¼ cup minced fresh mint
⅓ cup white sugar

¼ teaspoon salt
⅛ teaspoon ground black pepper
3 dashes hot sauce, or to taste
2 avocados - peeled, pitted, and cubed

Steps:

  • Combine peaches, chicken, and cucumber in a large bowl.
  • Blend vinegar, mint, sugar, lemon juice, salt, pepper, and hot sauce in a blender until vinaigrette is smooth. Drizzle vinaigrette over peach mixture; toss to coat. Cover bowl with plastic wrap and refrigerate until chilled, at least 30 minutes. Fold avocado into salad before serving.

1 lb. boneless skinless chicken breast
salt & pepper to season
6 cups baby spinach
2 peaches, halved
1 teaspoon grape seed oil (avocado or canola would work too)
1/2 cup blueberries
1/4 cup sliced red onion
1/4 cup pecan halves
1 ounce crumbled goat cheese
basil, for garnish
1 tablespoon course ground mustard
1 tablespoon dijon mustard
1 tablespoon honey
1 tablespoon apple cider vinegar
salt & pepper

Steps:

  • Preheat grill to medium high heat.
  • Season chicken with salt and pepper on both sides.
  • Lightly brush peach flesh with grape seed oil.
  • Place chicken on grill grates and grill each side for 5-7 minutes, or until chicken is no longer pink. (depending on thickness)
  • Place peaches on grill grates flesh side down. Grill for 3-4 minutes, or until there are grill marks.
  • Remove both chicken and peaches from grill and let rest.
  • In the meantime, to a small bowl add course ground mustard, dijon mustard, honey, apple cider vinegar, salt and pepper. Whisk to mix everything together. Set aside.
  • Assemble Salad: to a large bowl add spinach, blueberries, red onion, goat cheese, pecans. Slice chicken and peaches and top the salad. Serve with dressing on the side.

Zest and juice of 1/2 lemon

1/4 cup lightly packed basil leaves, torn

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.

4 large ripe peaches , stoned
200g mangetout , thinly shredded lengthways
6 spring onions , very finely sliced
4 tbsp chopped fresh coriander
zest and juice of 2 limes
2 tbsp clear honey
2 tbsp freshly grated root ginger
2 tbsp soy sauce
6 tbsp sunflower oil
1 tbsp toasted sesame oil

2 tbsp balsamic vinegar
4 skinless, boneless chicken breasts fillets (about 500g/1lb 2oz total weight)
2 ripe peaches
100g baby spinach leaves
handful basil leaves

Steps:

  • Preheat the grill to medium and line the rack with foil. Measure 1 tbsp of the vinegar into a shallow dish with 1 tbsp olive oil and a good shake of salt and pepper. Add the chicken fillets and turn them in the dressing until they are well coated. Put the chicken in one layer on the foil-lined rack and grill for 10-12 minutes, then turn them and grill for a further 10-12 minutes until the chicken is cooked through, glossy and deep brown in colour.
  • Halve the peaches, remove the stones and slice fairly thickly. Spread the spinach leaves over a serving platter. Slice the cooked chicken and scatter it over the spinach leaves along with the peaches and half the basil leaves. Shred the remaining basil and mix in a small bowl with the remaining balsamic vinegar, 2 tbsp olive oil and some salt and pepper. Drizzle over the salad and serve.

I found it in the "Healthy Eating" book put out by "The Australian Women's Weekly". I appreciated that the recipe was for one person but I am sure it can be easily scaled up.

200ml vegetable stock , made with freshly boiled water
125g bulgur wheat
meat from a roughly 900g ready-roasted smoked or unsmoked whole chicken (about 550g ready-roasted chicken breasts), not too fridge-cold
2 ripe yellow-fleshed peaches
25g pack mint
25g pack dill
handful basil (optional)
50g toasted pecan halves, some left whole
100g feta cheese , crumbled
zest and juice 2 limes (about 4 tbsp juice)
1 tsp rice vinegar (or use white wine vinegar and a pinch of sugar)
3 tbsp mild olive oil
1 garlic clove , crushed
1 tsp golden caster sugar
1 heaped tsp wholegrain mustard

Steps:

  • Pour the boiling-hot stock over the bulgur in a large bowl. Cover with cling film and set aside for 15-20 mins until the stock has been totally absorbed and the grains are tender.
  • Meanwhile, slice or tear the chicken into bite-sized pieces, and cut each peach into 12 wedges. Whisk the dressing ingredients together with some seasoning.
  • When the bulgur looks dry and has swollen up in the bowl, remove the cling film. Fluff it up with a fork and let cool.
  • Roughly chop the herbs just before serving, then toss into the bulgur. Spread over a large platter, then top with the chicken, peaches, pecans and feta. Roughly toss everything together a little. Drizzle over the dressing to serve.
