CHICKEN A LA CREME



Chicken a La Creme image

This is a family favorite. It is a very versital recipe. We have eaten this over noodles, rice and veggies. We have also eaten it plain and used french bread to soak up the broth. I have also added mushrooms to this to make it a bit "different". I've also used fresh garlic and onions for a change. You can also replace olive oil for some of the butter.

1/4 cup butter
1 1/2 lbs chicken tenderloins (cut in chunks) or 1 1/2 lbs bonesless chicken breasts (cut in chunks)
seasoning salt
pepper
garlic powder
1 pint heavy cream
1 tablespoon cornstarch

Steps:

  • Melt half of the butter in skillet.
  • Season chicken with salt, garlic powder and pepper.
  • Cook in butter until golden on all sides, about 10 minutes.
  • Add the remaining butter and cook for 5 more minutes.
  • Pour cream into skillet, and simmer for 5 minutes, stirring occasionally,
  • Cook until chicken is done.
  • If needed, add a tablespoon of cornstarch to thicken up the sauce.
  • Add more garlic and pepper to sauce if needed.

Really quick to make if you're in a hurry. Good, too. The original recipe called for cream of mushroom soup, but I prefer cream of celery. Your choice.

2 tablespoons butter or 2 tablespoons margarine
1/4 cup green pepper, chopped
1 tablespoon all-purpose flour
1 cup milk
1 (10 ounce) can cream of celery soup
1/2 cup frozen green pea (or mixed vegetables)
2 cups chicken, diced (or turkey)
1/4 cup chopped pimiento (optional)
salt and pepper, to taste

Steps:

  • In a medium saucepan, saute green pepper in butter/margarine till tender.
  • Remove green pepper.
  • Blend in flour, then slowly stir in milk.
  • Add soup and heat slowly, stirring constantly.
  • Add vegetables, chicken or turkey, and green pepper.
  • Cook on low heat about 10 minutes longer.
  • Season with salt and pepper, to taste.
  • Serve on patty shells, toast, rice or noodles.

1 lb veal scallops (pounded thin) or 1 lb boneless skinless chicken breast (pounded thin)
flour
salt and pepper
3 tablespoons olive oil
3 cloves garlic (minced/crushed)
1/2 cup dry white wine
1/2 cup chicken broth
3 tablespoons capers (optional)
1 lemon, peeled with pith removed,sliced thin
2 tablespoons butter
4 tablespoons fresh parsley (optional)

Steps:

  • Dust veal/chicken with flour.
  • Season with salt/pepper.
  • Saute in oil until lightly browned (2-3 minutes).
  • Remove meat from pan and keep warm.
  • Add garlic, saute 1 minute.
  • Add broth and wine, bring to a boil.
  • Reduce to 1/3 cup.
  • Stir in capers and lemon slices.
  • Return to boil and add butter and parsley.
  • Add meat back to pan and warm through.
  • Serve with pasta or rice-garnish with parsley and lemon slices if desired.

My dad used to make this when I was a kid and I always loved it. It's easy and uses things I usually have on hand. Serve over toast points, rice, or noodles.

Number Of Ingredients 13

1/2 cup butter, plus
1 teaspoon butter
1 small onion, finely diced
6 ounces fresh mushrooms, quartered
1/2 cup flour
1/4 teaspoon black pepper
2 tablespoons sherry wine
2 cups chicken broth
2 cups diced cooked chicken breasts
1 (4 ounce) jar diced pimentos
1 cup frozen peas
1 cup milk
salt, to taste

Steps:

  • Sauté mushrooms in 1 tbsp butter until done and set aside.
  • Melt remaining 1/2 cup butter in large sauce pan and cook onion until softened. Stir in flour and cook for 1 minute to make a rue.
  • Whisk in broth and bring to a simmer. Add chicken, pimentos, peas, salt & pepper, sherry and mushrooms with any accumulated juices. Let simmer, stirring frequently, until somewhat thickened.
  • Stir in milk and serve over toast points, rice or egg noodles.
  • Enjoy!
