FRESH CHERRY CRISP

A super easy summer dessert with fresh cherries. Crispy topping and moist center. Perfect with whipped cream or ice cream.

1 and ½ cups cherries, pitted
1 tablespoon sugar
1 teaspoon cornstarch
¼ cup all purpose flour
¼ cup sugar
A pinch of salt
1/2 cup oatmeal
A pinch of cinnamon
1/2 tablespoon ground pistachio
3 tablespoons butter, cold and cubed
1/2 teaspoon sugar, for the topping of each

Steps:

  • Preheat oven to 190C. Spray 3 ramekins with non-stick cooking spray or butter them.
  • Mix cherries, sugar and cornstarch in a bowl until combined well and set aside.
  • For the crumbly topping, in a medium bowl mix everything except butter.
  • Add in the butter pieces and pinch them together with the oatmeal mixture until it gets crumbly. Don't overplay with the mixture. Chill it for 15 minutes.
  • Put 1 tablespoon topping mixture into ramekins to make a thin bottom layer for your crisp.
  • Share the cherry mixture into ramekins evenly and sprinkle remaining the topping mixture evenly on cherries.
  • Sprinkle a pinch of extra sugar on each.
  • Bake for 30 minutes or until the topping is slightly golden and the cherry layer is bubbling.
  • Serve warm or at room temperature.

  • Spread pie filling into a greased 9-inch square baking dish.
  • Combine the next six ingredients in a bowl.

1 (21 ounce) can cherry pie filling
½ cup all-purpose flour
½ cup rolled oats
⅔ cup brown sugar
¾ teaspoon ground cinnamon
¾ teaspoon ground nutmeg
¼ cup chopped pecans
⅓ cup melted margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Lightly grease a 2 quart baking dish. Pour pie filling into the dish, and spread evenly.
  • In a medium bowl, mix together flour, oats, sugar, cinnamon, and nutmeg. Mix in melted margarine. Spread over pie filling, and sprinkle with chopped pecans.
  • Bake in the preheated oven for 30 minutes, or until topping is golden brown. Allow to cool 15 minutes before serving.

1/2 cup all purpose flour or white whole wheat flour
3/4 cup old-fashioned oats
1/2 cup coconut sugar (can sub brown sugar)
1/3 cup pecans or walnuts, finely chopped
1/2 tsp cinnamon
1/4 tsp fine sea salt
heaping 1/3 cup coconut oil, solid (or unsalted butter)

Steps:

  • Preheat oven to 350F. Spray an 8x8-inch baking dish with cooking spray.
  • Pit cherries (if you don't have a cherry pitter, you can always use your hands like I did!) and then measure out 3 cups. Place cherries in baking dish.
  • Add flour, oats, coconut sugar, almonds, cinnamon, and salt to a medium mixing bowl, stirring until combined. Add coconut oil and use your fingers to incorporate the oil into the mixture until it's moist, crumbly, and very well combined. If your coconut oil is very hard, this will take a bit longer.
  • Sprinkle topping evenly onto the cherries. Bake for 30 minutes. Cool on a rack for 15 minutes before diving in, preferably with ice cream!
