I created this recipe to try to duplicate some appetizers I had last summer from Stew Leonard's famous dairy retail store in Connecticut. They are great as appetizers or as a fun food for kids. I love to make them with bread crumbs seasoned with Parmesan cheese. Enjoy!

9 ounces ground chicken
¼ cup cooked, diced ham
1 egg
½ cup bread crumbs
8 ounces Swiss cheese, cut into 1/2 inch cubes
canola oil for pan-frying

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the chicken, ham, and egg in a large bowl until well blended. Gradually add bread crumbs until the mixture loses its stickiness and can be easily formed into balls.
  • Form the chicken mixture around the cheese cubes, forming 2 inch balls. Place on a plate.
  • Heat 1 1/2 inches of oil in a deep skillet to 350 degrees F (175 degrees C). Fry the balls until the outsides are golden brown, about 4 minutes. Drain on paper towels, and place in baking dish.
  • Bake in preheated oven until cooked through and cheese is soft, about 20 minutes. Cool briefly before serving.

1 cup flour

2 eggs lightly beaten
4 very thin slices smoked ham
2 cups bread crumbs
6 ounces Lorraine Swiss cheese, cut into four chunks

Steps:

  • Preheat oven to 375 degrees. Melt butter in glass baking dish.
  • Lightly flatten chicken breasts between plastic wrap with mallet. Lay 1 slice of ham and 1 piece of cheese on flattened breast, fold in half and seal close with toothpicks. Repeat process for remaining chicken breasts.
  • Coat each piece with flour, then eggs and then bread crumbs. Place chicken pieces in glass baking dish. Turn to coat with butter.
  • Bake for 40-45 minutes or until golden brown. Serve with parselyed rice and steamed broccoli.

4 boneless, skinless chicken breasts
salt, to taste
pepper, to taste
1 tablespoon garlic powder
1 tablespoon onion powder
16 slices swiss cheese
½ lb ham, thinly sliced
peanut oil, or vegetable oil, for frying
1 cup all-purpose flour
4 eggs, beaten
2 cups panko bread crumbs
3 tablespoons butter
2 cloves garlic, minced
3 tablespoons all-purpose flour
2 cups milk
¼ cup dijon mustard
1 cup shredded parmesan cheese
salt, to taste
pepper, to taste

Steps:

  • Sprinkle the chicken breasts with salt, pepper, garlic powder, and onion powder, tossing to coat evenly.
  • On a cutting board, place a chicken breast between two sheets of plastic wrap and pound until about ½ inch (1 cm) thick with a meat mallet, rolling pin, or heavy pan.
  • Remove the plastic wrap and place 2 slices of Swiss cheese, then 2 slices of ham, then another layer of Swiss cheese, and another layer of ham. Evenly roll the chicken and place onto a new sheet of plastic wrap.
  • Wrap the chicken in the plastic wrap tightly and use the excess plastic on the sides to twist, firming up the roll of chicken cordon bleu as you work. Tie the excess plastic. Repeat with the remaining ingredients, then chill the rolls in the fridge to set for 30 minutes.
  • Meanwhile, preheat a tall-sided pan with 2 inches (5 cm) of oil to 325°F (170°C).
  • After the rolls are set, prepare 2 separate large, wide dishes with the flour, beaten egg, and bread crumbs. Dredge the chicken first in the flour, then the egg, and then bread crumbs.
  • Place the breaded chicken cordon bleu in the oil and cook for about 5 minutes per side, or until the outside is an even golden brown. If a good color is achieved and the chicken's center is still not 165°F (75°C), place the chicken cordon bleu on a wire rack set over a baking sheet and finish the chicken in the oven at 325°F (170°C) until that temperature is reached.
  • Meanwhile, prepare the sauce. In a 1 ½-quart saucepan over medium heat, melt the butter and cook the garlic until soft. Add the flour and whisk for 1 minute.
  • Add the milk and whisk until fully combined with the roux and no lumps remain. Continue whisking until the mixture comes to a simmer and has thickened.
  • Add the mustard, Parmesan cheese, salt, and pepper and whisk to combine. Remove the pan from the heat.
  • Slice the chicken and serve drizzled with Dijon sauce.

3 whole eggs
3/4 cup milk
1 cup Gold Medal™ unbleached or all-purpose flour
1/2 teaspoon granulated sugar
Vegetable oil
Fresh parsley sprigs, if desired
1 1/2 cups cooked cubed chicken breast
1 cup cooked cubed ham
1 cup shredded Swiss or Gruyère cheese (4 oz)
3 egg yolks
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/2 cup unsalted butter, cut into pieces*

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In large bowl, beat eggs and milk with whisk until well combined. Add flour, 1/2 cup at a time, and sugar, stirring with whisk until no lumps remain and batter is slightly thinner than pancake batter. (If batter is too thick, add more milk; if too thin, add more flour.)
  • Heat 6- to 8-inch skillet over medium heat. Add 1/2 teaspoon oil and rotate to coat bottom of skillet. For each crepe, pour slightly less than 1/4 cup batter into skillet. Immediately tilt and rotate skillet so thin layer of batter covers bottom. Cook until light brown and edges start to curl up, about 2 minutes. Run wide spatula around edge to loosen; turn and cook other side until light brown. Repeat with remaining batter, adding oil to skillet as needed. Stack crepes, placing waxed paper between; keep covered.
  • In medium bowl, toss chicken, ham and cheese. Divide filling among crepes; roll up. Place seam side down in baking dish. Bake uncovered 15 minutes or until warm.
  • Meanwhile, in 1 1/2-quart saucepan, vigorously stir egg yolks and lemon juice with wire whisk. Add salt and 1/4 cup of the butter. Heat over very low heat, stirring constantly with whisk, until butter is melted. Add remaining 1/4 cup butter. Continue stirring vigorously until butter is melted and sauce is thickened. (Be sure butter melts slowly so eggs have time to cook and the sauce thickens without curdling.) If sauce curdles (begins to separate), add about 1 tablespoon boiling water and beat vigorously with whisk until smooth.
  • To serve, place crepes on individual plates. Top with hollandaise sauce. Garnish with parsley. Serve immediately.

1/3 cup minced onions
1 cup + 4 Tbsp flour, divided
1-1/4 cup milk
2 tsp Dijon mustard
2 tsp salt
1/2 tsp black pepper
Pinch of smoked paprika
3 eggs, beaten
1-1/2 cups cornflake crumbs
Oil, for frying
~For the Sauce:
2 Tbsp butter
2-1/2 Tbsp flour
1 cup milk
1/2 cup chicken stock
2 cups grated Gruyère or Swiss cheese
1/2 tsp salt
Pinch of nutmeg

Steps:

  • ~To prepare the bites: * Place the chicken and ham into a medium-size bowl. * Melt the butter in a medium saucepan over medium-high heat. * Add the onions and sauté until translucent. * Stir in 4 Tbsp flour and cook for a minute. * Add the milk, mustard, salt, pepper, and paprika. * Stir and heat until the sauce begins to simmer and has thickened. * Fold the sauce into the bowl with the chicken and ham. * Spread the mixture out onto a baking sheet and refrigerate until cool and firm, about 30 minutes. ~While mixture is cooling, make the dipping sauce. * Melt the butter on medium-high heat in a medium saucepan. * Add the flour and stir for about a minute. * Add the milk and chicken stock and continue to stir while heating. * When the sauce has almost begun to simmer and has thickened, add the cheese, salt and nutmeg. * Stir until the cheese has melted and sauce is smooth. * Hold on very low heat until ready to serve, stirring occasionally. ~To bread and cook the bites: *Heat a deep fryer or Dutch oven with oil to 375°F. * Take the cooled mixture by rounded tablespoonfuls and roll into balls. * Place them on a clean baking sheet. * In separate shallow bowls, place 1 cup flour, eggs, and crumbs. * Coat the bites 4-6 at a time with flour and then dip and coat completely with egg. 4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Swiss cheese
4 slices cooked ham
½ cup seasoned bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11 inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4 inch thickness.
  • Sprinkle each piece of chicken on both sides with salt and pepper. Place 1 cheese slice and 1 ham slice on top of each breast. Roll up each breast, and secure with a toothpick. Place in baking dish, and sprinkle chicken evenly with bread crumbs.
