Throw a party with Tyler Florence's Cheese Fondue recipe from Food Network, a creamy mixture of Swiss and Gruy�re; serve it with chunks of bread and apples.

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup dry white wine
1 tablespoon lemon juice
1 tablespoon cherry brandy, such as kirsch
1/2 teaspoon dry mustard
Pinch nutmeg
Assorted dippers

Steps:

  • In a small bowl, coat the cheeses with cornstarch and set aside. Rub the inside of the ceramic fondue pot with the garlic, then discard.
  • Over medium heat, add the wine and lemon juice and bring to a gentle simmer. Gradually stir the cheese into the simmering liquid. Melting the cheese gradually encourages a smooth fondue. Once smooth, stir in cherry brandy, mustard and nutmeg.
  • Arrange an assortment of bite-sized dipping foods on a lazy Susan around fondue pot. Serve with chunks of French and pumpernickel breads. Some other suggestions are Granny Smith apples and blanched vegetables such as broccoli, cauliflower, carrots and asparagus. Spear with fondue forks or wooden skewers, dip, swirl and enjoy!

1 garlic clove, halved crosswise
1 1/2 cups dry white wine (preferably Swiss, such as Fendant)
1 tablespoon cornstarch
2 teaspoons kirsch
1/2 lb emmenthaler cheese, coarsely grated (2 cups)
1/2 lb gruyere, coarsely grated (2 cups)
cubes French bread, on fondue forks or long wooden skewer

Steps:

  • Rub inside of a 4-quart heavy pot with cut sides of garlic, then discard garlic.
  • Add wine to pot and bring just to a simmer over moderate heat.
  • Stir together cornstarch and kirsch in a cup.
  • Gradually add cheese to pot and cook, stirring constantly in a zigzag pattern (not a circular motion) to prevent cheese from balling up, until cheese is just melted and creamy (do not let boil).
  • Stir cornstarch mixture again and stir into fondue.
  • Bring fondue to a simmer and cook, stirring, until thickened, 5 to 8 minutes.
  • Transfer to fondue pot set over a flame and serve with bread for dipping.

6 ounces freshly grated Emmental cheese
4 ounces freshly grated Havarti cheese
4 ounces freshly grated Monterey Jack cheese
2 ounces freshly grated Parmigiano-Reggiano
2 tablespoons cornstarch
1 cup dry and crisp white wine
3 tablespoons fresh lemon juice
1/2 teaspoon dry mustard
1/4 teaspoon garlic powder
Pinch of freshly grated nutmeg
Kosher salt
Assorted dippers, such as bread cubes, cherry tomatoes, cubed apple, sliced fennel and roasted vegetables

Steps:

  • Add the cheeses and cornstarch to a medium-size bowl. Using clean hands, toss the cheese with cornstarch to combine.
  • Add the wine, lemon juice, mustard, garlic powder and a pinch of nutmeg to a fondue pot or a heavy bottom ceramic saucepan. Whisk to combine and bring to a simmer over medium-low heat. Gradually add the cheeses in cup-size increments, being sure to let the cheese completely melt before adding more. Avoid over-stirring, as it could make the fondue stringy. Add salt to taste.
  • Keep warm in a fondue pot and serve immediately. Use fondue forks or wooden skewers to dip dippers into fondue.

3 cups cubed French bread
3 cups cubed cooked ham
1/2 lb cheddar cheese, cut in 1 inch cubes
3 tablespoons flour
1 tablespoon dry mustard
3 tablespoons melted butter
4 eggs
3 cups milk
salt (if using mild ham)
pepper
red pepper

Steps:

  • Mix bread, ham and cheese in a large mixing bowl with lid, or big ziplock.
  • Mix flour and mustard. Sprinkle in the ham mixture and toss.
  • Pour into a greased 9x13 dish.
  • Pour butter on the mixture and toss.
  • Beat eggs with milk and seasonings.
  • Pour over dry ingredients.
  • Cover and chill at least 4 hours (Overnight is better).
  • Bake uncovered at 350 º for 1 hour until puffed and golden. Serve at once.

crusty hard bread, for serving
hard salami, for serving
1 small dill pickle, for serving

Steps:

  • In a bowl, toss the Gruyere and Emmentaler with the cornstarch.
  • Rub the inside of a cheese fondue pot, or medium, enameled cast-iron casserole with the garlic, then add the wine and bring to a simmer.
  • Add the cheese mixture all at once.
  • Using a wooden spoon, stir over moderately low heat just until the cheese is melted and smooth, about 5 minutes.
  • Stir in the Kirsch and season with salt and pepper.
  • Serve with the bread, salami and pickles.
  • Make ahead: The fondue can be refrigerated overnight and reheated in a microwave, or on the stove over low heat.

1 shallot, finely chopped
1 garlic clove, minced
3 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
Dash ground nutmeg
1-1/2 cups 2% milk
1/2 cup white wine or chicken broth
1 cup shredded Emmenthaler or Swiss cheese
1 cup shredded Gruyere or Swiss cheese

Steps:

  • In a small skillet, toss bread crumbs with 1-1/2 teaspoons oil; cook and stir over medium-high until golden brown. Remove from pan., In same skillet, heat remaining oil over medium heat. 1 package (8 ounces) cream cheese, softened
2 cups shredded part-skim mozzarella cheese
1 cup shredded fontina cheese

1/2 cup grated Parmesan cheese
4 garlic cloves, thinly sliced
1 teaspoon dried rosemary, crushed
1 teaspoon dried thyme
1/2 teaspoon pepper
Optional: Toasted French bread baguette slices, baked pita chips or Assorted fresh vegetables

Steps:

  • Preheat oven to 450°. Brush an 8-in. cast iron or other ovenproof skillet with 1 tablespoon butter; set aside. In a large bowl, beat cream cheese, mozzarella, fontina, cheddar and Parmesan cheeses, garlic, rosemary, thyme, pepper and remaining 2 tablespoons butter until combined. Spread into prepared skillet.
