SIMPLE LEMON-HERB ROASTED SALMON

Simple Lemon-Herb Roasted Salmon image

This go-to recipe uses a fish's best friends: butter, herbs and lemon. Roasting at a high temperature lets you lightly brown the fillets on foil, without having to use a skillet, so there's minimal cleanup. Make this quick entree often, and use the time you save to try a new side dish to go with it.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 6

Olive oil, for the foil
Four 5- to 6-ounce skinless salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, cut into 4 pieces
1 tablespoon chopped fresh dill and/or parsley
Half a lemon

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.

GRILLED SALMON WITH BACON AND CORN RELISH

Grilled Salmon with Bacon and Corn Relish image

You are really going to love this exciting and vibrant new way to use salmon. It's dressed up with an easy and summery relish. Did I mention there will be bacon? Oh, yeah.

Provided by Chef John

Categories     Main Dish Recipes     Seafood Main Dish Recipes     Salmon     Salmon Fillet Recipes

Time 45m

Yield 2

Number Of Ingredients 12

6 slices bacon, cut crosswise into 1/2-inch pieces
2 ears white corn
¼ cup chopped green onions - white and light green parts separated from green tops
¼ cup diced red bell pepper
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 teaspoons olive oil
1 tablespoon rice vinegar, or more to taste
½ teaspoon vegetable oil
2 (8 ounce) center-cut boneless salmon fillets
1 pinch cayenne pepper, or to taste
1 cup fresh spinach leaves

Steps:

  • Preheat an outdoor grill (preferably charcoal) for high heat and lightly oil the grate.
  • Place bacon in a skillet over medium heat and cook until browned and crisp, 8 to 10 minutes.
  • Cut kernels from corn ears into a large bowl using a sharp knife held at a 45-degree angle. Scrape cobs with the back of the knife into the bowl to get the juices.
  • Stir white and light green parts of green onions into bacon and add red bell pepper; cook and stir until vegetables just start to become tender, about 2 minutes. Stir corn into bacon mixture and let corn just warm through. Season with salt, black pepper, cayenne pepper, a few chopped dark green onion tops, olive oil, and rice vinegar. Turn off heat under relish.
  • Spread vegetable oil onto both sides of salmon fillets and season fish with salt, black pepper, and cayenne pepper.
  • Cook on preheated grill until fish shows good grill marks, the flesh flakes easily, and fish is still slightly pink in the center, about 5 minutes per side. A crack that opens up in the salmon flesh as you cook will let you see how done the salmon is in the middle.
  • Divide spinach leaves onto 2 plates and top each with a salmon fillet and half the bacon relish. Sprinkle on a few green onion tops for garnish.

SLOW-BAKED SALMON WITH LEMON AND THYME

Slow-Baked Salmon with Lemon and Thyme image

Baking salmon in a low-temperature oven slowly melts the fat between the flesh and leaves the fillets incredibly moist and tender. Lemon and thyme, a classic Mediterranean combination, add another layer of flavor without sacrificing this dish's elegant simplicity.

BARBECUED SALMON WITH ROASTED CORN RELISH

Barbecued Salmon with Roasted Corn Relish image

A whole side of salmon is a great thing to make for an easy summer dinner party, but fillets will work just as well.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Salmon Recipes

Number Of Ingredients 11

4 ears yellow or white corn, husked
3 poblano chiles or jalapenos
2 red peppers
8 sun-dried tomatoes
1/2 red onion, finely diced
2 cloves garlic, minced
1/2 cup loosely packed flat-leaf parsley leaves, coarsely chopped, plus sprigs for garnish
4 tablespoons fresh lime juice
3 tablespoons extra-virgin olive oil, plus more for grilling
Salt and freshly ground pepper
2-3 pounds fresh salmon, skin on (side of salmon or fillets)

Steps:

  • Roast the corn by cooking it on a grill or in a 450-degree oven, turning often until kernels are well browned. Cut corn off cobs.
  • Roast the poblano chiles (or jalapenos) and red peppers over a gas flame or undera broiler until blackened. Place in a paper bag until cool. Peel and seed, then cut into 1/4-inch squares (finely chop jalapenos). Chop sun-dried tomatoes (if not packed in oil, soak in warm water until soft, then drain and chop).
  • In a bowl, combine corn, peppers, tomatoes, onion, garlic, and parsley. Season with lime juice, olive oil, and salt and pepper to taste. For best flavor, let sit at room temperature 1 hour before serving.
  • Light a charcoal fire. Coat salmon with plenty of pepper, rubbing it into flesh. Sprinkle lightly with salt and rub in.
  • When coals are gray, ashy, and very hot, brush surface of fish with oil. Brush grill with oil; place fish on grill skin side up. Grill for 5 to 10 minutes, or until edges turn light pink; then carefully turn over, using a spatula to detach surface of fish if it sticks. Grill skin side down for another 5 to 10 minutes, or until flesh feels fairly firm when pressed with a finger.
  • Carefully remove salmon, using two spatulas, and place on a long platter. Surround with corn relish, and garnish with parsley. Break off pieces of salmon and serve with some of the relish.

LEMON GRILLED SALMON WITH CORN SALAD

Lemon Grilled Salmon With Corn Salad image

A recipe for the adventuresome from March 2009 issue of BH&G. The recipe creator's name is Priscilla Yee from Concord, CA and she won $2500 for this recipe!! (The idea of blueberries mixed in a corn salad intrigued me, and love all the ingredients so I made this. DS and I liked it a lot, not DH-think the cumin might have been too much for him so if you have a dislike for cumin you should reduce it.) Priscilla was inspired to create this recipe b/c of "her father's post-heart attack switch to a healthier diet. She created this dish with some of her favorite healthful foods. Dad? He just turned 90." Love that story.:) Feel free to sub in green onion tops for the chives. After reading Chef#1227141 review I agree a bit of paprika on the salmon would be even better! I served with brown rice but a noodle thing would be good too. You could make the corn salad a day ahead, I did and it kept very well but I think it tastes better at room temperature.
