Steps:
- For the chicken: In a large pot, cover the chicken with water and add 1 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil and let simmer until cooked through, about 40 minutes. Let cool, then remove the chicken meat from the bones. Add the shredded chicken back to the broth and reserve.
- For the dumplings: Add the flour, baking powder and 1 teaspoon salt to a mixing bowl and mix well. Add the milk and egg and mix well with a fork. Bring the reserved chicken broth to a simmer. Drop the dough into the broth by the spoonful and simmer, covered, for 10 to 15 minutes. Add some roux and cook until the broth has thickened. Season with salt and pepper. Serve the chicken "n" dumplings covered with gravy.

- In a shallow bowl, mix 1/2 cup flour, salt and pepper. Add chicken, 1 piece at a time, and toss to coat; shake off excess. In a 6-qt. stockpot, heat oil over medium-high heat. Brown chicken in batches on all sides; remove from pan., Add onion, carrots and celery to same pan; cook and stir 6-8 minutes or until onion is tender. Add garlic; cook and stir 1 minute longer. Stir in 1/4 cup flour until blended. Gradually add stock, stirring constantly. Stir in wine, sugar, bay leaves and peppercorns. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, 20-25 minutes or until chicken juices run clear., For dumplings, in a bowl, whisk flour, baking powder and salt. In another bowl, whisk milk and melted butter until blended. Add to flour mixture; stir just until moistened (do not overmix). Drop by rounded tablespoonfuls onto a parchment-lined baking sheet; set aside., Remove chicken from stockpot; cool slightly. Discard bay leaves and skim fat from soup. Remove skin and bones from chicken and discard. Using 2 forks, coarsely shred meat into 1- to 1-1/2-in. pieces; return to soup. Cook, covered, on high until mixture reaches a simmer., Drop dumplings on top of simmering soup, a few at a time. Reduce heat to low; cook, covered, 15-18 minutes or until a toothpick inserted in center of dumplings comes out clean (do not lift cover while simmering). Gently stir in cream, parsley and thyme. - In a large bowl, sift flour, baking soda and salt. Cut in shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Divide dough in half and shape into balls. Wrap in plastic and refrigerate for 2 hours or overnight.
- Remove the skin from the breast, thigh and back of the chicken, but leave it on the legs and wings. Season chicken with seasoning salt, and place in a large stock pot. Pour in water. Add onion, celery and margarine. Bring to a boil, then reduce heat to simmer. Cook for about 1 1/2 hours, until chicken falls off the bone.
- On a lightly floured surface, roll one ball of dough to about 1/8 inch thick. Cut into 2 inch squares. Drop into simmering broth, and let cook for about 2 minutes. Stir gently to prevent sticking; add more water if needed. Season broth while dumplings are cooking with salt, pepper and poultry seasoning. Simmer for about 15 minutes, or until dumplings are cooked through.

- Place chicken in a Dutch oven. Add water, carrot, celery, onion, 3 sprigs of thyme, and bay leaf. Bring to a boil, cover, reduce heat to low, and simmer for 1 hour. Remove chicken from dutch oven and transfer to a bowl; set aside to cool.
- Increase heat and bring the stock to a simmer. Skim off any chicken fat that appears on top of the stock and reserve in a bowl. Combine 2 to 3 tablespoons of the reserved fat with flour in a small bowl; stir to make a paste, adding more flour if needed. Add the chicken fat and flour mixture to the stock. Reduce heat and simmer for 15 minutes.
- Remove chicken meat from the carcass and add to the stock. Season with salt, black pepper, and cayenne pepper to taste. Continue simmering for 10 to 15 minutes.
- Whisk creme fraiche, milk, 2 teaspoons of thyme leaves, and eggs together in a large bowl. Stir in self-rising flour until almost entirely incorporated; do not overmix.
- Scoop large dollops of dumpling mixture on top of the chicken stock. Increase heat slightly to medium-high. Cover and simmer until dumplings appear light and fluffy, and a toothpick inserted into the center comes out clean, 10 to 15 minutes. Serve garnish with thyme sprigs.

- Place chicken in a large pot. Add salt and pepper, a dash of cayenne, a bay leaf, and a handful of celery tops. Cover with water, and cook until done. Discard bay leaf. Add vegetables, and continue cooking until vegetables are nearly done.
- Meanwhile, make the dumplings. Mix together flour, 1/2 teaspoon salt, baking powder, chicken fat. Mix in enough water to make a stiff dough. Divide dough into three parts. Roll out, and cut into squares.
- Add 1/3 dumplings to simmering chicken, and cook 5 minutes. Add another third, and cook 5 minutes more. Add the remaining third, and cook 5 minutes longer. Serve.

- In a heavy pot with a lid place the chicken, onion, lemon, salt, pepper, water, bay leaf and thyme. Simmer all over low heat until tender, about 1 hour.
- Let chicken cool slightly in pot, then remove and take the meat off of the bones. Discard the bones and skin and skim excess fat off the broth if desired. Discard the onion, lemon and bay leaf. If desired, wash out pot well. Return broth and chicken pieces to the pot. Simmer over low heat while making the dumplings.
- To Make Dumplings: In a medium mixing bowl, cut shortening into the flour and salt. Stir in 1/4 cup water (more if needed) to form a soft dough. Roll out dough on a floured surface, with a rolling pin, until very thin. Cut into 1 inch wide strips using a pizza cutter or knife. Tear off 1 inch long pieces from these strips and drop into simmering broth and chicken meat. Simmer for 10 minutes with the lid off, then 10 minutes more with the lid on. Serve immediately.

- Place the chicken breasts into a large soup pot, cover with water, and sprinkle in the salt, black pepper, and sage. Bring to a boil over medium heat, then reduce heat and simmer until the chicken is no longer pink inside, about 30 minutes. Remove the chicken to a bowl, and let cool; shred chicken when cooled.
- While chicken is cooling, bring the chicken broth left in the pot back to a boil over medium heat, and stir in the celery, onion powder, and garlic powder. Reduce heat to a simmer, and cook until the celery is tender, about 20 minutes.
- Meanwhile, whisk 1 cup of all-purpose flour, the whole wheat flour, salt, and baking powder together in a mixing bowl. Stir in the cream to make a dough. Sprinkle a work surface with the remaining 1/4 cup of flour, and roll the dough out about 1/4-inch thick. Using a pizza cutter, cut the dough into 1 1/2 inch squares. Toss the dumplings in the flour on the work surface.
- Drop the dumplings, a few at a time, into the simmering broth. Stir frequently to keep them from sticking to the bottom; allow to simmer until the dumplings puff up and the broth thickens, about 30 minutes; stir in the cooked shredded chicken and parsley. Bring back to a boil, and serve hot in bowls.

This is my mom's recipe, one of the very few comfort foods I still insist on when we get together. I live in the south now and their version of Chix & dumplings is with noodles, blah! I double up the dumplings portion of this recipe, but that's because it's my favorite part and I could eat just them and be happy as a clam. I've tried making many other recipes, trying to cut out a couple of ingredients, but it is never as scrumptious. Make enough to have leftovers. Be gentle to the dumplings and they can survive another heating or 2. I've even frozen them before and some survived.

- Combine in a large dutch oven or covered pot, the skinned chicken, the chicken broth + 3 or more cups of hot water (enough to completely cover the chicken). Add celery, onion, parsley, bouillon cubes, salt and pepper.
- Cover and simmer for 1-1/2 hours (depending on the size of the pieces) or until tender enough to pull of the bone.
- Remove chicken and let stand until cool enough to handle. Pull meat off bones and add meat back to pot.
- If you want your broth to be gravy-like (recommended, but optional): this doesn't need to be exact:.
- For each cup of broth, blend 1 T flour and 3 T water or milk to form smooth paste.
- Gradually stir this into broth.
- Add carrots and return soup to a simmer.
- DUMPLINGS:.
- In a mixing bowl, sift flour, baking powder and salt together. Add parsley.
- With 2 knives, scissor fashion, cut in the shortening until it looks like very coarse corn meal.
- With fork, lightly mix in milk to form soft dough, stirring as little as possible. Be sure not to add too much milk so you can roll the dumplings into balls in your hands.
- Turn broth down to a simmer.
- Drop by tablespoon size or slightly larger, into the stew.
- Simmer 1 side of dumplings about 12 minutes, uncovered.
- Gently turn over with a spoon as many as possible and simmer another 15 minutes, COVERED.
- Serve immediately, being gentle with the dumplings.

- Boil the chicken in the water and bouillon cubes.
- You can use any combination of chicken parts, just be sure to use chicken with the skin on.
- When the chicken is done, remove it from the broth and chop the meat into bite sized pieces.
- Take 1 cup of the broth and add the egg and enough flour to make a stiff dough.
- Roll the dough out on a floured surface and cut into strips about 1x2inches.
- (dough should be about 1/8th of an inch thick).
- Drop the strips into the remaining broth (it should be boiling first).

- Place chicken, celery, onion, parsley, parsnips in a large Dutch oven and cover with water.
- Bring to a boil and lower heat to medium low, just hot enough to maintain a slow simmer.
- When chicken is tender, remove the chicken to a bowl.
- Whisk the flour into about 1/2 cup of the chicken broth from the pot.
- When smooth, return to the pot, stir and heat to thicken.
- Add seasoning salt to your taste.
- When the gravy tastes just right, return the chicken and add the frozen vegetables to the pot.
- Prepare the dumplings: Sift flour, baking powder, and salt together.
- Stir in parsley, chives; thyme and marjoram if you're using them.
- Beat the milk and egg together and add to the dry ingredients.
- Stir with a fork just until mixed.
- Don't beat or handle too much.
- Bring chicken and gravy to a simmer.
- Drop heaping tablespoons of the dumpling batter all over the surface of the stew.
- Replace cover and steam for about 10 minutes.
- If you have more batter than you have room, make a second batch.
- Don't overcrowd the dumplings.

This recipe has been a family staple for years. No biscuit mix or dough balls here! There are a large # of steps listed- don't let that scare you!! I tried to be very specific so that even a beginner had their questions answered.

- Season chicken with salt and pepper to taste. Place whole chicken in large pot and cover with water. Boil approximately 1 - 1 1/2 hrs or until cooked through.
- Once chicken is cooked through remove chicken and place on large platter to cool. Leave remaining broth in pot on a low simmer.
- While chicken is cooling prepare dumplings.
- To Prepare Dumplings:.
- Add all dry ingredients to a large mixing bowl and mix together well.
- In a separate bowl, add 1 cup of broth and 1 tbsp shortening and let melt together and cool.
- Take egg and whisk before adding to cooled broth mixture.
- Once egg is added to broth stir again to ensure it's well combined.
- In center of bowl with dry ingredients make a well. Then add wet ingredients to this well.
- Mix dough together until it starts to pull away from sides of bowl.
- Flour the working surface and divide dough into 2 balls. This will make it easier to knead and roll out.
- Once divided knead the dough until it becomes firm in texture. Should be approximately 1-2 minutes.
- Roll out the dough to 1/4 inch thickness and cut into strips using a pizza cutter.
- Once you have strips cut return them to the simmering pot. Repeat this process with the second ball of dough.
- Once all dumplings are in the pot bring it up to a low rolling boil.
- Now, while dumplings are cooking remove chicken meat from bone. It should be shredded into small pieces to mix in with dumplings.
- Once chicken is shredded at it back into dumplings and continue to cook for approximately 5 more minutes or until dumplings have "doneness" you prefer.

- Place the chicken, carrots, celery and onion in a large Dutch oven or stockpot. Add water, vinegar and salt (adding more water, if necessary, to cover chicken). Bring to a boil. - In a large pot over high heat, combine the chicken with enough water to cover, and boil for 15 to 20 minutes. Drain some of the water from the pot, reserving 3 cups in the pot. Remove chicken and allow it to cool, then pull it apart into bite size pieces; return to pot.
