Ancho chiles are poblano peppers that have been dried until their skins are dark and wrinkly. Their flavor is fruity and slightly spicy, and they form the basis of the seasoning for these chicken adobo tacos. Served next to traditional Mexican street corn with a creamy Cotija cheese topping, these traditional Mexican flavors are guaranteed to heat up your dinner.

2 Ears of Corn
2 Boneless Skinless Chicken Breasts
8 fl. oz. Tomato Sauce
2 Limes

3 oz. Shredded Red Cabbage

1 Tbsp. Adobo Seasoning

Steps:

  • Before You Cook Turn oven on to 400 degrees. Let preheat, at least 10 minutes If using any fresh produce, thoroughly rinse and pat dry Prepare a baking sheet with foil and cooking spray Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Shuck corn and rinse. Zest one lime, halve, and juice. Quarter second lime. Combine shredded cabbage, 1 tsp. olive oil, 2 tsp. lime juice, 1/2 tsp. salt, and a pinch of pepper in a medium mixing bowl. Mix together thoroughly and refrigerate until ready to plate. Rinse chicken breasts, pat dry, and season both sides with a pinch of pepper. 2 Sear the Chicken Heat 2 tsp. olive oil in a medium pan over medium-high heat. Place chicken in hot pan and cook 4-5 minutes per side, or until browned. Transfer to one half of prepared baking sheet (no need to wipe pan clean). 3 Finish the Chicken and Roast Corn Place ears of corn on other half of prepared baking sheet and coat each ear with 1/4 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Bake 8-12 minutes, or until chicken is golden brown, reaches a minimum internal temperature of 165 degrees, and corn is tender. Remove from oven and let chicken rest 5 minutes. 4 Make the Sauce In same pan used to sear chicken, combine tomato sauce, half the seasoning, and 1/2 cup water over medium-high heat. Bring to a simmer and cook 5 minutes, or until sauce thickens slightly. Using two forks, shred chicken into bite-sized pieces and add to pan. Alternatively, chicken can be sliced into bite-sized pieces. Cook 2 minutes and remove pan from burner. Taste sauce, and add remaining seasoning (reserve a pinch for garnish) if more heat is desired. 5 Warm the Tortillas Stack tortillas and wrap with foil. Place wrapped tortillas in oven 5-7 minutes, or until warm and pliable. Remove from oven and keep wrapped until ready to plate. 6 Plate the Dish Place a serving of cooked chicken in three tortillas and place on a plate. Garnish tacos with cabbage, half the sour cream, and lime zest. Add an ear of corn to the plate and garnish with remaining sour cream, remaining seasoning (to taste), and Cotija cheese. Serve with two lime wedges.

For good tacos, you need fresh, hot tortillas and a zesty filling. Canned chipotle chiles will do the trick with their smoky heat; it's an easy way to get flavor fast. Look for small cans with "chipotle chiles in adobo" on the label. And Mexican groceries generally have better-quality tortillas than the ones you find in supermarkets; it's worth seeking those out and heating them gently over steam, or by toasting them in a dry cast-iron pan. You can also use this recipe with precooked chicken, which makes this already quite simple recipe as easy as falling out of bed.

4 large bone-in chicken thighs, about 1 1/2 pounds
3 scallions, left whole
1 bay leaf
1 thyme branch
3 black peppercorns
1 allspice berry
2 cloves
Kosher salt
3 tablespoons olive oil
1 medium yellow onion, finely diced
2 garlic cloves, minced
1/2 teaspoon ground cumin
2 or 3 chipotle chiles in adobo, chopped
3 tablespoons adobo sauce, from the can
1/2 cup broth (use broth from simmered chicken)
8 fresh corn tortillas
1 small white onion, finely chopped, soaked in ice water for 10 minutes and drained
Thinly sliced serrano chile
Thinly sliced radishes
Sliced avocado
Crumbled queso fresco or mild feta cheese
Crème fraîche or Mexican crema
Cilantro sprigs
Dried oregano
Lime wedges

Steps:

  • Put chicken thighs in a saucepan and cover with 3 cups water. Add scallions, bay leaf, thyme, peppercorns, allspice, cloves and 1/2 teaspoon kosher salt. Simmer for 30 minutes, then remove chicken and cool. Shred chicken with your fingers, discarding chicken skin and bone. Strain broth and reserve. You should have about 2 cups shredded chicken.
  • Put olive oil in a skillet over medium heat. Add diced yellow onion, season with salt and cook until softened and a bit browned, about 5 minutes. Add garlic and cumin and cook for 1 minute more. Add chopped chipotle chile and adobo sauce and stir to combine. Add shredded chicken, salt lightly and stir to coat. Add chicken broth and simmer for 2 or 3 minutes, until sauce has thickened somewhat. Keep warm.
  • Heat the tortillas over steam or by your favorite method, keeping them soft and pliable.
  • Build the tacos quickly: Put a spoonful of the saucy chicken in the center of each tortilla. Top with a teaspoon of chopped white onion, a few slivers of serrano chile, some radish and avocado slices, a teaspoon of queso fresco and a teaspoon of crème fraîche. Add a few cilantro springs and a small pinch of oregano. Serve immediately with lime wedges on the side.

There are countless ways to make chicken tacos, but these adobo tacos are flavorful and easy enough for a weeknight. You can make the marinade ahead of time, and even freeze it! Then just marinate your chicken in the adobo paste and cook until juicy. Delicious!

4 dried ancho chiles ((about 2 ounces), wiped clean, stemmed, and seeded)
4 dried guajillo chiles ((about 1 ounce), wiped clean, stemmed, and seeded)
½ cup water (plus more for soaking the chiles)
1 tablespoon finely chopped peeled ginger
1 ½ teaspoons kosher salt (plus more as needed)
¾ teaspoon ground cumin
¼ teaspoon freshly ground black pepper
2 pounds chicken tenders, cutlets, or boneless, skinless thighs
About 2 tablespoons vegetable oil
Warm corn or flour tortillas
Diced avocado (optional)
Salsa (optional)
Sour cream or Mexican crema (optional)
Chopped fresh cilantro leaves (optional)
Lime wedges (optional)
Finely chopped white onion (optional)

Steps:

  • Combine the chiles in a large bowl and add enough water to cover them (I use hot but not boiling water). Soak the chiles until they're soft, about 30 minutes. Drain and discard the soaking water.
  • Place the drained chiles in a blender. Add the ½ cup water, ginger, salt, cumin, and pepper and blend until smooth, stopping and scraping down the pitcher with a rubber spatula as needed, about 1 minute. (The mixture will be thick-don't add extra water.) You will yield about 1 cup of chile purée.
  • Put the chicken in a bowl, add ½ cup of the chile puree (the rest can be refrigerated for a week or frozen for a few months to make another batch of tacos in the future), and rub it onto the chicken until the meat is well coated. At this point you can cook the chicken right away, or cover and refrigerate it for up to 24 hours.
  • Preheat a grill, griddle, or large skillet over medium heat. Add just enough oil to add a thin sheen to the grill grates or pan. Season the chile-slathered breasts with salt and cook, in batches if necessary, until they're well browned on both sides and just cooked through, turning them over once, 8 to 10 minutes per batch. Let the chicken rest for a few minutes, then slice or dice it for tacos, and serve with the tortillas and your choice of garnishes.

1 1/2 tablespoons goya adobo seasoning
1 (1 teaspoon) package sazon goya
3 -4 chicken breasts
1 limes, juice of or 1/2 tablespoon lime juice
1 tablespoon of goya sofrito sauce
0.5 (2 tablespoon) can tomato sauce
1/2 cup vegetable oil or 1/2 cup corn oil

Steps:

  • Adobo seasoning, sazon, and sofrito are items you should be able to find in your local food store. If not, try any Spanish store.
  • Boil 2 cups of water or enough to cover chicken breast. Add 1 large spoon of sofrito, 1 tbs of adobo, 1 pack of sazon and 3-4 chicken breasts and about 1/2 a lime or lime juice. Boil for about 45 minute or until chicken will be easy to shred.
  • Drain chicken breast and let it cool. Then start shredding chicken (I use my hands or 2 forks).
  • Put the shredded chicken back into the pot at medium heat and add about 1/2 cup of water, 1/2 can of tomato sauce, 1 teaspoon of adobo, 1/2 lime and stir. Keep adding a little adobo and lime to your liking of the taste. Let simmer for about 20 minutes or until most of the juice has evaporated.
  • Fried Tortillas:.
  • Use your favorite kind of corn tortillas (I like the white corn tortillas, they are easier to fry).
  • In a medium frying pan add 1/2 cup of oil (vegetable or corn oil).
  • Put 1 tortilla in a at a time, let it get hard on one side, then flip to other side and right before it gets hard, fold in half and remove from oil and let it drain.
  • Add your cheese, lettuce, tomato and other good stuff you like on your tacos. Enjoy!
