DORITO CHICKEN CASSEROLE
This Dorito Chicken Casserole is so simple to throw together and bake for dinner. Shredded chicken, cheese, black beans, and Tex-Mex flavors combine in this dish-all topped with crunchy Doritos.

Steps:
- Preheat the oven to 350°F.
- Crush chips in bag to make small pieces.
- Spray the bottom of a 9x13 baking pan with cooking spray.
- Cover the bottom of the pan with half of the crushed chips
- In a mixing bowl, mix all of the remaining ingredients except for the remaining chips.
- Fill the pan with the chicken mixture, and spread out evenly.
- Bake in oven for 20 minutes.
- Remove from the oven, and top with the remaining chips.
- Bake for 5 more minutes.

Steps:
- Bring saucepan of water and Creole seasoning to a boil; cook chicken in the seasoned boiling water until no longer pink in the center, 10 to 15 minutes. Drain and shred chicken.
- Preheat oven to 350 degrees F (175 degrees C).
- Mix mushroom soup, tomatoes with green chile peppers, and corn together in a bowl.
- Spread half the tortilla chips in the bottom of a 9x13-inch casserole dish; top with half the chicken, half the mushroom soup mixture, half the Mexican cheese blend. Repeat layering with the remaining ingredients.
- Bake in the preheated oven until casserole is bubbling and cheese is melted, about 30 minutes.

- In a bowl, combine the flour, salt, and pepper.
- Now, in another separate bowl, add the eggs.
- In yet another bowl, add the crushed Doritos.

- On a lined baking tray, place the coated pieces of chicken.
- Bake in the oven for 15 minutes.

This recipe was created after a couple of years of tweaking. I've successfully served it to people ranging in age from 6 to 60! My husband loves it so much that he insists I make it for him every week. It also keeps well as leftovers. One extra pound of ground chicken may be substituted for the ground pork.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Mix crushed tortilla chips, tomatoes, cream of chicken soup, green bell pepper, green chile peppers, 1/2 cup Cheddar cheese, and 1/2 cup pepperjack cheese together in a large bowl.
- Heat a large skillet over medium-high heat. Cook and stir ground pork in hot skillet until crumbly and no longer pink, about 10 minutes. Transfer pork to tortilla chips mixture, retaining drippings in the skillet.
- Cook and stir ground chicken in reserved drippings until crumbly and no longer pink, about 10 minutes. Transfer cooked chicken to the pork-tortilla chip mixture; mix well. Pour mixture into the prepared casserole dish; top with 1/2 cup Cheddar cheese and 1/2 cup pepperjack cheese.
- Bake in the preheated oven until casserole is bubbling and cheeses are melted, about 30 minutes. Allow casserole to cool 5 to 10 minutes before serving.

- Cut Chicken breasts into strips roughly fish finger sized
- Crush Cheesy doritos (or similar cheesy tortilla chips) in a bowl I get the children to do this part
- In a seperate bowl add a few good dollops of mayo and the milk and coat the chicken strips.
- Add the strips one by one to the crushed Dorito mix and coat well.
- Once coated pop onto a baking tray and pop into a pre heated oven at 190 and bake for rougly 12-15 minutes Till golden . time may vary on thickness of strips Remove from Oven and enjoy Goes nice with fries and garlic bread and garlic dip
