1/2 cup orange marmalade
1/2 cup sugar
8 large navel oranges
1 1/2 cups Champagne or sparkling white grape juice
1/3 cup toasted slivered almonds
Sprig of fresh mint

Steps:

  • Combine the marmalade and sugar in a small saucepan. Mix well, place over low heat and cook, stirring, until the sugar dissolves.
  • Cut the peel from the oranges, cut into slices and then quarter each slice, removing the white center pith from each. Put into a medium bowl.
  • Pour the sugar/marmalade mixture and Champagne or grape juice over the sliced oranges. Refrigerate for 8 hours.
  • Sprinkle with almonds before serving and add a sprig of mint.

I found a recipe similar to this in one of Claudia Roden's books and then gave it my own twist. This is a deliciously fragrant dessert, best served with a dollop of very thick cream or the best available icecream! Ras el Hanout is a Moroccan spice mix which I buy from Herbies in Sydney, or you can blend it yourself.

2 cups fresh squeezed orange juice
2 oranges, zest of
1/2 cup sugar
2 teaspoons ras el hanout spice mix
1 teaspoon rose water
8 oranges

Steps:

  • Peel oranges, removing all pith. Slice thickly and arrange in shallow dish.
  • Place orange juice, sugar, zest and Ras el Hanout in saucepan and bring to boil stirring to dissolve sugar.
  • Boil for about 5-10 minutes to reduce and thicken syrup.
  • Remove from heat, add rose water then cool.
  • Pour syrup over orange slices.
  • Serve cold.

8 large navel oranges, peeled and sectioned
1/2 cup slivered almonds, toasted

Steps:

  • Combine sugar and orange marmalade in a small saucepan; cook over medium heat until sugar dissolves.
  • Cool slightly.
  • Combine sugar mixture, champagne, and orange sections, stirring gently.
  • Cover and refrigerate 8 hours.
  • To serve, spoon orange sections into individual compotes or dishes, and sprinkle with almonds.

3/4 cup sugar
1 cup chilled Champagne
2 tablespoons strained fresh orange juice
1/4 teaspoon orange-flower water (available at specialty food shops) if desired
1 large egg white

Steps:

  • In a small saucepan combine the sugar and 3/4 cup water, bring the mixture to a simmer over moderate heat, stirring until the sugar is dissolved, and simmer the syrup for 10 minutes. Let the syrup cool and chill it, covered, for 2 hours, or until it is cold.
  • In a bowl stir together 1 cup chilled syrup, the Champagne, the orange juice, and the orange-flower water and freeze the mixture in an ice-cream freezer according to the manufacturer's instructions until it is frozen but still soft. In a bowl beat the white until it is frothy, add it to the sorbet, and freeze the sorbet in the freezer until it is firm.

canola oil cooking spray
3 oranges
1/4 cup sugar
2 (1/3 ounce) envelopes unflavored gelatin
1 cup boiling water
2 cups chilled champagne or 2 cups other sparkling wine
1/2 cup orange marmalade
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves

Steps:

  • Coat six 8oz disposable plastic containers (such as GladWare) with cooking spray. Cut the peel and white pith from oranges. Working over a bowl, cut the oranges between the membranes to release segments, allowing them and the excess juices to fall into the bowl. Set aside.
  • Whisk sugar and gelatin in a medium bowl to blend. Add boiling water and whisk vigorously to until gelatin and sugar dissolve and mixture becomes very foamy, about 2 minutes. Strain the juices from bowl of orange segments into gelatin mixture and whisk to blend.
  • Refrigerate gelatin mixture until lukewarm, stirring occasionally, about 25 minutes. Whisk in chilled Champagne. Divide the gelatin among the prepared containers. Cover each and refrigerate until gelatin sets, at least 2 hours and up to 1 day.
  • Meanwhile stir marmalade, cinnamon and cloves in a small heavy saucepan over medium heat until the mixture simmers, about 5 minutes. Set aside and allow to cool completely. Stir in the orange segments.
  • To serve Champagne foam, invert each onto a dessert plate and serve immediately. Spoon the spiced orange mixture alongside.
  • *Note: I am not sure if these envelopes are .3 oz ones or not. It does not say in the recipe.
