After trying plenty of hash brown casserole recipes, I finally discovered the perfect mixture on my own! I always make this for any potluck I go to, and it's ALWAYS the first thing to be eaten! From dinner parties to football game gatherings, you won't be disappointed.

2 cups shredded Cheddar cheese
1 (10.75 ounce) can cream of potato soup
1 (8 ounce) container sour cream
½ (8 ounce) package cream cheese, softened, or more as needed
½ cup chopped green onions
2 cloves garlic, minced
½ teaspoon salt, or to taste
1 (16 ounce) package frozen hash brown potatoes
½ cup grated Parmesan cheese, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix Cheddar cheese, potato soup, sour cream, cream cheese, green onions, garlic, and salt together in a large bowl. Fold potatoes into the mixture; pour prepared casserole dish. Top with Parmesan cheese.
  • Bake in the preheated oven until bubbling and cheese is golden brown, about 1 hour.

This is my mother's very own recipe and a holiday staple at the Haslett house.

2 lb. shredded hash brown potatoes, thawed if frozen
1 c. chopped onions
8 oz. sharp Cheddar cheese, grated
1 can cream of chicken soup (see Note below)
2 c. sour cream
1 stick unsalted butter, melted
Crumbled potato chips or corn flakes, for topping (optional)
Chopped flat-leaf parsley, for garnish (optional)

Steps:

  • Preheat oven to 350 degrees F. In a large mixing bowl, combine all the ingredients except for the crumbled potato chips (or corn flakes) and parsley.
  • Spread mixture into a 9- by 13-inch glass baking dish. Top with crumbled chips or cereal and bake uncovered for 1 hour.
  • Turn oven temperature up to 400 degrees F and bake another 15-20 minutes, or until casserole is browned on top and around the sides of the pan. Sprinkle with parsley, with desired, before serving.

2 lb (32 oz bag) of frozen cubed hash brown potatoes (defrosted (use a zero point hash brown if following the myWW Purple plan))
¼ cup chopped onion
1 cup fat free sour cream
10.75 oz can of 98% fat free cream of chicken OR cream of mushroom soup for a vegetarian option
1 cup 2% reduced fat shredded cheddar cheese
Salt and pepper to taste
¾ cup of corn flakes (crushed)

Steps:

  • Preheat the oven to 350. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
  • In a large bowl, combine all the ingredients except the corn flakes and stir until thoroughly combined.
  • Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the corn flakes over the top and bake for one hour until potatoes are cooked through. Slice into eight pieces and serve.

3 lbs potatoes, peeled and cut up (about 6 cups)
1 (10 ounce) can cream of chicken soup
1/2 cup sour cream
1 (3 ounce) package cream cheese, softened
2 tablespoons butter or 2 tablespoons margarine, softened
3/4 cup shredded cheddar cheese
1/4 cup sliced green onion
1/4 cup milk
1/4 teaspoon garlic salt
1/4 teaspoon pepper

Steps:

  • In a large saucepan cook potatoes for 10 to 12 minutes or until tender.
  • Drain rinse with cold water.
  • Drain again.
  • In a large bowl stir together the soup sour cream cream cheese and butter.
  • Stir in 1/4 cup of the shredded cheese, 3 tbsp of the green onions, milk garlic salt and pepper.
  • Stir in potatoes.
  • Put in 2 quart baking dish.
  • Bake at 350°F for 25 to 30 minutes or until heated through.
  • Sprinkle with remaining 1/2 cup cheese.
  • Let stand 5 minutes.
  • Sprinkle with remaining green onions.

3-1/2 pounds potatoes (about 7 medium), peeled and cut into 3/4-inch cubes
1 can (10-1/2 ounces) condensed cream of potato soup, undiluted
1 cup French onion dip
3/4 cup 2% milk
2/3 cup sour cream
1 teaspoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) process cheese (Velveeta), cubed
Additional minced fresh parsley

Steps:

  • Preheat oven to 350°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-12 minutes. Drain. Cool slightly., In a large bowl, mix soup, onion dip, milk, sour cream, parsley, salt and pepper; gently fold in potatoes and cheese. Transfer to a greased 13x9-in. baking dish., Bake, covered, 30 minutes. Uncover; bake until heated through and cheese is melted, 15-20 minutes longer.
