all fit. :)

Steps:
- Preheat oven to 400 degrees.
- Remove and discard insides of chicken. Rinse chicken with cold water and pat dry. Trim any excess fat.
- Combine salt, pepper, and paprika in a small bowl and sprinkle over chicken and into the cavity.
- Place vegetables and bay leaf in body cavity. Tie ends of legs together with a cord (I have never done this and it still turns out fine). Lift wing tips up and over back; tuck under chicken.
- Place chicken, breast side up, on a broiler pan (or on a rack inside another pan) coated with cooking spray.
- Bake at 400 degrees for one hour or until meat thermometer inserted into thigh registers 180 degrees.
- Cover loosely with foil for about 10 minutes.
- Remove vegetables from inside chicken and throw them away.

I made this last year out of the blue, and my whole family enjoyed it. We had never had duck before, and it was a nice exchange for the traditional turkey. We served it with all the usual side dishes.

- Preheat oven to 375 degrees F (190 degrees C).
- Rub salt, pepper, and paprika into the skin of the duck. Place in a roasting pan.
- Roast duck in preheated oven for 1 hour. Spoon 1/4 cup melted butter over bird, and continue cooking for 45 more minutes. Spoon remaining 1/4 cup melted butter over duck, and cook for 15 more minutes, or until golden brown.

CHICAGO STYLE ROAST DUCK
Crisp and moist duck roasted like my Polish grandmother used to make.

- Preheat oven to 425 degrees F (220 degrees C).
- Wash duck and pat dry. Score breast and legs by cutting into skin with sharp knife, going 2/3 of the way through the skin, being careful not to slice into meat. Season the cavity and the outside of the duck with garlic powder, onion powder, salt, and pepper; massage spices into meat. Sprinkle caraway seeds over duck, and into scored skin. Place on a rack in a roasting pan, breast side up.
- Roast duck in preheated oven for 15 minutes. Turn breast side down, and roast for an additional 15 minutes. Remove duck from the oven; reduce oven temperature to 350 degrees F. Turn duck breast side up again, and return to the oven for 20 minutes. Turn duck one more time, breast side down. Roast for a final 20 minutes. Remove duck from oven and allow to rest for 10 minutes before serving.

- Rinse duck and pat dry. Remove neck and giblets and save for another purpose. Trim excess fat from cavity and tail area. Prick duck skin all over with the tip of a sharp paring knife, making sure not to penetrate the meat.
- In a heavy granite, mortar mix the salt, peppercorns, orange zest, and sage. Pound with a pestle until all spices are crushed, and the mixture is well combined.
- Rub the duck with the aromatic mixture, don't forget about the cavity, then stuff it with the orange wedges. Refrigerate for at least 4 hours or better overnight. When ready to cook, remove the duck from the fridge and bring it to room temperature.
- Preheat the oven to 350F. Lay the bottom of a heavy dutch oven with apple slices and sweet potato wedges. Place the duck in the dutch oven and cover with a lid. Roast the duck for 1 hr 40 min. Then increase the temperature to 400F remove the lid and roast for another 30-35 minutes until the bird is golden brown.
