This came from a ladies group that met once a month where everyone brought their favorite dish and worked the afternoon on fund raising projects. It has since become a favorite dish for Sunday dinners, and potlucks at our house.

2 (10 ounce) packages chopped frozen broccoli
6 tablespoons butter
1/2 lb Velveeta cheese
1 (1 lb) package Ritz crackers or 35 Ritz crackers
2 drops Worcestershire sauce

Steps:

  • cook broccoli until it comes apart and color is nice and green, drain.
  • Arrange in a 9x9 or 8x8 greased pan.
  • Top with cubed cheese.
  • Melt the butter, add a couple drops of worcestershire sauce, crush the ritz crackers and add.
  • Sprinkle over the casserole.
  • Bake 325- 45min.

  • Heat oven to 350°F.
  • Combine broccoli and dressing. Prepare Dinner as directed on package. Stir in broccoli mixture.

When you mix in broccoli florets and cooked rice, then top the whole thing with crushed crackers and more Cheddar, you get a gooey holiday side with a crisp top. Use white or orange Cheddar or a mix of the 2, aiming for a range of 4 to 5 cups, based on how rich and cheesy you'd like it. And while this does contain a lot of broccoli, you'll probably want to serve a salad on the side.

Kosher salt
3 to 4 large heads broccoli (about 3 1/2 pounds), trimmed of long stalks and cut into small florets
1 1/2 teaspoons red-pepper flakes
2 bunches scallions
1/2 teaspoon black pepper
3/4 cup all-purpose flour
4 1/2 cups whole milk
5 cups shredded sharp Cheddar cheese
3 cups cooked long-grain white rice

  • Heat the oven to 350 degrees and butter a deep 9-by-13-inch baking dish.
  • Bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2 to 3 minutes, until bright green. Drain immediately and set aside.
  • In a large heavy-bottomed pot, melt the butter with 1 teaspoon red-pepper flakes over medium heat. 1 small head cauliflower, cored and chopped (3 cups)
6 garlic cloves, roughly chopped
4 medium shallots, roughly chopped
Coarse salt and freshly ground black pepper
4 teaspoons all-purpose flour
4 cups skim milk
1/4 teaspoon freshly grated nutmeg
6 ounces pecorino cheese, grated (2 cups)
1/2 pound medium multigrain pasta shells
1/4 pound sliced smoked ham, chopped
1 medium bunch broccoli, trimmed and cut into florets (5 cups)
1/2 cup toasted whole-wheat panko (Japanese breadcrumbs), for serving (optional)

Steps:

  • Heat oil in a medium saucepan over medium heat. Add cauliflower, garlic, shallots, and 1/2 teaspoon salt; cook until softened but not brown, about 10 minutes, stirring occasionally. Sprinkle with flour; stir to coat well.
  • Gradually stir in milk; bring to a boil. Reduce heat; gently simmer until cauliflower is very soft, about 15 minutes. Let cool for 5 minutes. Transfer all to a blender, and puree with nutmeg and half the pecorino until smooth, about 2 minutes.

Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

1 (10.75 ounce) can condensed cream of mushroom soup
1 cup mayonnaise
1 egg, beaten
