Cheesy Croissant Breakfast Casserole is packed full of sausage, sun dried tomatoes, spinach, buttery croissants, and plenty of cheese! This casserole is great for brunch or dinner!

1 Pound Italian (or Pork Sausage)
3 Tablespoons Butter
1 Small Yellow Onion (Diced)
8 Ounces Baby Spinach
1/2 Cup Chopped Sun Dried Tomatoes
4 Large Eggs
1 Cup Milk
1/2 Cup Heavy Cream
3 Cloves Garlic (Minced)
1 teaspoon Dijon Mustard
Salt & Pepper (to taste)
1/4 teaspoon Cayenne Pepper (Optional)
8 Croissants
2 Cups Cheese - Gruyere (Fontina, Parmesan, Mozzarella)

Steps:

  • Grease a 9x13 inch baking dish with butter or non-stick spray, set aside.
  • Cook the sausage in a large skillet over medium-high heat until cooked through and no longer pink, drain and set aside.
  • To the same skillet add the butter. Once the butter is melted, add in the diced onion, spinach, and sun dried tomatoes.
  • Season with a pinch of salt and pepper and cook, stirring constantly for 5 minutes until spinach is wilted and onions are soft.
  • Meanwhile, in a large bowl whisk together the eggs, milk, cream, mustard, garlic salt and pepper, and cayenne if using.
  • Roughly tear the croissants into the bowl of egg mixture, along with half of the cheese, and stir well to combine.
  • Pour the mixture into the prepared baking dish.
  • Sprinkle the cooked sausage, and the spinach mixture, and remaining cheese over the casserole.
  • Cover the dish with foil and refrigerate for at least 2 and up to 12 hours if possible.
  • Preheat oven to 350 degrees. Remove the foil from the dish and bake for 30 minutes until cooked through.
  • Serve immediately. Refrigerate leftovers for up to 3 days.

This is one of those old-timey recipes that's been handed down and adapted from my grandma, to my mom, to me. It's a simple hamburger-type casserole dish that's easy and satisfying.

1 pound extra-lean ground beef
1 (15 ounce) can cut green beans, drained
⅓ cup diced white onion
¼ cup chopped green bell pepper
1 (8 ounce) can tomato sauce
½ pinch garlic salt
1 (8 ounce) package refrigerated crescent rolls
1 (8 ounce) package shredded Monterey Jack cheese
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add green beans, onion, and bell pepper. Cook until onion is tender, about 5 minutes; drain well and return to the skillet. Pour in tomato sauce and garlic powder and mix until well combined. Set aside.
  • Press the crescent roll dough into the bottom and sides of an 8-inch pie plate to form an even crust.
  • Combine Monterey Jack cheese and egg in a bowl. Spread 1/2 of the cheese mixture into the bottom of the crust. Top with all of the beef mixture. Finish with remaining cheese mixture.
  • Bake in the preheated oven until egg is set and cheese is melted, 20 to 25 minutes. Serve hot.

3 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 (8 ounce) packages crescent roll dough, unrolled and divided into triangles
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
1 cup milk
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Season chicken breasts with salt and pepper. Heat a large skillet over medium heat; pan-fry chicken until no longer pink in the center, about 10 minutes per side. Shred chicken.
  • Spread chicken over crescent roll triangles. Roll triangles, starting with the wider end, around chicken. Arrange rolls on prepared baking dish with the seam sides down. Place rolls into prepared baking dish.
  • Mix cream of mushroom soup, cream of chicken soup, milk, and Cheddar cheese in a bowl; pour mixture over crescent rolls.
  • Bake in preheated oven until bubbly and rolls are golden brown, about 40 minutes.
