Small-Batch Dinner Rolls image

Timing homemade dinner rolls for Thanksgiving dinner can be tricky, but this recipe makes it simple. Although these rolls require a few rises, the longest one happens overnight. That means you can pull the rolls from the fridge a couple of hours before dinner, then bake them right when the meal is almost ready.

Number Of Ingredients 10

2/3 cup whole milk
3 tablespoons sugar
3 tablespoons shortening
1 teaspoon instant dry yeast
2 cups all-purpose flour (see Cook's Note)
1/2 teaspoon kosher salt
1/2 teaspoon baking powder
1/8 teaspoon baking soda
Vegetable oil, for the bowl
1 tablespoon salted butter, melted

Steps:

  • Heat the milk, sugar and shortening in a small saucepan over medium-low heat, stirring to help melt the shortening, just until the mixture begins to simmer. Pour into a bowl. Set aside to cool to about 125 degrees F.
  • Sprinkle the yeast over the warm milk mixture, then add 2/3 cup of the flour to the mixture. Stir until no lumps remain and the mixture looks like pancake batter. Cover with a towel or plastic wrap and let stand in a warm place for 2 hours.
  • Add the salt, baking powder, baking soda and 1/3 cup of the remaining flour to the yeast mixture. Stir well and add the remaining 1 cup flour, 1/3 cup at a time, stirring well after each addition. Start using your hands after the final flour addition, kneading the mixture for a couple of minutes to form a smooth, elastic dough. Lightly oil a bowl, add the dough and turn to coat with the oil. Cover with a towel or plastic wrap and refrigerate for at least 12 hours and up to 24 hours.
  • Lay the dough on a work surface and press it out to a 1/4-inch-thick rectangle (about 12 inches by 14 inches) using your fingers. (The work surface doesn't need flour. Just keep picking up the dough between presses.) Cut the rectangle into 4 equal strips crosswise, then cut each of those strips into 2 equal pieces, for a total of 8 pieces. Starting on the shorter side of a piece, roll each piece into a tight cylindrical coil. Pinch the edges to seal.
  • Place each cylinder seam-side down in a 9-inch cake pan, putting 7 of the cylinders in a ring around the pan's edge. Each cylinder should point inward, like the hands of a clock. Put the last 1 cylinder in the center of the pan. Cover loosely with a towel or plastic wrap and let rise until nearly doubled in size, about 2 hours.
  • Meanwhile, preheat the oven to 400 degrees F.
  • Bake the rolls until golden, about 15 minutes. Brush with the melted butter and serve immediately.

Make-Ahead Dinner Rolls image

Surprise guests with freshly baked dinner rolls at your next holiday gathering without resorting to a store-bought package. Just prepare and pre-bake the rolls 75 percent of the way through, and then freeze them. Pop the rolls in the oven and brush them with butter right before serving.

1 cup whole milk, at room temperature
3 tablespoons sugar
One 1/4-ounce package active dry yeast (about 2 1/4 teaspoons)
6 tablespoons softened unsalted butter, plus 6 tablespoons melted, plus more melted for brushing
3 1/2 cups all-purpose flour
1 teaspoon fine salt
1 large egg, lightly beaten
Flaky sea salt, for sprinkling

Steps:

  • Warm 1/4 cup of the milk in a small saucepan over medium-low heat to anywhere between 100 and 115 degrees F. Pour the milk into the bowl of a stand mixer fitted with a hook attachment. Add the sugar and yeast, and let stand until foamy, about 5 minutes. Add the softened butter, half the flour, half the remaining milk and fine salt. Mix on medium-high speed just to incorporate. Add the egg, mix until fully incorporated, then add the remaining flour and milk. Knead with the hook on medium-high speed until the dough is smooth and pulls away from the sides, about 5 minutes (the dough will still be sticky).
  • Lightly butter a large bowl with some of the melted butter, and turn the dough out into it. Cover with plastic wrap, and let stand in a slightly warm place until doubled in size, about 2 hours.
  • Lightly butter two 12-cup muffin tins with some of the melted butter. Punch the dough down. Divide it into 24 even pieces, and roll them into rough balls. Roll each ball in the melted butter to coat, letting the excess drip off, and plop it into a muffin cup. Cover lightly with plastic wrap, and let rise in the refrigerator at least 8 hours and up to 1 day.
  • Position oven racks in the lower and upper thirds of the oven, and preheat to 375 degrees F. Remove the tins from the refrigerator, and let stand at room temperature 1 hour (the dough won't puff up significantly). Sprinkle evenly with sea salt, and bake, rotating the tins halfway through, until just lightly golden but still rather pale and almost cooked through, 10 to 15 minutes.
  • Let the parbaked rolls cool slightly in the tins, then transfer to cooling racks to cool completely. Pack them in resealable plastic bags, label and date, and freeze for up to 2 weeks.
  • To serve, preheat the oven to 350 degrees F. Bake the frozen rolls on a parchment-lined baking sheet until warmed through and golden brown on top, about 20 minutes. Brush the warm rolls with melted butter.

People came from all over West Texas to eat 'Stanton's Hot Rolls' and cake doughnuts. I had gained almost 200 pounds and decided to make some changes. At 75 pounds lighter, I'm changing the recipes. Took out the bad cholesterol and added the good. I took out the eggs and cut the salt in half.

5 cups bread flour, divided
¼ cup white sugar
4 (.25 ounce) packages instant yeast
1 ½ teaspoons salt
1 ½ cups milk
1 cup water
⅓ cup coconut oil
1 tablespoon coconut oil

Steps:

  • Combine 2 1/2 cups flour, sugar, yeast, and salt in the bowl of a stand mixer fitted with a paddle attachment.
  • Heat milk, water, and 1/3 cup coconut oil in a saucepan until a thermometer inserted into the mixture reads 120 degrees F (49 degrees C), 2 to 3 minutes.
  • Pour milk mixture over flour; beat together on high speed until combined, about 2 minutes. Stir in remaining 2 1/2 cups flour until a soft, sticky dough forms.
  • Turn dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes.
  • Place dough in a bowl; cover with a towel and let rise in a warm place until doubled in volume, about 30 minutes.
  • Grease 24 muffin cups. Divide dough into 48 equal-sized balls; place 2 balls into each prepared muffin cup. Cover with a towel and let rise in a warm place until doubled in volume, about 30 minutes.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Bake in the preheated oven until golden brown, about 20 minutes. Brush tops with 1 tablespoon coconut oil.
