CORNBREAD-CRUSTED FRIED PORK CHOPS

Cornbread-Crusted Fried Pork Chops image

Provided by Trisha Yearwood

Categories     main-dish

Time 1h15m

Yield 4 servings

Number Of Ingredients 11

Four 5- to 6-ounce bone-in pork chops, preferably center cut
Kosher salt and freshly ground black pepper
3 cups buttermilk
2 tablespoons hot sauce
3 cups finely crumbled cornbread
1 quart vegetable oil
2 tablespoons unsalted butter
1/4 cup all-purpose flour
2 cups whole milk
1 teaspoon hot sauce
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and top with a cooling rack.
  • Sprinkle both sides of the pork chops liberally with salt and pepper. Combine the buttermilk and hot sauce in a large mixing bowl. Put the pork chops in the buttermilk mixture, being sure that all 4 are submerged. Set aside to rest for 30 minutes. Meanwhile, put the cornbread crumbs into a shallow dish.
  • Pour the vegetable oil into a large (10-inch) cast-iron skillet or heavy-bottomed pan. Clip a deep-frying thermometer to its side and heat the oil to 350 degrees F.
  • Lift a pork chop out of the buttermilk by its top bone using tongs, and allow any excess to drip off. Lightly dredge both sides of the pork chop in the cornbread crumbs. Carefully lower the coated chop into the hot oil. Repeat this process with a second chop. Cook the chops until crispy on one side, 3 to 4 minutes. Gently turn the pork chops and fry until golden brown, an additional 3 to 4 minutes. Transfer the crispy chops to the prepared cooling rack. Sprinkle the chops with additional salt and transfer to the oven to stay warm while the remaining chops are fried. Repeat this process with the remaining pork chops.
  • For the white gravy: Reserve 2 tablespoons of skillet oil for the gravy, then drain the remaining oil from the skillet, being sure to remove any bits of fried cornbread left behind. Add the butter to the skillet, pour in the reserved oil and heat over medium heat until the butter melts. Sprinkle in the flour, whisking, and cook until a smooth paste is formed, about 1 minute. Pour in the milk, whisking continuously. Cook, whisking occasionally, until a thick sauce is formed and the gravy coats the back of a spoon, 3 to 5 minutes. Stir in the hot sauce and season the gravy with salt and pepper as desired.
  • Transfer the crispy pork chops to a serving platter. Spoon the white gravy over the chops and garnish with parsley. Serve immediately.

CRANBERRY AND PECAN CRUSTED RACK OF PORK

Cranberry and Pecan Crusted Rack of Pork image

Provided by Food Network

Categories     main-dish

Time 2h45m

Yield 8 servings

Number Of Ingredients 32

1 1/2 quarts cranberry juice
12 ounces cranberry vodka (optional)
1/2 cup salt
1 center cut rack of pork, Frenched, with fat and silver skin removed
3 tablespoons clarified butter
4 ounces dried cranberries
8 ounces toasted pecans
8 ounces plain bread crumbs
2 ounces picked thyme
3 ounces clarified butter
Wilted Spinach, recipe follows
Apple Tart, recipe follows
Cranberry Sauce, recipe follows
6 tablespoons extra virgin olive oil
6 cloves blanched garlic, sliced
3 pounds, loose leaf spinach, washed
Salt
2 Granny Smith apples
3 tablespoons butter, plus extra for brushing
Salt
Sugar
1 cup heavy cream
1 large baking potato, like russets
1 sheet store-bought puff pastry
1 thyme sprig
1 cup fresh or frozen cranberries
1 tablespoon butter, plus 4 ounces (1 stick) cold butter, cut into small pieces
Sugar
Salt
1 cup Riesling wine
2 cups cranberry juice
1 thyme sprig

Steps:

  • Combine the brining solution ingredients together and cover the pork with the cranberry liquid overnight.
  • Puree the dried cranberries in a blender with a little bit of water until smooth.
  • Toast the pecans. Place in food processor and pulse until slightly ground. Add bread crumbs and picked thyme. Pulse again. Add 3 ounces clarified butter until mixture sticks together to adhere on the pork.
  • Preheat oven to 325 degrees F.
  • After the pork has been brined, remove from the liquid and pat dry. Discard the brining liquid. Heat a large saute pan until hot, add 3 tablespoons of clarified butter and sear the rack on both sides. Place the pork on a meat rack. Spread the cranberry paste on the pork and then top with the pecan bread crumbs. Cover with foil and bake for about 1 1/2 hours or until meat thermometer registers 130 degrees. Remove the foil about 10 to 15 minutes before the pork is done, to brown the pecan crust. Allow the pork to rest 15 minutes before slicing.
  • When ready to serve slice the rack of pork into 8 slices and plate each piece. Arrange each plate with a Wilted Spinach and Apple Tart. Finish each plate with cranberry pork sauce.
  • Heat 2 large saute pans until hot. Add the olive oil and garlic. Now add the spinach, season with salt and cook until just wilted. Serve immediately.
  • Peel, core and dice 1 apple, saute in butter, season with salt and sugar. Add the cream and reduce by 3/4. Puree until very smooth.
  • Slice potato into thin slices with mandoline. Cook in boiling water until almost tender. Set aside.
  • Roll out puff pastry a bit. Score with a sharp knife. With a 2-inch cookie cutter, cut out 8 circles of puff pastry. Place between 2 sheets of waxed paper on baking sheet, weigh down with another baking sheet and blind bake in oven until almost cooked through. Remove from oven and let cool.
  • Preheat oven to 350 degrees F.
  • Spread a heaping teaspoon of the apple cream on top of the puff pastry. Peel and slice the other apple, and then fan apple and potato slices around the puff pastry, making a pinwheel design. Brush with butter and sprinkle with salt and sugar. Bake for about 25 minutes. Brush with a little more butter and sprinkle with some more sugar and broil for 1 minute until the tarts are caramelized.
  • Saute the cranberries in 1 tablespoon of butter until they start to split, sprinkle with sugar and salt, deglaze with the wine and reduce until almost dry. Add in the cranberry juice and thyme sprig; reduce by 1/2. Strain the sauce through a fine sieve, whisk in the remaining cold butter and check for proper seasoning.

CORNBREAD-CRUSTED PORK LOIN WITH SAGE

Cornbread-Crusted Pork Loin With Sage image

An unusual presentation that is very quick, and only dirties THREE kitchen items. I can't make this recipe without snacking on the cornbread mixture - it is delicious! Pork loin can dry out when cooking, but the crust on this recipe results in a deliciously moist final product. I adapted this recipe from one in Gourmet magazine, adding a little Asiago cheese to the crust so that it holds together better, and optimizing the instructions for super-fast cleanup.

Provided by Captain Apollo

Categories     Pork

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 lb pork tenderloin
1 tablespoon olive oil
1 tablespoon unsalted butter
3 garlic cloves, minced
2 pieces cornbread (to make ~1.5 cups crumbled, see below)
4 -5 leaves fresh sage
2 tablespoons Dijon mustard
2 tablespoons grated asiago cheese

Steps:

  • Preheat oven to 425°F.
  • Heat oil in large non-stick pan over high heat.
  • While oil heats, season the loin with salt and pepper.
  • When oil is very hot but not smoking, add loin to pan and brown on all sides, about 4 minutes total.
  • Transfer to oiled, foil-wrapped shallow baking pan.
  • Reduce heat under non-stick pan to medium and add butter. Add garlic and cook until fragrant and slightly browned, about 1 minute.
  • Crumble cornbread into pan and sprinkle with cheese.
  • Layer sage leaves together in one hand, and use kitchen shears in the other to snip fine ribbons onto the cornbread. Stir mixture in pan and season with pepper to taste.
  • Spread mustard over loin, then carefully but firmly pat the crumb mixture onto the mustard (when making this for family, I just mound the crumbs over the loin and pat it down a bit for speed).
  • Tent loosely with foil and cook just until instant-read thermometer registers 155 (a remote probe thermometer helps, otherwise you are likely to knock off a lot of the crust by repeatedly stabbing the loin) about 20-25 minutes.
  • Transfer loin to a cutting board and tent with foil. Let rest 10 minutes before serving.

PECAN CRUSTED PORK TENDERLOIN

Pecan Crusted Pork Tenderloin image

Makes a delicious and attractive entree. Would make a great entree for company. Recipe off the web but I don't know who to credit, but it does say it's Southern cruisine.

Provided by Southern Lady

Categories     Pork

Time 25m

Yield 4 serving(s)

Number Of Ingredients 12

1 -1 1/4 lb pork tenderloin
1/3 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 large eggs
2 tablespoons water
1 1/4 cups dried breadcrumbs
1/3 cup pecans, chopped finely
2 tablespoons dried parsley flakes
1/4 cup vegetable oil
3/4 cup water
1 teaspoon chicken bouillon granule (or base)

Steps:

  • With a sharp knife cut tenderloins into 1/4-inch slices. With a meat mallet gently pound each slice to about 1/8-inch thickness.
  • In a shallow bowl or on waxed paper, combine the flour, salt, and pepper.
  • In a shallow bowl or pie plate, whisk the eggs and water.
  • In another shallow bowl or on waxed paper, combine bread crumbs, pecans, and parsley.
  • Dip the tenderloin pieces into flour mixture, then into the egg mixture, then into the bread crumb and pecan mixture, coating well.
  • Heat vegetable oil in a large skillet over medium heat. Cook tenderloin pieces, 1/3 or 1/2 at a time, until lightly browned on both sides and cooked through. Add more oil as necessary.
  • Place browned tenderloin on a warm platter or tray and tent with aluminum foil to keep warm while cooking remaining pieces.
  • Add the 3/4 cup water and chicken bouillon granules to the drippings in the skillet and bring to a boil, stirring to loosen browned bits; continue to boil for 1 minute.
  • Pour over pork. YUM!

PECAN-COATED ROAST LOIN OF PORK

Pecan-coated Roast Loin of Pork image

Provided by Jessica B. Harris

Categories     Sandwich     Herb     Pork     Roast     Kwanzaa     Pecan

Yield Makes 8 servings

Number Of Ingredients 8

4 pounds boneless loin of pork
1/4 cup olive oil
2 teaspoons powdered sage
1 teaspoon dried thyme
1 teaspoon minced garlic
Salt and freshly ground black pepper, to taste
1 tablespoon packed dark brown sugar
1/4 pound shelled pecan halves

Steps:

  • Rub the pork loin with olive oil, making sure that it is well covered. Combine the sage, thyme, garlic, salt, pepper and brown sugar in the bowl of a food processor or blender and pulse until you have a thick paste. You may have to add a drizzle of olive oil to get it started. Slather the paste all over the pork loin, cover it with plastic wrap, and refrigerate it over night.
  • Preheat the oven to 400 degrees. Place the pecans in the bowl of a food processor or blender and pulse until they are finely chopped. Roll the pork loin in the crushed pecans and place it in a roasting pan. Make a tent of aluminum foil and arrange it over the pork loin, covering the nuts completely so they won't char.
  • Roast for 30 minutes; then lower the heat to 350 degrees and continue to roast. After 1 hour and 20 minutes, remove the aluminum foil and continue to roast until the pork is done, approximately 20 minutes more. Serve hot.

PECAN-CRUSTED PORK WITH PUMPKIN BUTTER

Pecan-Crusted Pork with Pumpkin Butter image

This is one of my favorite ways to eat pork. Pork chops are crusted in pecans and breadcrumbs, then topped with a delicious homemade pumpkin butter. (You can always use store bought pumpkin butter if you can find it but homemade is always better).

Provided by Andrew Benoit

Categories     Main Dish Recipes     Pork     Pork Chop Recipes     Pan Fried

Time 30m

Yield 4

Number Of Ingredients 10

1 (14 ounce) can pumpkin puree
¾ cup apple juice
¾ cup sugar
1 pinch ground cloves
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 cup pecans
¾ cup bread crumbs
4 (1/2 inch thick) boneless pork chops
¼ cup oil for frying

Steps:

  • Whisk together pumpkin puree, apple juice, sugar, cloves, ginger, and cinnamon in a saucepan until smooth. Bring to a boil, then reduce heat to medium-low, and simmer until the mixture has reached the consistency of applesauce. About 10 minutes.
  • Meanwhile, pulse pecans and bread crumbs in a food processor until the pecans are finely chopped. Pour into a shallow dish, and press pork chops into the mixture to coat.
  • Heat oil in a skillet over medium-high heat. Add breaded pork chops and cook until golden brown on both sides and cooked through, about 4 minutes per side. Remove and drain on a paper towel-lined plate. Serve the pork chops with a dollop of pumpkin butter.
