Fresh roasted poblano chiles give this rice dish a robust flavor.

1 bag (24 oz) Value Size frozen cauliflower & three cheese sauce
1 box (10 oz) frozen prepared rice
6 tablespoons butter
1 medium onion, finely chopped (1/2 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon ground mustard
1 cup milk
2 cups chopped fully cooked ham
2 large poblano chiles, roasted, stemmed, peeled, seeded, sliced
1/2 cup Progresso™ plain panko crispy bread crumbs

Steps:

  • Heat oven to 350°F. Spray 2 1/2-quart shallow casserole with cooking spray. Cook frozen cauliflower as directed on bag. Cook frozen rice as directed on package. Set aside.
  • In 4-quart saucepan, melt 3 tablespoons of the butter. Cook onion in butter about 4 minutes, stirring occasionally, until softened. Stir in flour and mustard with whisk; cook about 1 minute. Slowly stir in milk. Cook and stir until bubbly and slightly thickened. Stir in cooked cauliflower, ham and chile slices. Spoon into casserole.
  • In small microwavable bowl, microwave remaining 3 tablespoons butter uncovered on High about 1 minute or until melted; stir in bread crumbs. Sprinkle over vegetable mixture in casserole.
  • Bake 25 to 30 minutes or until bubbly around edge. Let stand 5 minutes before serving.

Nonstick cooking spray
3 large poblano chiles, charred, stemmed, seeded, and cut into 2-inch wide by 1/2-inch-thick strips
1 cup frozen corn, thawed
1/2 cup half-and-half
1/2 cup Mexican crema, or creme fraiche
4 Yukon gold potatoes (about 1 pound), unpeeled and cut into 1/8-inch thick rounds
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 cup coarsely grated Monterey Jack cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Spray a glass 9 1/2-inch, deep dish pie dish with nonstick cooking spray. Set aside.
  • In a medium bowl, combine the poblano strips and corn.
  • In a small bowl, mix together the half-and-half and crema.
  • Arrange 1/2 of the potato rounds, overlapping slightly, in the prepared pie dish. Sprinkle 1/2 of the poblano-corn mixture on top, season with the salt and pepper, and top with 1/3 of the cheese. Repeat the layers, ending with the cheese. Pour the cream mixture over the potatoes. Place the pie dish on a baking sheet. Cover the dish tightly with foil. Bake for 30 minutes. Remove the foil and continue baking until the potatoes are tender and the cheese is golden brown, about 30 minutes longer.
  • Let stand 10 minutes before serving.
  • Cook's Note: For easy peeling, enclose the charred poblanos tightly in a plastic bag.

4 thin slices pancetta
1 large head cauliflower, cut into florets
¼ cup couscous
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk
½ tablespoon finely chopped fresh oregano
¼ teaspoon sea salt
¼ cup coarsely grated Swiss cheese
1 pinch ground black pepper
1 pinch cayenne pepper
4 tablespoons grated Parmesan cheese
2 tablespoons dry bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Butter a baking pan.
  • Cover the bottom of the prepared baking pan with cabbage. Arrange pancetta over the cabbage. Top with cauliflower and couscous.
  • Melt butter in a medium saucepan over medium heat. Whisk in flour. Reduce heat to medium-low; whisk in milk. Cook until mixture thickens, about 2 minutes. Whisk in oregano and salt. 4 ounces goat cheese, crumbled

3 tablespoons breadcrumbs
8 sprigs thyme

Steps:

  • Heat oven to 400°F.
  • Melt the butter in a large saucepan over medium-high heat. Add the onion and cook until softened and light golden brown, about 6 minutes.
  • Add the ham and cook, 2 minutes. Add the cream, milk, cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper and bring to a boil. Reduce heat to medium-low.
  • Simmer until thickened, about 4 minutes. Add the cauliflower. Transfer to a 2-quart casserole dish and sprinkle with the bread crumbs and thyme.

1 tablespoon olive oil
5 fresh poblano chiles, seeded, peeled, chopped (about 4 cups)
1 medium onion, sliced
2 cups whipping cream
1 cup whole milk
1 large garlic clove
2 1/2 cups (packed) grated Gruyère cheese (about 10 ounces)

Steps:

  • Preheat oven to 350°F. Butter 13x9x2-inch glass baking dish. Cook potatoes in pot of boiling salted water until tender, about 25 minutes. Drain potatoes in colander; cool completely. Peel and slice potatoes into 1/2-inch-thick rounds; place in large bowl. Sprinkle potatoes with salt and pepper.
  • Heat oil in heavy large skillet over medium-high heat. Add chiles and onion and sauté until onion is very soft, about 15 minutes. Transfer chile mixture to food processor. Add cream, milk, and garlic; blend to form thick sauce. Season sauce to taste with salt and pepper. Pour sauce over potatoes; stir gently to coat. Overlap half of potatoes with sauce in bottom of prepared dish. Sprinkle with half of cheese. Top with remaining potatoes and sauce, then remaining cheese.
