CHEESY CAULIFLOWER CASSEROLE
It's a delicious dish of delightful cheesy sauce. Bright red and green bell pepper pieces and crushed corn flakes! We enjoyed it so much, their was nothing to scrape off the dishes or pan!

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease a 2 quart baking dish.
- Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the cauliflower, and steam until crisp-tender, about 5 minutes. Drain, and set aside.
- Combine sour cream, Cheddar cheese, corn flakes, bell peppers, and salt in a medium bowl. Stir in the cauliflower, and transfer to the prepared baking dish. Sprinkle Parmesan cheese and paprika over the top of the dish.
- Bake uncovered until heated through, 30 to 35 minutes.

CAULIFLOWER CHEESE
Pop this classic side dish in the oven when you take your roast chicken out to rest, so there's no hot shelf juggling

Steps:
- Bring a large saucepan of water to the boil, then add 1 large cauliflower, broken into pieces, and cook for 5 mins - lift out a piece to test, it should be cooked.
- Drain the cauliflower, then tip into an ovenproof dish. Heat oven to 220C/200C/gas 7.
- Put the saucepan back on the heat and add 500ml milk, 4 tbsp flour and 50g butter.
- Keep whisking fast as the butter melts and the mixture comes to the boil - the flour will disappear and the sauce will begin to thicken. Whisk for 2 mins while the sauce bubbles and becomes nice and thick.
- Turn off the heat, stir in most of the 100g grated cheddar cheese and pour over the cauliflower. Scatter over the remaining cheese, and 2-3 tbsp breadcrumbs if using.
- Put in the oven and bake for 20 mins until bubbling.

CAULIFLOWER CHIPS
These crisp cauliflower chips are low in carbs and can be made in either the oven or your air fryer. Plus, they require just cauliflower, Parmesan cheese and seasonings to make! Swap out the Italian seasoning for ranch seasoning or your favorite spice blend for a different flavor profile.

- Position racks in top and bottom third of oven; preheat to 375°F. (Alternatively, see Air-Fryer Version below.) Line 2 large rimmed baking sheets with parchment paper; coat with cooking spray.
- Place cauliflower in a large microwave-safe bowl. Microwave on High, uncovered and stirring halfway through, until tender, about 2 minutes. Place the cauliflower in a clean kitchen towel (or paper towels); squeeze out as much liquid as possible. Place the cauliflower in a medium bowl; add Parmesan, Italian seasoning, pepper and salt; stir until combined.
- Using a leveled tablespoon, portion mounds of cauliflower mixture 2 inches apart on the prepared baking sheets. Using a lightly greased bottom of a measuring cup or glass, press each portion into a circle about 1/8 inch thick.
- Bake both pans, rotating them halfway through, until the chips are golden brown and crisp, about 20 minutes. Transfer to a paper-towel-lined plate; let cool completely, about 20 minutes.

The cauliflower isn't "drowning" in the sauce. In fact, in autumn, when the cauliflower is very, very large, sometimes I increase the sauce/topping by 50% or even double it. Kids generally love it!

Steps:
- In a large saucepan, steam cauliflower flowerets until tender -- about 10 minutes. Drain.
- Place cooked flowerets in a lightly greased or sprayed 8" x 8" (or larger) glass casserole dish.
- In a medium saucepan over medium heat, melt butter. Add in milk. Whisk in flour. Stir in cheddar cheese, salt, garlic powder, white pepper, and paprika. Stir frequently until cheese is melted and smooth.
- Pour hot cheese mixture evenly over cauliflower in the baking dish.
- Evenly sprinkle finely crushed corn chips over top. (you can also mix the chips right in the cheese sauce if you want then "softer").
- Bake at 375 for 15-20 minutes or until sauce begins to bubble and cauliflower just slightly starts to brown.

- Preheat the oven to 375 degrees F (190 degrees C). Grease a baking dish.
- Bring a large pot of salted water to a boil. Add cauliflower and cook until tender, 8 to 10 minutes. Remove from heat, drain, and set on paper towels to dry.
- Meanwhile, melt butter in a small saucepan over medium heat. Add garlic and saute until fragrant, about 1 minute. Pour in heavy cream and cook until bubbling. Slowly add 1 cup Cheddar cheese; cook, stirring constantly, until sauce is thickened, 2 to 3 minutes.
- Place cauliflower in the prepared baking dish. Pour cheese sauce over top and stir until thoroughly coated. Sprinkle remaining Cheddar cheese over top.
- Bake in the preheated oven until cheese is fully melted, about 10 minutes.
