3-Cheese Spaghetti Squash image

A cheesy way to make spaghetti squash. Top with more Parmesan cheese.

2 squashes spaghetti squash
1 tablespoon salted butter
1 red bell pepper, sliced
2 teaspoons minced garlic
4 each tomatoes, diced
1 (6 ounce) can tomato paste
1 (6 ounce) can sliced mushrooms, drained
½ cup grated Cheddar cheese
½ cup grated mozzarella cheese
½ cup grated Parmesan cheese
1 tablespoon balsamic vinegar
2 teaspoons chopped fresh basil
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Cut the spaghetti squash in half horizontally and remove the stems. Cover the bottom of a baking pan with a layer of water; place the halved spaghetti squashes in the pan with the flesh facing down.
  • Bake in the preheated oven until flesh is soft, about 45 minutes. Remove squash from the oven and let cool enough to handle, about 10 minutes. Leave oven on, but reduce oven temperature to 350 degrees F (175 degrees C).
  • Meanwhile, heat butter in a 12-inch pan over medium-high heat. Saute red bell pepper and garlic in the hot butter until soft, about 5 minutes. Add tomatoes, tomato paste, mushrooms, Cheddar cheese, mozzarella cheese, Parmesan cheese, balsamic, basil, salt, and pepper. Heat to a boil over medium-high heat; cover, reduce heat, and let simmer, stirring occasionally, for 20 minutes.
  • Meanwhile, remove seeds and fork the flesh of the squash, leaving it inside the shell. Fill each forked squash half with the sauce.
  • Bake in the preheated oven until golden and bubbly, about 10 minutes.

2 tablespoons butter or margarine
1 medium sweet onion, chopped (1/2 cup)
4 yellow summer squash (1 1/4 lb), cut into 1/4-inch slices
2 eggs
1/2 cup half-and-half
1 1/4 cups shredded sharp Cheddar cheese (5 oz)
2 teaspoons fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 cups cubed (1 inch) hearty white bread
Fresh thyme sprig, if desired

Steps:

  • Heat oven to 375°F. Generously spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, melt butter over medium-high heat. Cook onion in butter 2 minutes, stirring frequently, until almost tender. Add squash; cook 4 minutes, stirring occasionally, until just tender and lightly browned. Remove from heat; cool 5 minutes.
  • In large bowl, beat eggs with whisk until blended. Stir in half-and-half, 3/4 cup of the cheese, the thyme leaves, salt and pepper. Gently stir in squash mixture and bread cubes. Spoon into baking dish.
  • Bake uncovered 20 minutes. Top with remaining 1/2 cup cheese; bake 10 minutes longer or until puffed and golden. Let stand 10 minutes before serving. Garnish with thyme sprig.

There are few things that are more homey and comforting than macaroni and cheese, but it isn't the healthiest dish by any account. This is the mac & cheese my Mom taught me to make, with the addition of vegetables. Adding vegetables to the pasta serves to both add nutrition value and to decrease the amount of pasta that you actually eat with a serving. This is also good with broccoli, zucchini, and penne pasta but yellow summer squash with rotini pasta is my favorite. Another great twist on mac & cheese that's more high-end is to make this sauce without the vegetables and toss with linguine. Don't bake it when you try the linguine method.

2 cups pasta, uncooked
1 large summer squash, cut into sticks (I like bigger pieces)
2 tablespoons margarine
2 tablespoons flour
1 cup nonfat milk
1 cup kraft shredded 2% cheddar cheese
breadcrumbs (optional)
cooking spray
salt & pepper

Steps:

  • Bring water to a boil in a large saucepan.
  • Add the pasta and return to a boil.
  • Add the squash and cook until pasta is al dente. Drain.
  • Meanwhile, in a small saucepan, melt the margarine.
  • Add the flour to the margarine to form a paste.
  • Add the milk to the paste and whisk smooth.
  • Add salt & pepper to taste.
  • Once the white sauce is thickened add the cheddar cheese and whisk until melted.
  • Coat a casserole dish with the cooking spray.
  • Combine the pasta, squash and cheese sauce and pour the mixture in the baking dish.
  • Sprinkle with a light coating of bread crumbs if desired (will prevent cheese from developing 'crust').
  • Bake casserole at 350 degrees for 20 minutes or until the top is lightly browned.

2 tablespoons sugar
1/4 cup warm water (110° to 115°)
1 package (1/4 ounce) active dry yeast
1 cup warm 2% milk (110° to 115°)
4 tablespoons butter, melted, divided
1 teaspoon salt
1 cup mashed cooked winter squash
3/4 cup shredded cheddar cheese
4 to 4-1/2 cups all-purpose flour
Sesame seeds, optional

Steps:

  • In a large bowl, dissolve sugar in water. Sprinkle the yeast over the water and stir gently. Let stand until light and foamy. Stir in milk, 3 tablespoons butter, salt, squash and cheese. Add enough flour to form a soft dough. , Turn out onto a lightly floured surface; knead until the dough is no longer sticky, about 5 minutes. Form into a ball and place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, lightly grease 24 muffin cups. Punch down dough. Break off small portions and roll into 1-in. balls. Put 3 balls into each cup. Cover and let rise in a warm place until doubled, about 30 minutes. , Brush tops of rolls with remaining butter; sprinkle with sesame seeds if desired. Bake at 375° for 16-18 minutes or until golden.
