A classic French bistro soup made with caramelized onions, beef broth, French bread croutons, and melted cheese.

2 extra large onions, (8 cups sliced onions), sliced thinly into crescent shapes
1 1/2 tbsp unsalted butter, (21 grams)
1 tbsp oil, (14 grams)
1/2 tsp salt, (2.8 grams)
1/8 tsp sugar, (
1 1/2 tbsp all-purpose flour, (~10 grams)
4 cups low-sodium beef broth, (907 grams)
ground pepper and salt to taste
crusty French bread, sliced
4 oz gruyere cheese for the top, or gruyere-cheddar mix

Steps:

  • Melt butter with oil over low heat in a dutch oven or large pot. Add the onion slices into the pot and cover for 15 minutes.
  • Slice your bread into 1/2 inch slices and toast them. Temporarily set aside.
  • Raise the stove heat slightly and stir in 1/2 tsp of salt and 1/8 tsp of sugar. Cook, uncovered, for another 40 to 45 minutes until onions have caramelized, stirring occasionally throughout the duration. Note: Do not rush this step as it is essential for developing the onion flavor.
  • Sprinkle (1 1/2 tbsp) flour into the pot, stir, and cook for another 3 minutes. Slowly stream the broth into the pot, stirring as your pour. Season with a pinch of salt and pepper, to your taste. Just don't make the soup too salty if you're using a salty cheese like gruyere. Cook for another 20 minutes until simmering and hot. Preheat your oven to 350°F.
  • Once the soup is ready, divide the soup among 4 oven-safe bowls. Place 4 or 5 baguette slices into each bowl. Then top each bowl with grated cheese (about 1/4 cup of grated cheese per bowl). Bake until cheese completely melts.

6 yellow onions, sliced

1 baguette, sliced on the diagonal 1/3-inch-thick
8 oz Gruyère cheese, grated
½ cup port
2 (32-oz) boxes low-sodium beef broth

Steps:

  • Preheat oven to 400°F. Melt butter in a large Dutch oven over medium heat. Add onions and herbs, season with salt, and cook, stirring occasionally, until golden and caramelized, about 35 minutes. Meanwhile, butter baguette slices on one side, then arrange half of them on a parchment-lined baking sheet, buttered side down. Top each with a generous pinch of Gruyère. Set remaining baguette slices into place on top of cheese, buttered side up, to make 12 small sandwiches. Season tops with salt. Once onions are caramelized, add port, bring to a boil, then reduce heat to medium-low and simmer, stirring up any browned bits, until the port is almost evaporated, 8 to 10 minutes. Add beef broth, return to a simmer, and cook 15 minutes. Season with salt and pepper. Meanwhile, during last 10 minutes of cooking, bake sandwiches in oven until cheese is melted, about 5 minutes. Flip and bake 5 minutes more. Put 1 grilled cheese in each of 6 bowls. Pour soup over and top each with 1 more grilled cheese. 2 1/2 lbs yellow onions, halved, and sliced 1/4-inch thick (8 cups)
1/4 lb unsalted butter
1 bay leaf
1/2 cup medium-dry sherry
1/2 cup cognac or 1/2 cup brandy
1 1/2 cups dry white wine
4 cups beef stock
4 cups chicken stock
1 tablespoon salt
1/2 teaspoon white pepper
cheese crouton
1 small baguette, cut into 1/2-inch slices
2 1/2 cups gruyere cheese, shredded

Steps:

  • In a large stockpot on medium-high heat, saute the onions with the butter and bay leaf for 20 minutes, until the onions turn a rich golden brown color. Deglaze the pan with the sherry and brandy and simmer uncovered for 5 minutes. Add the white wine and simmer uncovered for 15 more minutes.
  • Add the beef and chicken stocks plus salt and pepper. Bring to a boil, then simmer uncovered for 20 minutes. Remove the bay leaf, taste for salt and pepper.
  • *For the croutons*.
  • While the soup simmers, arrange the baguette slices in single layer on baking sheet and bake in a 400-degree oven until the bread is dry, crisp, and golden at edges, about 10 minutes. Set aside.
  • *To serve*.
  • Adjust oven rack 6 inches from broiler element and heat broiler. Set individual broiler-safe crocks on baking sheet and fill each with about 1 3/4 cups soup. Top each bowl with 1 or 2 baguette slices (do not overlap slices) and sprinkle evenly with Gruyère. Broil until cheese is melted and bubbly around edges, 3 to 5 minutes. Let cool 5 minutes before serving.

1 loaf (8 ounces) of bread (fresh or stale)
1/2 cup olive oil (or more if needed)
1/2 cup cheese (finely grated or more to taste)
Dash salt (to taste)

Steps:

  • Gather the ingredients.
  • Preheat oven to 325 F.
  • Slice the loaf of bread into 1/2- to 1-inch squares.*
  • Put the bread cubes in a large bowl and toss with olive oil, cheese and a few pinches of salt. The easiest way to do this is with your hands, tossing the bread repeatedly so it is evenly covered.
  • Spread the croutons out in one layer on a rimmed baking sheet .
  • The baking time will vary but usually takes about 30 minutes. The croutons should be nicely browned and crispy. Shake the pan several times while the croutons bake to make sure they cook evenly.

1 tbsp olive oil
2 medium onions , thinly sliced
2 garlic cloves , thinly sliced
6 thyme sprigs, chopped
good pinch sugar
500ml vegetable stock
60g barley
60g cavolo nero or kale , thick stalks discarded and leaves sliced
4 slices baguette , toasted
4 tbsp grated gruyère cheese

Steps:

  • Heat the oil in a saucepan, then add the onions, garlic, thyme, sugar and a good pinch of salt. Cook on a medium-low heat for 15-20 mins or until golden coloured. Add the stock and simmer for a further 10 mins.
  • In a separate large saucepan of salted boiling water, cook the barley for 15 mins, adding the cavolo nero or kale for the final 3 mins of cooking. Drain and rinse under cold water, then add to the soup and warm through.
  • Heat the grill. Top the toasted bread with cheese and place under the grill until it's bubbly and melted. Serve in 2 large bowls with the cheesy croutons on top.

1 large yellow onion, diced
3 garlic cloves, minceds

28 oz 1 can of whole peeled tomatoes
3 cups vegetable stock
1 large sprig of fresh basil

Steps:

  • Make the soup: In a large pot or Dutch oven, melt the olive oil and butter together over medium-high heat. Add the onion and cook, stirring often, until softened and golden, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute.
  • Add the salt, pepper, thyme, red pepper flakes, sugar, tomatoes and their juices, vegetable stock, and basil. Bring to a boil, using a wooden spoon to break up the tomatoes. Reduce heat to low, cover, and simmer for 10 minutes.
  • Remove the basil sprig, then use an immersion blender to blend the soup until smooth. Alternatively, ladle the soup into a standing blender, working in batches, and blend until smooth.
  • Add the heavy cream to the soup, cover, and cook over low heat for 5 minutes, until warmed through.
  • Make the croutons: On a cutting board, butter both sides of each slice of bread. Lay the cheese on 2 of the bread slices. Top with the other slices of bread, creating a sandwich.
  • Heat a large pan over medium-low heat. Once the pan is warm, add the sandwiches and cook until golden brown on the underside, 2-3 minutes. Flip the sandwiches over and continue cooking until the other side golden brown and cheese is melted, about 2 minutes.
  • Transfer the grilled cheese sandwiches to a cutting board and cut into 1-inch croutons.

Reduce heat to medium-low, cover and cook, stirring often, for about 20 minutes or until onions are very soft. Uncover and cook, stirring often, for 15 to 20 minutes or until caramelized. Increase heat to medium-high; add garlic and sauté for 1 minute. Add sherry and bring to a boil, scraping up bits stuck to pot. Add beef stock and water and bring to a boil. Reduce heat and boil gently for about 10 minutes or until flavours are blended.
  • CROUTONS:.

Steps:

  • In 3-quart saucepan, cook beef, onion soup mix and pepper over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in remaining soup ingredients. Heat to boiling; reduce heat to medium-low. Cook uncovered 10 minutes.
