Steps:
- Preheat oven to 325°F. Spray 8 x 8 x 2-inch glass baking dish with nonstick spray. Bring large pot of salted water to boil. Add Swiss chard and cook just until wilted, about 2 minutes. Drain. Finely chop chard, then place in kitchen towel and squeeze dry. Set chard aside.
- Heat oil in large nonstick skillet over medium-high heat. Add onion to skillet and sauté until soft, 4 to 5 minutes. Add sausage and sauté until brown and cooked through, breaking up with fork, 5 to 7 minutes. Remove from heat and cool.
- Whisk eggs, cream, salt, and pepper in large bowl to blend. Add chard and cooled sausage mixture, then feta; stir to blend. Transfer mixture to prepared baking dish.
- Bake frittata until set in center, 45 to 55 minutes. Transfer baking dish to rack and cool frittata 15 to 20 minutes. Place platter atop dish with frittata. Using oven mitts, hold baking dish and platter firmly together and invert frittata onto platter; place another platter atop frittata and invert again so that frittata is right side up. Cut frittata into 20 pieces. DO AHEAD: Can be made 1 day ahead. Place frittata pieces on rimmed baking sheet. Cover and chill. Rewarm in 325°F oven until heated through, about 10 minutes.
- Transfer frittata pieces to platter. Garnish each piece with parsley; serve warm or at room temperature.

- Preheat broiler. Whisk all the eggs, 1 1/2 tablespoons cheese, 1/4 teaspoon salt, and 1/4 teaspoon pepper in large bowl.

MUSHROOM CHARD FRITTATA

- Preheat the broiler.
- Heat the olive oil in the ovenproof skillet over medium-high heat. Add the mushrooms until soft and lightly browned, about 12 minutes. Add the chard and cook until limp and still bright, about 4 minutes, then reduce heat to medium.
- In the medium bowl, whisk together the egg whites, eggs, salt, and pepper. Pour into the pan, making sure the mixture covers the pan completely. Sprinkle the chives and green onions around the top and gently pat them into the egg mixture. Cover and cook until almost set, about 3 to 4 minutes.
- Sprinkle the cheese all over the top, then transfer to the oven and broil 3 minutes or until the egg is set. Remove from the oven and allow to cool for minute, then cut into wedges and serve.

- Preheat broiler with a rack set 4 in. from heat. Heat oil in a large, ovenproof frying pan over high heat. Cook sausage, stirring often, until browned, about 3 minutes. Add bell pepper, mushrooms, and onion and cook until vegetables are softened, about 3 minutes. Stir in Swiss chard, reduce heat to medium, and cook, stirring occasionally, until wilted, about 10 minutes.

- Heat oven to 400 degrees. Coat a 12-inch nonstick ovenproof skillet with olive oil cooking spray, and place over medium-high heat. Add mushrooms and onion, and saute until mushrooms start to release their juices, stirring frequently. Reduce heat to medium low, and cook until mushrooms are soft and golden brown. Add Swiss chard, thyme, 1/4 teaspoon salt, and pepper, and cook until wilted and all the liquid has evaporated. Transfer to a baking pan lined with paper towels, and set aside.
- Combine eggs, egg whites, and remaining 3/4 teaspoon salt in the bowl of an electric mixer fitted with the whisk attachment, and whip until soft peaks form, 4 to 5 minutes. Coat a clean 12-inch nonstick ovenproof skillet with olive-oil cooking spray, and place over medium-high heat. Add two-thirds of the egg mixture to the pan, layer with reserved vegetables, and top with remaining egg mixture. Sprinkle top with Parmesan, and transfer pan to oven. Cook until eggs are set and frittata is golden brown, about 15 minutes. Run a spatula around edges of pan to loosen frittata if necessary; transfer to a serving plate. Cut into wedges, garnish with thyme sprigs, and serve.

- Wash the chard thoroughly; put in a large kettle and steam over medium heat in the water that clings to the leaves. Cover pot while steaming. When chard is tender, after about 10 minutes, drain, reserving liquid for another use, like making a broth, and coarsely chop the tender leaves.
- Preheat oven to 350 degrees.
- Put the butter and oil in a saute pan, a straight-sided quiche pan or a shallow baking dish that can go in the oven. When the butter has melted and the foam begins to subside, add the minced shallots and saute briefly until they are translucent but not brown. Add chopped chard and mix well. Remove from heat.
- In a bowl combine eggs, cream, salt and pepper and beat thoroughly. Pour this batter over the chard, lifting edges of the chard with a fork to let batter run underneath. Dot the top with cheese cubes and put in middle of oven. Bake 20 to 25 minutes.
- Remove and let cool slightly. To serve, cut into squares or wedges.

- Bring a large pot of salted water to a boil. Add the Swiss chard and cook until just wilted, about 2 minutes.
- Drain and finely chop the chard, then use a potato ricer on the smallest setting or a kitchen towel to extract as much water as possible. Set aside.
- Heat the oil in a large skillet over medium heat. Once hot, add the onion and sauté until soft, about 5 minutes.
- Add the sausage and sauté, breaking into smaller pieces as it cooks, until browned and cooked through, about 8 minutes. Remove from heat and allow to cool.
- Preheat the oven to 325°F. Spray an 8- x 8-inch baking dish with cooking spray.
- In a large bowl, whisk together the eggs, egg substitute, half and half, and salt and pepper.
- Stir in the chard and sausage mixture, then add the feta. Mix gently until well-combined, then pour the mixture into the prepared baking dish.

- Heat a 10-inch or larger skillet with oil. Add the onion and sauté about 2 minutes before adding the garlic. Cook another minute before adding the sausage - if it's precooked, sauté another couple minutes to heat through, if sausage isn't precooked, sauté until cooked thoroughly and no pink is showing.
- Add the chard, kale, or spinach, stir a bit, and cover for about 4 minutes to steam.
- Meanwhile, whisk the eggs and milk (or water) together and season with salt and pepper. Add half of the cheese and stir to mix.
- Remove the cover and stir the mixture in the skillet. Let it cook a little more, allowing any liquid to evaporate. Pour the eggs evenly over the top. Do not stir - let the eggs set around the edges and somewhat in the middle.
- Turn on the oven broiler to preheat.
- Using a thin spatula, lift the edges and tip the pan so the liquid egg from the middle runs to the edge and under the cooked egg. Continue all the way around the edge until most of the egg is cooked.
- Put the pan under the broiler (cover the handle with foil if it is not oven proof) and broil 3-5 minutes until all the egg is cooked and the top is browning (Put the tip of a knife in the middle of the frittata to see if the egg is cooked through.)
- Remove from under broiler, sprinkle with remaining cheese and then broil for another minute until the cheese has melted. Serve immediately.

CHARD, SAUSAGE AND FETA FRITTATA

- Preheat oven to 350°F. In a large ovenproof skillet (cast iron is perfect!) heat a drizzle of oil and cook the onion over medium-high heat for a few minutes, until starting to soften. Squeeze the sausage out of its casing into the skillet and cook, breaking it up with a spoon, until no longer pink. Transfer to a bowl and add another drizzle of oil (if you need it) then add the chard to the pan - if you've washed it, the moisture clinging to the leaves should provide enough moisture - and cook for a few minutes, until it wilts. Add the sausage and onion back to the pan.
- Whisk eggs, milk, salt and pepper. Stir in the cheese and pour over the meat and veg in the pan. Turn the heat to medium-low and cook for a few minutes, until it's starting to set around the edges and on the bottom. Transfer to the oven and cook for about 10 minutes, until cooked through and golden on top. (Alternatively you could stir the lot together, pour it into a buttered baking dish and bake for 40-45 minutes, until set.)
- Serve warm, in wedges, or cold in squares. Leftovers make great sandwich filling.
