6 eggs
1 1/2 cups 4-percent-fat cottage cheese (small or large curd, or California-style)
1 cup plus 2 tablespoons sour cream
3/4 cup sugar
2 1/4 cups whole milk
3/4 cup raisins
6 tablespoons butter, melted
2 1/4 teaspoons vanilla extract
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
1 tablespoon salt
18 ounces wide, preferably flat egg noodles
Topping
1 cup coarsely crushed corn flakes
2 tablespoons butter, melted
2 teaspoons ground cinnamon

Steps:

  • To make the kugel, in the bowl of a food processor fitted with the metal blade, whirl together the eggs. Add the cottage cheese, sour cream, and sugar. Process until smooth. Pour into a large bowl and stir in the milk, raisins, melted butter, vanilla, and orange and lemon zests.
  • In a large pot, bring at least 5 quarts of water to a boil over high heat, salt, and cook the noodles until just before they are fully cooked, about 5 minutes, but check package directions for exact timing. Drain and stir the noodles into the egg-cheese mixture, then refrigerate, tightly covered, overnight. (I think this step of preparing ahead was mainly for convenience. I have baked the pudding immediately, and it turns out lighter; the noodles don't absorb as much of the custard.
  • Lightly butter a 9- by 13-inch baking dish. Preheat the oven to 350° F.
  • To make the topping, toss together the corn flakes, melted butter, and cinnamon in a small bowl. To bake the kugel, pour the noodle mixture into the baking dish and sprinkle evenly with the topping. Bake for 35 to 40 minutes, until lightly browned. Let stand at least 10 minutes before serving.

1 (16 ounce) package egg noodles
½ cup margarine
4 eggs, beaten
1 cup white sugar
1 ½ cups applesauce
1 teaspoon vanilla extract
ground cinnamon, for dusting

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place noodles in a large bowl. Mix margarine into the noodles until melted. Stir in the eggs, sugar, applesauce, and vanilla extract. Pour noodle mixture into a 9x13 inch baking pan, then sprinkle with cinnamon. Cover baking pan with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Uncover the kugel and bake until golden brown, 20 to 30 minutes.

This is the style of kugel we'd get in a New York City area Jewish deli, and that my relatives would make for holidays. There seems to be endless variations of this noodle pudding now, but for me this is the authentic original version. Refrigerate leftovers.

2 cups small curd cottage cheese
1 ½ cups sour cream
½ cup white sugar
½ cup raisins
3 large eggs, beaten
½ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cottage cheese, sour cream, sugar, raisins, eggs, salt, cinnamon, and nutmeg together in a large bowl. Mix in cooked noodles. Pour into the prepared baking dish.
  • Bake, uncovered, in the preheated oven, until golden brown on top, about 40 minutes.

1 teaspoon salt
1 1/2 cup wide noodles
1 egg
3 tablespoons sugar
1 tablespoon butter or margarine
1/4 teaspoon cinnamon

1 1/8 cups cottage cheese (optional)
3/8 cup sour cream (optional)

Steps:

  • Preheat oven to 350°F. Place water in a saucepan with salt and bring to boil. Add noodles and cook for 10 minutes. Drain and place in mixing bowl. Add egg, sugar, butter or margarine, cinnamon, raisins and salt. If you wish, add cottage cheese and sour cream. Blend well. Pour into a greased casserole. Bake in 350°F oven for 30 minutes.

1 cup raisins
sherry wine or orange juice
1 lb egg noodles
6 tablespoons unsalted butter, cut into pieces, more for pan
4 large eggs
3 cups cottage cheese
1 cup sour cream
1/3 cup sugar
1 teaspoon ground cinnamon
1 lemon, zest of, grated
1 pinch salt

Steps:

  • Put raisins in a micro-wave safe bowl or small saucepan and cover with sherry or orange juice. Heat on stove top (3 minutes) or microwave (1 1/2 minutes) until liquid is steaming hot. Let cool while you prepare kugel mixture.
  • Preheat oven to 400 degrees F. Butter an 11 x 17 inch jellyroll pan. Cook noodles according to package directions and drain well. Immediately return noodles to pot and add butter. Toss until butter melts.
  • In large bowl, whisk together the eggs, cottage cheese, sour cream, sugar, cinnamon, lemon zest and salt. Drain raisins and add to bowl along with butter noodles. Mix well.
  • Spread mixture in prepared pan and smooth top. Bake until top is crusty and golden, 25 to 35 minutes. Serve warm or at room temperature.

8 ounces wide egg noodles, uncooked (do not increase the amount stated use only 8 ounces)
1 1/2 cups raisins (or use any dried fruit of choice)
5 large eggs
1 cup sour cream
1/3 cup melted butter
2/3 cup sugar (if your prefer a sweeter kugel then increase amount to taste)
1 -2 teaspoon cinnamon
1/8 teaspoon salt
1 quart full-fat milk (4 cups)

Steps:

  • Butter a 13 x 9-inch baking pan.
  • Spread the UNCOOKED egg noodles and raisins or dried fruit into the pan.
  • In a bowl in whisk the eggs with sour cream until very smooth, then whisk in melted butter, sugar, cinnamon and salt; whisk vigorously until well combined and no sugar granules remain (mix in order stated starting with eggs and sour cream).
  • Whisk in the milk until combined (at this point you may add in more sugar if desired).
  • Pour the mixture over the dry noodles and mix very lightly (your pan will be very full).
  • Allow to sit out for 5-7 minutes.
  • Set oven to 350 degrees F.
  • Bake for about 50-60 minutes or until the kugel is just set in the middle.
  • Serve warm, cold or at room temperature.
