ARTICHOKE RISOTTO

Categories     side-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 14

1/4 cup extra-virgin olive oil
One 9-ounce package frozen artichoke hearts, cut into bite-size wedges
1 tablespoon unsalted butter
1 large or 2 small shallots, minced
1 cup Arborio rice
1 teaspoon salt
1 cup dry white wine, room temperature
3 1/2 cups low-sodium chicken broth, warmed
1/2 cup frozen peas, thawed
1/2 cup crumbled feta cheese (3 ounces)
1/4 cup finely chopped chives
1/4 cup chopped fresh mint
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh lemon juice (from 1/2 small lemon)

Steps:

  • Heat 2 tablespoons of the olive oil in a medium saucepan over high heat. Add the artichoke hearts and reduce the heat to medium high. Cook, stirring occasionally, for about 10 minutes, or until the hearts are beginning to brown. Remove to a plate and set aside.
  • To the same pan, add the remaining 2 tablespoons olive oil, the butter and the shallots and cook for 1 minute, stirring regularly. Add the rice and salt and stir with a wooden spoon to coat all the kernels with oil. Continue to cook for 3 minutes, or until the rice is sizzling. Add the wine and cook, stirring, until it is almost completely absorbed. Now begin adding the chicken broth, one cup at a time, stirring frequently between additions. After the first cup is almost entirely absorbed, add the next cup. Continue in this way until the rice is cooked through and you have a creamy risotto, about 20 minutes in all. (The risotto should be slightly loose, not dry; it should run off your spoon. If it gets too dry, add a bit more broth.) Stir in the peas, feta, chives, mint and black pepper. Gently stir in the artichoke hearts and the lemon juice. Serve.

Time 45m

Number Of Ingredients 11

¼ cup all-purpose flour
½ teaspoon salt
¼ teaspoon pepper
1 teaspoon chopped fresh parsley
½ teaspoon dried dill weed
¼ cup butter, divided
4 boneless, skinless chicken breast halves
1 pound fresh mushrooms
1 onion, sliced into rings
½ cup white wine
8 ounces Gruyere cheese, shredded

Steps:

Transfer chicken breasts to a 1 quart glass baking dish. Add remaining butter to skillet, and fry the mushrooms and onion until wilted and lightly browned. Stir in the white wine, and reduce heat to medium. Simmer for 3 minutes to blend flavors. Pour the mushroom mixture over the chicken in the dish.
  • Cover dish, and bake for 20 minutes in the preheated oven. After 20 minutes, remove cover, and sprinkle with shredded cheese. Continue baking for 10 more minutes, or until cheese is lightly browned and bubbly.

Chicken-Artichoke Risotto With Gruyere Cheese image

ReciMeals are designed to be complete meals that need only be accompanied by a beverage, and sometimes a side salad or slice of bread. A ReciMeal provides significant amounts of at least three of the five MyPyramid food groups: about 1/2 cup of fruits, 1/2 cup of vegetables, 1 ounce equivalent of grain foods, 2 ounces or the equivalent of lean meat or beans or 1 cup or the equivalent of milk per recipe serving. As a convenient one-dish meal, this elegant dish can be an easy pantry meal on its own, or deliciously accompanied by a garden salad with crusty bread. Made with protein-rich canned chicken, it's just as delicious with canned turkey or crabmeat.

RISOTTO WITH ARTICHOKES AND GOAT CHEESE

Risotto with Artichokes And Goat Cheese image

Provided by Florence Fabricant

Categories     dinner, lunch, one pot, appetizer, main course

Time 1h15m

Yield 4 servings

Number Of Ingredients 12

2 lemons
4 large artichokes
3 tablespoons olive oil
1 medium onion, chopped
2 cloves garlic, minced
1/2 cup dry white wine
1 cup arborio rice
3 1/2 cups simmering chicken stock
2 sun-dried tomatoes, finely minced
Salt and freshly ground pepper to taste
4 ounces goat cheese, crumbled
2 tablespoons minced Italian parsley

Steps:

  • Squeeze the lemons into a bowl and add 2 cups of water.
  • Trim the artichokes down to the fleshy bottoms by slicing off the stem, pulling off all the leaves and cutting away the fuzzy choke. Trim the artichoke bottom. Dice the bottoms as they are trimmed and place in the bowl of lemon-water.
  • Heat the oil in a heavy saucepan. Add the onion, saute until it begins to color and stir in the garlic. Drain the artichokes and add them. Stir in the wine. Cover the saucepan and cook until the artichokes are nearly tender, about 10 minutes.
  • Stir in the rice, then add 1/2 cup of the stock. Stir. Continue adding stock, 1/2 cup at a time as each portion is absorbed. Adjust heat so the mixture simmers gently. Stir from time to time as the stock is added. After about 20 minutes all or nearly all the stock should have been added and the rice should be firm but tender, without a hard white center in the grain.
  • Add the sun-dried tomatoes. Season to taste with salt and pepper. Remove from heat, fold in the cheese and parsley and serve.

RISOTTO WITH ARTICHOKE HEARTS

Risotto With Artichoke Hearts image

Provided by Florence Fabricant

Categories     dinner, one pot, side dish

Time 1h

Yield 4 to 6 servings

Number Of Ingredients 11

4 large artichokes
Juice of 1 lemon
Water
3 tablespoons extra-virgin olive oil
1/2 finely chopped red onion
2 cloves garlic, minced
1 1/2 cups arborio rice
5 cups hot chicken stock
Salt and freshly ground black pepper
3 tablespoons minced fresh parsley
Freshly grated Parmesan cheese

Steps:

  • Trim each of the artichokes. First slice off the stem flush with the base. Tear off all the heavy outer leaves, then the inner ones until the thick, fleshy bottom is exposed. By this time there should be a small pointed cluster of leaves left. Cut through the leaves and the bottom vertically to quarter it, then cut away the remaining leaves and the fuzzy choke, leaving the round, solid bottom pieces. Cut the quarters of the bottom in narrow wedges and place in a bowl of lemon juice mixed with water to prevent browning while you prepare the rest of the artichokes.
  • Heat the oil in a large, heavy saucepan. Add the onion, saute over medium heat for about five minutes, then stir in the garlic. Dry the artichoke pieces on a paper towel, add them to the saucepan and saute, stirring, another two to three minutes. Stir in the rice.
  • Keep the chicken stock at a simmer and add it to the rice about one-half cup at a time. Slowly stir the rice, adding more stock as it is absorbed. Regulate the heat so the mixture simmers. Continue adding stock and stirring until the rice is just tender and all the stock has been absorbed, about 20 minutes.
  • Season to taste with salt and pepper. Fold in the parsley and serve with Parmesan cheese on the side.

CHICKEN DIVAN CRêPES WITH GRUYèRE

Chicken Divan Crêpes with Gruyère image

Aunt Joan. Crystal's aunt oozed charm and elegance. She always wore just the right dress or scarf. She was rarely without beautiful makeup and glam sunglasses. Her table was always set perfectly, and it was filled with foods that, for her young nieces, seemed exotic but tasty and comforting at the same time. The young ladies in Crystal's family all grew up aspiring to be as lovely and sophisticated as Aunt Joan. We have modified Aunt Joan's recipe for chicken divan by using it as a filling for crêpes. This recipe honors the beautiful and loving woman who graced so many lives and created so many special meals. Enjoy!

Yield makes 10 servings

Number Of Ingredients 23

1 head of broccoli, cut into florets, or 1 (10-ounce) package frozen chopped broccoli, defrosted and drained well
1 (3-pound) roasted chicken, boned and shredded (see page 204)
1 (10 3/4-ounce) can cream of mushroom soup, or 1 1/2 cups homemade Cream of Mushroom Soup (page 203)
8 ounces Gruyère cheese, grated (2 cups)
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup dry white wine
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon curry powder
Salt and freshly ground black pepper
1 (4.5-ounce) package prepared crêpes (10 crêpes), or homemade (recipe follows)
Cooking spray
1 cup grated Parmesan cheese (4 ounces)
1/2 cup seasoned bread crumbs (see page 196)
2 tablespoons unsalted butter, melted
1 1/2 cups all-purpose flour
3 large eggs
1 1/2 cups whole milk
1/2 teaspoon salt
1/8 teaspoon curry powder (optional)
4 tablespoons (1/2 stick) unsalted butter, melted
Cooking spray
(makes 10 to 12 crepes)

Steps:

  • Preheat the oven to 350°F.
  • If working with fresh broccoli, steam the florets for 3 to 5 minutes. Drain well and put broccoli into a large mixing bowl. Add the chicken to the bowl, stir well, and set aside.
  • In a large bowl, combine the soup, cheese, mayonnaise, sour cream, wine, lemon juice, curry powder, salt, and pepper. Add half the soup mixture to the broccoli and chicken and stir well.
  • Lay the crêpes on a cutting board. Divide the chicken filling among the 10 crêpes, then roll them up. Lightly coat two 9 x 13-inch casserole dishes with cooking spray. Divide the crêpes between the two casserole dishes, placing the crêpes seem side down. Spread the remaining soup mixture over the crêpes. Combine the Parmesan, bread crumbs, and butter in a small bowl, and sprinkle over the tops of the crêpes. Bake until bubbly, 25 to 30 minutes.
  • In a large bowl, whisk together the flour and the eggs. Add the milk and whisk together. Add the salt, curry powder, and butter; whisk until smooth.
  • Lightly grease a medium skillet with cooking spray and set over medium-high heat. Pour 1/4 cup of the batter into the pan. Working quickly, tilt the pan in all directions to coat the entire bottom surface of the pan with the batter. Let the crêpe cook until lightly browned, about 2 minutes. Flip the crêpe and cook the second side until lightly browned, about 1 more minute. Repeat with the remaining batter.
