Number Of Ingredients 10

1 large egg, lightly beaten
1/2 cup dry bread crumbs
1/2 cup finely chopped celery
1/3 cup mayonnaise
1/4 cup finely chopped onion
2 tablespoons chili sauce
1 pouch (6.4 ounces) light tuna in water
2 tablespoons butter
4 hamburger buns, split and toasted
Optional: Lettuce leaves and sliced tomato

Steps:

  • Mix the first 6 ingredients; fold in tuna. Shape into 4 patties. , In a large cast-iron or other heavy skillet, heat butter over medium heat. Cook patties until lightly browned, 4-5 minutes on each side. Serve on buns. If desired, top with lettuce and tomato.

1 tablespoon olive oil, plus more for cooking
¾ cup panko bread crumbs
1 tablespoon dried parsley
2 teaspoons fresh chives, minced
1 tablespoon garlic, minced
½ teaspoon salt
½ teaspoon pepper
1 teaspoon paprika
1 large egg, beaten
whole wheat burger bun, for serving

Steps:

  • Combine the tuna, olive oil, panko, parsley, chives, garlic, salt, pepper, paprika, and egg in a large bowl until evenly mixed.
  • Divide the mixture into 4 portions and form patties with your hands.
  • Heat a drizzle of olive oil in a large skillet over medium-high heat.
  • Place the patties in the pan and cook for 3-5 minutes on each side, until golden brown.
  • Serve on whole wheat buns with your preferred toppings.

1 (5 ounce) can tuna, drained
1 egg
½ cup Italian seasoned bread crumbs
⅓ cup minced onion
¼ cup minced celery
¼ cup minced red bell pepper
¼ cup mayonnaise
2 tablespoons chili sauce
½ teaspoon dried dill weed
¼ teaspoon salt
⅛ teaspoon ground black pepper
1 dash hot pepper sauce
1 dash Worcestershire sauce
4 hamburger buns
1 tomato, sliced
4 leaves of lettuce

Steps:

  • Combine tuna, egg, bread crumbs, onion, celery, red bell pepper, mayonnaise, hot chili sauce, chili sauce, dill, salt, pepper, hot pepper sauce and Worcestershire sauce. Mix well. Shape into 4 patties (mixture will be very soft and delicate). Refrigerate for 30 minutes to make the patties easier to handle, if desired.
  • Coat a non-stick skillet with cooking spray; fry tuna patties for about 3 to 4 minutes per side, or until cooked through. These are fragile, so be careful when turning them.
  • Serve on buns with tomato slices and lettuce leaves, if desired.

An Italian twist on a tuna melt classic. The lemon juice adds a tangy kick.

1 clove garlic, chopped
1 pinch Salt
1 lemon, zested and juiced
2 tablespoons chopped fresh thyme
⅓ cup extra-virgin olive oil (EVOO), eyeball it
2 (6 ounce) cans water-packed tuna, drained
1 (14 ounce) can artichoke hearts in water, drained and chopped
½ red onion, finely chopped
2 each celery ribs from the heart with leaves, finely chopped
2 cups arugula or baby spinach, chopped
1 pinch Freshly ground pepper
4 each sandwich-size English muffins, plain or sourdough, split
1 large tomato, cut into thin slices
8 slices provolone cheese

Steps:

  • Preheat the broiler to high and position a rack 5 to 6 inches from the heat source. On a cutting board, mash the garlic with the side of your knife, adding a little salt as you work and using the heel of your hand to apply pressure, until the garlic turns into a paste. Place the paste in a medium bowl and combine with the lemon juice and zest and the thyme. Whisk in the EVOO. Add the tuna and flake it with a fork, mixing it with the dressing. Add the artichokes along with the onion, celery and arugula. Toss the salad to combine and season with salt and lots of pepper.
  • Place the English muffins on a rimmed baking sheet and toast under the broiler. When golden, remove the baking sheet and top each half with a slice of tomato. Using an ice cream scoop, make a mound of the tuna and pile 1 mound on top of each of the 8 tomato slices. Top the tuna with a slice of provolone cheese and return the sammies to the oven to melt the cheese.

2 eggs, beaten
1 carrot, scraped and finely grated
1/4 cup italian-style seasoned dry bread crumb
1 green onion, finely sliced
2 tablespoons chopped flat leaf parsley
1 pinch cayenne pepper
4 teaspoons olive oil
4 hamburger buns

Steps:

  • In a mixing bowl, combine tuna, eggs, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into four patties.
  • In a large skillet, heat olive oil over medium heat.
  • Saute tuna patties for four to five minutes on each side; turn carefully as they easily fall apart.
  • Serve on hamburger buns (really nice if toasted) with your choice of condiments; I recommend lettuce leaves and mayonnaise.

2 pouches (about 7 oz each) light tuna in water, drained, flaked
2 tablespoons butter or margarine
4 sandwich buns, split
4 tablespoons dill dip

Steps:

  • In medium bowl, mix all ingredients except butter, buns and dill dip. Shape mixture into 4 patties, 3 1/2 inches in diameter, using heaping 1/2 cupful for each patty.
  • In 12-inch nonstick skillet, melt butter over medium heat. Add patties; cook 10 to 12 minutes, turning once, until brown and thoroughly cooked. Serve on buns with dill dip.
