Bake these pies for an after-school dinner the whole family will love. Shop-bought pastry makes them quick and easy to prepare, and you can use canned beans from the back of the storecupboard

400g can chopped haricot beans , drained and rinsed
4 sausages , cooked, then sliced into rounds
150g passata
pinch of dried oregano
4 spring onions , chopped
pinch of sugar
320g ready-rolled puff pastry sheet
50g cheddar , grated
1 egg , beaten
salad , to serve

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Combine the beans, sausages, passata, oregano and spring onions with some seasoning and the sugar.
  • Unroll the pastry and cut into four rectangles. Spoon the bean and sausage mixture onto one side of each rectangle, leaving a 1cm border - so you can fold the pastry like a book. Sprinkle the cheddar over the bean and sausage mixture.
  • Brush some egg around the edges, then fold the pastry over to enclose the filling. Seal the edges by pressing with a fork, then put on a baking sheet lined with baking parchment. Brush with more egg, and cut a small hole in the top of each pie for steam to escape. Will keep chilled for up to 24 hrs. Heat the oven to 180C/160C fan/gas 4.
  • Bake on the middle shelf for 40 mins until golden. Leave to cool for 5 mins, then serve with salad.

1 Tbs olive oil
1 lb hot Italian sausage
1 small yellow onion
3 cups water
1- 12 oz box quick cook or "pronto" penne pasta (the kind of pasta you do not have to boil or strain)
2 cups fresh snipped green beans (I used French green beans)
1- 24 ounce jar Bertolli Tomato and Basil pasta sauce
2-3 cups Mozzarella cheese shreds (How cheesy do you want it?)
Garnish
Fresh parsley, chopped fine

Steps:

  • Preheat oven to Broil on High. Heat olive oil in a deep skillet, and brown your sausage over a medium high heat. Add in onion, and saute until fragrant, about a minute. Pour 3 cups of water over the top, add in snipped green beans and quick cook pasta, turn heat to high. Set timer, and cook for 10 minutes. At the end of 10 minutes, pour Bertolli sauce over the top, and stir in. Let simmer 2-3 more minutes. Top with cheese, and put in in the oven to broil until cheese is melted and bubbly. Garnish with fresh parsley and serve. NOTES If you can't find the Pronto or quick cook pasta, then just cook your pasta according to package directions, and remove water from the ingredient list. Instead, sautee green beans with the sausage and onion and move on to step 6 in the directions.

1 package (1 pound) spaghetti
4 large eggs, lightly beaten
2/3 cup grated Parmesan cheese
1 cup chopped onion
1/4 cup butter, cubed
2 cups sour cream
2 teaspoons Italian seasoning
2 pounds bulk pork sausage
2 cups water
1 can (12 ounces) tomato paste
1 cup shredded part-skim mozzarella cheese
1/2 cup shredded cheddar cheese

Steps:

  • Cook spaghetti according to package directions; drain and place in a large bowl. Add eggs and Parmesan cheese. Transfer to three greased 9-in. pie plates; press mixture onto the bottom and up the sides to form a crust. Set aside. , In a large saucepan, saute onion in butter until tender. Remove from the heat; stir in sour cream and Italian seasoning. Spoon into the crusts. , In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in water and tomato paste. Simmer, uncovered, for 5-10 minutes or until thickened. Spoon over sour cream mixture. Sprinkle with mozzarella and cheddar cheeses. , Cover and freeze two pies for up to 1 month. Cover and bake third pie at 350° for 35-40 minutes or until heated through. , To use frozen pies: Completely thaw in the refrigerator. Remove from the refrigerator 30 minutes before baking. Bake as directed.

1 tablespoon vegetable oil
½ tablespoon finely minced onion
1 orange bell pepper, thinly sliced

1 cup heavy cream
1 cup grated Parmesan cheese
1 tablespoon chopped fresh parsley

Steps:

  • Fill a large pot with lightly salted water, and bring to a rolling boil over high heat. Stir in the shell pasta, and return to a boil. Cook, stirring occasionally, until cooked through but still firm to the bite, about 13 minutes. Drain well.
  • While the pasta is cooking, heat the vegetable oil in a large skillet over medium-high heat. Cook onion, orange pepper, and garlic in oil until tender, about 5 minutes. 1 medium green pepper, chopped
1 medium onion, chopped
1 can (31 ounces) pork and beans

1 can (15-1/2 ounces) black-eyed peas, rinsed and drained

1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
1/8 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
  • In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
  • In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.

1 lb dry smoked sausage (chopped or sliced)
1 large onion, chopped
2 -3 tablespoons minced fresh garlic

1 -2 teaspoon dried chili pepper flakes (or to taste)
1 -2 jalapeno pepper, seeded and chopped (optional)
2 (10 ounce) cans tomato soup, undiluted
2 (14 ounce) cans diced tomatoes, undrained
3 tablespoons green chilies, chopped (or to taste) (optional)
3 (16 ounce) cans pinto beans, with juice
4 (15 ounce) cans pork and beans, undrained
salt and pepper
sugar (optional)
2 cups shredded cheddar cheese

Steps:

  • In a large Dutch oven or pot, brown the ground beef with smoked sausage, onion, garlic, bell pepper, chili flakes and jalapeno peppers (if using) until the meat is well browned (about 10-12 minutes) drain fat.
  • Add in the undiluted soup, diced tomatoes with juice, green chilies (if using) pinto beans with juice and pork and beans with juice; stir to combine then season with salt and pepper to taste; bring to a boil and simmer uncovered for about 1 hour, stirring occasionally (you might want to add in some sugar if desired).
  • At the end of cooking stir in the cheddar cheese until combined.

1 yellow onion, diced
6 sausages
2 zucchini, grated
1 cup tasty cheese, grated
1 (400 g) can mixed beans (eg. kidney, cannelini)
1 1/2 cups milk
1/2 cup flour
3 eggs

Steps:

  • Preheat oven to 160 degrees celcius.
  • Brown onions in a fry pan, then add sausages.
  • Cook sausages for about 6 minutes, remove from pan and allow to cool slightly.
  • Lightly grease a rectangular baking dish (as for lasagna).
  • Slice cooled sausages to desired thickness.
  • Place sausage, onion, zucchini, beans and cheese in baking dish.
  • Mix in to get even layers.

4 scallions, white and green parts separated and chopped
1 tablespoon chopped garlic

3/4 cup low-sodium chicken broth or water
1/2 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon coarse salt
12 ounces large tortilla chips (restaurant style)
3 cups grated pepper Jack, sharp cheddar, or a combination
1/4 cup pickled jalapeno slices (optional)
Salsa and sour cream, for serving

Steps:

  • Preheat oven to 450 degrees. Heat a large skillet over medium-high. Add sausage and cook, breaking meat apart with a wooden spoon, until sausage is browned and the fat is rendered, about 5 minutes. With a slotted spoon, transfer sausage to paper towels to drain.
  • Add scallion whites and garlic to skillet; cook until fragrant and soft, about 20 seconds. Stir in beans and cook 1 minute. Add broth, chili powder, cumin, and salt. With a potato masher or the back of a wooden spoon, mash beans until chunky-smooth. Reduce heat to medium and cook until warmed through, 1 to 2 minutes.
  • Spread half the tortilla chips in a large ovenproof platter or baking dish. Top with half the beans, half the sausage, half the cheese, and half the jalapenos (if using).
