CHEESY HAMBURGER CASSEROLE
Just as easy to make as Hamburger Helper and you can control the ingredients. Great weekday meal and the kids love it!

Steps:
- Sweat the onions in the oil with a three-fingered pinch of salt. Add the beef and cook it, breaking it up as you do. Add another three-fingered pinch of salt or two, along with the dry seasonings. Add the tomatoes and bring to a simmer, then reduce the heat to low and cook for an hour.
- Cook the macaroni in boiling water till it's half done. Drain it and add it to the tomatoes. (I wanted this to stretch into two meals, so I used the whole box, but if you want your dish to be very tomatoey and beefy, you might want to add only half the macaroni). Stir it into the sauce. Taste it and add cheese and cover or transfer it to a large baking dish and cover it with foil. It can be refrigerated for up to two days, or frozen a few weeks.
- If refrigerated bake it in a 400 degree oven till it's piping hot (about 45 minutes if it's cold to room temperature). Just before you're ready to eat, remove the foil, cover macaroni with the cheese and broil till the cheese is bubbly.

- Cook and stir beef and onion together in a large skillet over medium-high heat until the beef is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir ground beef mixture, sour cream, corn, mushroom soup, chicken soup, and egg noodles together in a large bowl; season with salt and pepper and spread the mixture into a 13x8-inch baking dish.

- Preheat oven to 375 degrees F (190 degrees C).
- Stir gravy mix, water, and milk together in a bowl until dissolved and smooth.
- Heat a large skillet over medium-high heat and crumble in ground beef; add onion, mushrooms, and garlic. Cook and stir until the beef is evenly browned, 10 to 15 minutes. Drain and discard any excess grease.

- Cook pasta according to package directions, drain and set aside. Brown ground beef, onions and green pepper in skillet on top of the stove and drain if needed. Add diced tomatoes, tomato sauce, sliced mushrooms, garlic powder, Italian seasoning and basil to skillet and heat for about 10 minutes.

BEEF NOODLE CASSEROLE
Steps:
- Preheat the oven to 350°F. Spray a 13 x 9 inch baking dish with cooking spray. Set aside.
- In a large skillet cook ground beef and onion in a few drizzles of olive oil over medium-high heat. Cook until beef is browned and no pink remains. Drain excess fat from pan.
- To the beef add tomatoes, tomato sauce, tomato paste, Italian seasoning, salt and pepper flakes. Simmer on medium-low, uncovered for 10 minutes then remove from heat and stir in pepperoni.
- Meanwhile, cook noodles in salted water per package directions. Drain well.
- Return noodles to pot and onto burner with heat off. To the noodles add cream cheese and half and half. Mix until cream cheese has melted. Add Parmesan, mix well.
- To assemble: Layer 1/2 noodles on bottom of baking dish. Top with 1/2 sauce and 1/2 cheese. Repeat ending with cheese.
- Bake for 35-45 minutes or until bubbly and cheese is lightly browned.
- Let stand for 10 minutes. Garnish with chopped parsley just before serving.

- Preheat your oven to 350°.
- In a large skillet over medium-high heat, saute the hamburger and cook until almost cooked through.
- Add the onion, peppers, garlic salt and pepper ad cook until the veggies are cooked through.
- In a medium saucepan boil water for pasta . Add pasta and cook until pasta is just al dente. Do not over cook as the pasta will continue to cook in the oven. Drain.
- Add the cream cheese. If you didn't leave it out at room temperature you can microwave it for a minute in the microwave. Add sour cream and Parmesan cheese.
- In a sprayed 9"x 13" casserole dish, add the pasta mixture. Then add the hamburger mixture and sauce on top and stir until everything is loosely combined.,
- Top with the shredded cheddar or mozzarella.
- Bake at 350° for 25-30 minutes, or until the casserole is heated through. Serve immediately.
