These aren't your average tots! Loaded with cheese, they're yummy on their own or dipped in your favorite sauce. They freeze well for later use as well!

2 ½ pounds russet potatoes, peeled
3 ounces grated Cheddar cheese
3 ounces grated fontina cheese
1 ½ teaspoons seasoned salt
1 teaspoon garlic powder
½ teaspoon ground black pepper
½ cup all-purpose flour
4 eggs
2 cups panko bread crumbs
vegetable oil for frying
salt

Steps:

  • Bring a large pot of water to a boil. Add whole potatoes; boil until just soft, 15 to 20 minutes.
  • Shred potatoes using a food processor. Transfer to a large bowl; allow to cool, about 10 minutes.
  • Mix Cheddar cheese, fontina cheese, seasoned salt, garlic powder, and black pepper into potatoes until well combined. Shape 2 tablespoons of potato mixture at a time into thick disk shapes.
  • Pour flour into a bowl. Whisk eggs together in a separate bowl. Pour panko into a separate bowl. Roll potato disks in flour, coat with egg, and roll in panko.
  • Heat 2 inches oil in a heavy skillet to 350 degrees F (175 degrees C). Fry tots in batches until crispy and golden, about 4 minutes. Cool on a paper towel-lined tray, about 5 minutes. Season with salt.

Steps:

  • In a large bowl, combine the first six ingredients. Gently stir in the Tater Tots. Transfer to a greased 13x9-in. baking dish. Sprinkle with cheese and potato chips. Bake, uncovered, at 350° for 30-35 minutes or until bubbly.

2 cups cooked chicken
2 (10 1/2 ounce) cans cream of onion soup
1 (16 ounce) bag frozen mixed vegetables
1 cup shredded cheddar cheese
24 ounces Simply Potatoes Traditional Mashed Potatoes

Steps:

  • Pre-heat oven to 350. On the stove top combine cans of soup and mixed vegetables over medium heat, add shredded chicken and stir occasionally until heated through, seasoning with salt and pepper as desired. Once warm through transfer mixture into a 2 quart casserole dish or a deep dish 9"x 9" pan, top with shredded cheese and finish topping the entire dish with Simply Potatoes Traditional Mashed Potatoes. Bake in a pre-heated 350 degree oven for 30 minutes until potatoes begin to turn golden brown and pot pie is heated through. Allow to cool for 5 minutes and Enjoy!

1 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup
1 1/2 cups crushed potato chips
1 cup grated cheddar cheese

Steps:

  • Preheat oven to 350 degrees. Grease a large casserole dish and set aside.
  • Empty the partially thawed bag of Simply Potatoes Garlic and Herb hashbrowns into a large bowl. In small bowl, blend the sour cream and cream of chicken soup together and then pour into the hashbrowns and toss until well mixed. Place hashbrowns in casserole dish.

The hearty warmth of the potatoes and the delicious peaks of flavor weaving in from the bacon makes for a whole meal. I used five of my husband's favorite ingredients to create the ultimate curl up on the couch dinner. The soup becomes even better when paired with your favorite bread. We prefer a soft garlic bread to dip into the soup and clean up the last few drops on the bottom of the bowl.

1 (24 ounce) package Simply Potatoes Sour Cream and Chive Mashed Potatoes
6 slices black pepper bacon
1 small yellow onion (diced)
2 cups milk
3/4 cup shredded sharp cheddar cheese (plus more for topping)

Steps:

  • Cook bacon in a large pot over medium heat until browned. Remove from pan and crumble or dice into small pieces. Do not drain fat.
  • Add diced onions to the bacon fat and cook until translucent. Drain onions and then return to the pot.
  • Add mashed potatoes and milk to the pot. Whisk until smooth.

⅓ cup panko breadcrumbs
⅓ cup fresh chives, chopped
⅔ cup shredded sharp cheddar cheese
1 clove garlic, minced
½ teaspoon salt, divided
¼ teaspoon black pepper
1 egg

Steps:

  • Grate the broccoli with a coarse cheese grater.
  • Transfer the grated bits to a medium bowl and season with a ¼ teaspoon of the salt. Mix the broccoli until well incorporated.
  • Let the broccoli sit for 20 minutes until the salt has drawn out some of the moisture.
  • Preheat oven to 400°F (200°C).
  • Pour the broccoli into a clean kitchen towel and twist to strain as much liquid as you can.
  • Place the grated broccoli back into a bowl and mix with the breadcrumbs, chives, cheddar, garlic, remaining ¼ teaspoon of salt, pepper, and egg, and mix until well combined.
  • Form the mixture into 15 even sized tots and transfer to a parchment lined baking sheet.

12 slices thinly sliced hardwood smoked bacon, cut in half crosswise
1 (24 ounce) package Simply Potatoes Sour Cream and Chive Mashed Potatoes (unheated)
3 eggs
3/4 cup finely shredded cheddar cheese, divided use
1/4 cup fresh chives, cut into 1-inch pieces

Steps:

  • Pre-heat oven to 375 degrees Fahrenheit. Line 2 large jelly-roll pans (approximately 17.25 x 11.5-inches in size) with parchment paper. Place the 24, half strips of bacon on prepared pans in a single layer. Bake 5-7 minutes, or until bacon has rendered some of the fat and just starting to brown on the edges, but still flexible. Drain on paper towels; pat to remove excess grease.
  • Using a 24-cup, non-stick mini muffin pan, line bottom and sides of each mini muffin cup with a half strip of the par-cooked bacon in a circular fashion, making a well in the center, folding or creasing if needed to fit.
  • In a large mixing bowl, beat potatoes, eggs, and 1/2 cup of the cheese with an electric mixer on medium-high speed until smooth and fluffy.
  • Transfer potato mixture to a large pastry bag fitted with a large star tip. Pipe potato filling evenly into bacon-lined muffin cups in a spiral fashion (cups will be full and potato spirals will extend beyond the height of muffin cups). Sprinkle tops with remaining 1/4 cup cheese. Bake for 12-15 minutes or until tops are golden brown. Let rest 5 minutes. Run knife around edges to remove from pan. Place on serving platter and garnish with chives. Serve warm. Makes 24.
  • Note: A plastic freezer bag can be used in place of a pastry bag and decorator's tip. Fill freezer bag with potato mixture and seal. Using kitchen scissors, cut off a small corner of the bag, about 1/2 inch, and pipe potato mixture into mini muffin cups as directed.

3/4 cup shredded medium cheddar
1 tablespoon cornstarch
1 1/2 teaspoons sea salt
cooking oil

Steps:

  • Preheat oven to 425°F.
  • Place one bag of Simply Potatoes Shredded Hash Browns in a large bowl and defrost in a microwave. stir the potatoes once every minute so that the potatoes thaw evenly. Remove the potatoes from the microwave once they are thawed. Add the cheddar cheese, corn starch, and sea salt. Combine the mixture thoroughly with a fork.
  • Generously spray a 17 ½ x 13 inches cookie sheet with cooking oil.
  • Roll the potato mixture with your hands and form small 1 inch logs. Place the logs onto the cookie sheet and repeat until all of the potatoes are gone. Spray the tops of the tater tots with cooking oil and then place in the center of the preheated oven.
