Cherry Pecan Dreams image

Packed with fruit, nuts and vanilla chips, these are always a treat. To vary the flavor, swap in dried cranberries or apricots for the cherries, and pistachios for the pecans. -Mary Ann Mariotti, Plainfield, Illinois

1 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
1 tablespoon grated orange zest
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups white baking chips
1 cup dried cherries, coarsely chopped
1 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and orange zest. Combine the flour, baking soda and salt; gradually add to creamed mixture and mix well. Fold in the chips, cherries and pecans. , Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 10-12 minutes or until edges are golden brown. Cool for 2 minutes before removing to wire racks.

1 cup butter, softened
1 cup sugar
2 large eggs
1 teaspoon almond extract
3-3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 cup heavy whipping cream
1/2 cup dried cherries or cherry-flavored dried cranberries, chopped
1/2 cup chopped pecans

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and extract. Combine flour and baking powder; add half to creamed mixture and mix well. Beat in cream, then remaining flour mixture. Stir in cherries and pecans., Shape into two 8-in. logs; wrap in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake 9-11 minutes or until lightly browned. Cool 1 minute before removing from pans to wire racks.

1 (21 ounce) can LUCKY LEAF® Regular or Premium Cherry Fruit Filling
24 halves pecan halves
1 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 ¾ cups all-purpose flour
¼ cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees F.
  • Combine crust ingredients in a large bowl. Beat at medium-high speed until mixture is creamy (1-2 minutes). Wrap dough in plastic wrap and refrigerate for 1 hour.
  • Form 1-inch balls of dough and place in mini muffin tins. Using your fingers dusted with flour, press dough into bottom and sides of tins. Fill each mini pie with about 1 tbsp. of LUCKY LEAF Cherry Pie Filling.
  • Bake uncovered for 18 to 20 minutes, or until lightly browned. Cool completely before serving. Top each mini pie with a pecan half just before serving.

4 large egg whites, room temperature
1/4 teaspoon cream of tartar
1/4 teaspoon salt
1/4 teaspoon vanilla extract
1 cup sugar
1/3 cup dried cherries or dried cranberries, coarsely chopped
1/3 cup chopped pecans

Steps:

  • Preheat oven to 225 degrees. Line 2 baking sheets with parchment paper; set aside. In the bowl of an electric mixer, beat egg whites, cream of tartar, salt, and vanilla until soft peaks form.
  • Still beating, very gradually (1 tablespoon at a time) add sugar to egg whites. Continue to beat until sugar has dissolved and stiff peaks form, 2 to 3 minutes. Gently fold in chopped dried cherries and chopped pecans.
  • Drop meringue mixture by rounded tablespoons onto prepared baking sheets, spacing about 1 inch apart. Bake, switching baking sheets halfway through, until meringues are dry, about 2 hours. Cool completely on baking sheets. These can be stored in an airtight container for up to 5 days.

1/2 cup sugar
1/2 cup powdered sugar
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour
1 1/2 cups candied red cherries or 1 1/2 cups green glazed cherries, halved
1 tablespoon all-purpose flour
1 cup coarsely chopped pecans

Steps:

  • Combine butter, sugar, powdered sugar, egg and vanilla in large mixer bowl.
  • Beat at medium speed, scraping bowl often, until creamy.
  • Reduce speed to low and add 2 1/4 cups flour.
  • Mix well.
  • Combine cherries and 1 tablespoon flour in small bowl; toss to coat.
  • Stir in cherry mixture and pecans by hand.
  • Cover dough and refrigerate 1 hour.
  • Shape dough into three 10 x 1 1/2-inch rolls on lightly floured waxed paper.
  • Wrap rolls in plastic food wrap and refrigerate until firm (1 to 3 hours).
  • Heat oven to 350° F.
  • Cut rolls into 3/8-inch slices with sharp knife.
  • Place 1 inch apart onto ungreased cookie sheets.
  • Bake for 12 to 14 minutes, or until edges are very lightly browned.
  • NOTE: This dough freezes well.
  • Wrap rolls tightly and place in plastic freezer bags or foil.
  • Thaw in refrigerator before slicing.

2 medium fresh pears, peeled and diced
½ cup dried cherries
½ cup chopped pecans
¼ medium red onion, finely chopped
⅓ cup crumbled Gorgonzola cheese

Steps:

  • Combine balsamic vinegar and cherry preserves for vinaigrette in a small bowl. Gradually whisk in olive oil until emulsified. Season with salt and pepper.
  • Toss mixed greens, pears, cherries, pecans, red onion, and vinaigrette in a large salad bowl.

1 cup butter or 1 cup margarine, softened
1 cup sugar
1 egg
2 tablespoons red maraschino cherry syrup
1/4 teaspoon almond extract
3 drops red food coloring
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 cup pecans, finely chopped
red maraschino cherry, halved (or candied cherries)

Steps:

  • Cream butter and sugar.
  • Blend in egg, syrup, extract, and food coloring.
  • Stir together flour, soda, cream of tartar, and salt.
  • Stir into cremed mixture.
  • Stir in nuts.
  • Shape dough into two 9-inch rolls.
  • Wrap in waxed paper or clear plastic wrap.
  • Chill well.
  • Cut into 1/4-inch slices; place on ungreased cookie sheet.
  • Lightly press a well-drained red cherry half into center of each cookie.
