- Preheat oven to 350°F. Heat oil in a pan over high heat. Add bacon and cook until lightly browned. Remove onto a plate lined with a paper towel to drain excess fat. Set aside to cool. Cut the ends off the baguette and cut the baguette in half (or quarters - makes it easier to stuff). Use a long knife (preferably bread knife) to cut the bread out, leaving about a ½" wall of bread and crust. (Note 2) Place the bacon, cream cheese, cheddar and mozzarella cheese, jalapeños, scallions or shallots and pepper in a bowl and mix until combined. Use a knife or piping bag to stuff the mixture inside the baguettes. Make the Garlic Butter: melt butter with the garlic and salt in the microwave or on the stove. Brush the baguette with garlic butter (or you can do this after you slice it). Slice the baguette into ½" slices. Keep the slices pressed up against each other, and transfer to a large piece of foil. Wrap the baguette, then bake for 15 to 20 minutes, or until the bread is crusty and the cheese inside is melted. For best experience, serve warm! NOTES 1. You can use Cheddar or any other cheese with flavor. 2. Keep the bread you remove to make breadcrumbs! Let it dry out on a plate, then crumble and store in an airtight container until required. 3. To make ahead: Assemble the baguette then wrap in foil then with cling wrap and place in the freezer until required. To reheat, defrost and bake at 350°F for 20 minutes. I don't recommend baking from frozen because the crust will be a very dark brown before the center heats up enough for the cheese to melt. 4. Filling options: You just need 4 cups of any combination of fillings (cheese, pepperoni etc) mixed with 8 ounces of cream cheese in order to have enough filling for a 20-inch baguette. I think that 1 cup of cheddar or other flavor cheese combined with ½ cup of mozzarella is a good ratio of stretchy to flavored cheese, but you can mix it up as you want. The mozzarella is there for the "stretch". Other stuffing ideas: * Pizza: 1½ cups cheese, ½ cup shallots/scallions, 1½ cups pepperoni or salami and ½ cup diced red pepper / bell peppers. * Bacon Ranch: Same recipe as Jalapeño Bacon, but add dry ranch mix * Buffalo chicken: 1½ cups cheese (optional to use some blue cheese), 1½ cups chopped chicken, 1 cup scallions/shallots, ¼ cup hot sauce. * Italian: 1½ cups cheese, 2½ cups mixture of olives, artichokes, sun dried tomatoes, salami * Cheesy corn: 1½ cups cheese, 2 cups corn, ½ cup cilantro/coriander/jalapenos * Spinach and artichoke - 1½ cups cheese, 1½ packet frozen chopped spinach, thawed and squeezed of excess water, 1½ cups chopped artichokes PREP TIME 15 mins COOK TIME 20 mins TOTAL TIME 35 mins

- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with butter.
- In a large deep skillet, saute the diced bacon in 2 tablespoons butter for 5 minutes; transfer to paper towels.
- Season with salt and pepper and add the onion, celery, jalapeno, thyme and chili powder; cook 5 minutes.
- Pour in the chicken broth and simmer until step 5.
- In a large bowl, mix the eggs, pepper jack cheese and the bacon.
- Add to the bowl 8 cups toasted white bread cubes, 6 cups crumbled cornbread and the hot broth mixture.
- Gently toss the stuffing, then spread in the prepared baking dish. Dot the top with butter or turkey pan drippings, cover and bake 30 minutes. Uncover and bake until golden, 20 more minutes.
JALAPENO-BACON STUFFING
This is a side dish that goes great with turkey and is 100 times better than a "stovetop stuffing." If you take it to a potluck dinner you will be forever doomed to repeat the same dish forever...they demand it year after year. The jalapenos are the key; I chop them very fine. I have used up to 6 tablespoons, but 4 seems about perfect.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch pan.
- Combine cornbread mix, 1 cup milk, and eggs in a bowl. Mix until well blended; batter will be lumpy. Pour into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 20 to 25 minutes. Remove and let cool enough to handle, 15 to 30 minutes. Crumble and set aside in a bowl.
- Reduce the oven temperature to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserve 2 tablespoons grease in the pan. Let bacon cool slightly, about 5 minutes; crumble and set aside.
- Heat reserved bacon grease over medium-high heat. Cook onion, bell pepper, and celery in the hot grease until soft, 5 to 7 minutes. Set aside.
- Melt 6 tablespoons butter in a large saucepan over medium heat. Add corn, cream-style corn, remaining milk, chopped jalapenos, pimentos, sugar, and salt. Cook until heated through, 5 to 7 minutes. Stir in bacon and sauteed vegetables. Stir in 2 cups crumbled cornbread. Transfer mixture to a baking dish.
- Melt remaining butter and stir into remaining 1/2 cup crumbled cornbread; sprinkle over stuffing mixture.
- Bake in the preheated oven until crumbs are light brown, about 10 minutes. Garnish with sliced jalapenos.

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place bacon in a skillet over medium heat, working in batches, and cook until bacon is translucent and still flexible, about 2 minutes per side. Set bacon aside.
- Trim membranes from jalapeno pepper halves to reduce heat. Rinse peppers and set aside.
- Place whipped cream cheese and Cheddar cheese into a bowl and mix until well blended; stir in Worcestershire sauce. Spoon cheese mixture into a pastry bag fitted with a large tip. Pipe the cheese filling generously into the pepper halves. Top each filled pepper with a precooked bacon strip and arrange onto prepared baking sheet.
- Bake in the preheated oven until cheese filling is bubbling and the bacon strips are lightly browned, 8 to 14 minutes. Serve hot.

Delicious stuffed jalapeno recipe I got from my sister. Great for parties, especially barbecues. You can cook either in the oven or on the grill, but I prefer the grill. You can also substitute Anaheim peppers for a little less heat.

- Wash and remove the seeds of the jalapenos by making a "T" cut in the jalapenos and scooping out the seeds. (A "T" cut is where you cut the pepper horizontal about half way and then in the middle of the slit, you cut a vertical slit forming a "T" cut in the pepper.).
- In a bowl, combine cream cheese, sun dried tomatoes, and garlic powder. Using a teaspoon "stuff" the jalapeno with the cream cheese mixture.
- Wrap jalapeno in bacon and secure with a toothpick. (If you are cooking on the grill remember to soak toothpick in water for 15 minutes before securing pepper with it, to ensure it doesn't catch fire on the grill).
- Cook on the grill or bake at 450° F for 15 minutes or until bacon is cooked through.
