BEST HOMEMADE DONER KEBAB WITH CHICKEN (TAVUK DöNER)
It's easier than you think to make delicious, meltingly tender chicken döner kebab at home! This recipe gives you the option to cook the doner kebabs on the grill or in the oven. I like using metal skewers here, but you can use bamboo skewers for the grill (be sure to soak them in water for an hour before using). The secret to juicy, flavor chicken doner is in the yogurt marinade, loaded with garlic, citrus, and a few spices. If you have time, let the chicken sit in the marinade for 3 hours up to overnight. But even 30 minutes at room temperature will make a big difference in the flavor of your Turkish kebabs! Cook them on the grill or in the oven - I share tips for both methods!

- Make the marinade: In a large mixing bowl, add the yogurt, tomato paste, lemon zest, lemon juice, garlic, and spices. Mix well to combine.
- Season the chicken: Pat the chicken dry and season well with kosher salt and black pepper on each side.
- Marinate: Add the chicken to the marinade and toss to make sure each piece is well-coated with the marinade. If you have the time, I highly recommend you cover and refrigerate the chicken for 3 hours or up to overnight. Otherwise, allow the chicken to sit in the marinate at room temperature for 30 minutes or so while you prepare the fixings/sides and heat up the grill (or your oven). (You'll get better results of you let the chicken marinate longer).
- Skewer the chicken: Divide the chicken thighs into two piles. Using a set of 2 to 3 metal skewers at a time, thread the first pile chicken thighs through, and push them snug against each other. (It helps to prop the skewers on the edges of a pan or a bowl. And if your chicken thighs are too large, you can fold them each in half and thread them through). Repeat with another set of 2 to 3 skewers to thread the second pile of chicken on.
- To cook on the grill: Heat the grill to 400 degrees F (for my grill, this would me medium-high heat). Arrange the kebabs on grates and close the grill. Cook for about 10 to 15 minutes on one side until nicely charred, then turn over and cook for another 10 to 15 minutes or until the chicken is cooked through and no longer pink in the middle (a total of 20 to 30 minutes, depending on the size of the chicken thighs).
- To cook in the oven: Heat the oven to 400 degrees F. Using a large pan with edges or walls, arrange the kebabs on top of the pan such that the metal skewers are resting on the edges (or walls of the pan) with some room between the chicken and the bottom of the pan. Put the pan on the middle rack of your heated oven. Roast for about 30 to 35 minutes until the surface is golden brown and charred in some parts. Remove the pan from the oven and carefully turn the skewers over, brush the top of chicken with the pan juices and return the pan to the oven for another 20 minutes (longer if you have larger pieces). You'll cook the kebabs in the oven for anywhere between 50 minutes to 1 hour or until the chicken is cooked through and no longer pink in the middle.
- Rest: Remove the chicken off the heat and allow it to rest for 5 to 10 minutes.
- Carve or shave the chicken off the skewers: Prop the skewers upright on a slight angle. Using a sharp knife (held in your dominant hand), slice the meat thinly from top to bottom or however you're able to do it safely.
- Serve in pita wraps or plates. For more traditional doner kebabs, use a loaf of pita bread to wrap some of the chicken in, adding your sauce and sliced vegetables (or one of the salads listed above). Alternatively, you can serve kebab plates by arranging the chicken next to (or over) a bed of Middle Eastern rice with your salad and sauce to the side.

- Mix tomato paste with 1 cup sour cream; 1/4 cup dressing; and 1-1/2 tsp. each garlic powder, coriander and cumin until blended. Pour over chicken in shallow dish; turn to evenly coat both sides of each thigh with sour cream mixture. Refrigerate 3 hours to marinate.
- Heat oven to 400°F. Cover rimmed baking sheet with foil; spray with cooking spray. Place 2 large skewers, parallel to each other and 1-1/2 inches apart, on prepared baking sheet. Repeat with 2 additional skewers.
- Remove chicken from marinade; discard marinade. Fold chicken thighs in half, then thread evenly onto skewers, tightly threading half the thighs onto each set of parallel skewers.
- Drizzle with 2 Tbsp. of the remaining dressing.
- Bake 30 to 35 min. or until chicken is done (165°F). Remove chicken from oven. Heat broiler.
- Broil chicken, 4 inches from heat, 5 min. on each side or until golden brown on both sides. Meanwhile, mix remaining sour cream, dressing and seasonings until blended. Reserve for later use.
- Stand 1 kebab on work surface, then use sharp knife to cut chicken vertically, from top to bottom, into thin strips.
- Stack pita breads on microwaveable plate; cover with damp paper towel. Microwave on HIGH 30 sec.
- Spread pita breads with hummus; top with lettuce, tomatoes, cheese and chicken. Drizzle with reserved sour cream mixture; roll up.

My chicken doner kebab recipe is actually the same as my meat doner recipe that I shared before. Since many people have already made this change by using chicken instead of meat, I have not been in a hurry to share the chicken doner recipe until today. But as I have been asked a lot lately, I decided that chicken doner should have a separate recipe now. Those who have tried it before know very well how well the meat doner recipe works well. At least I've never met anyone who tried it and didn't like it. Chicken doner gives the same result. Can I Use Chicken Thighs Instead of Chicken Breast? I guess this will be asked by lots of people. So let me answer in detail from the very beginning. You can use any part of the chicken you want to make chicken doner, but naturally the result will vary. Since many people find chicken breast meat dry, they tend to use chicken thigh in recipes that call for chicken breast. In fact, this is one of the common (partially) misunderstood things. Chicken breast meat is the softest part of the chicken as it is the least working muscle. Therefore, in cooking using sautéing and roasting techniques, if it is cooked for an appropriate time, breast meat is the softest part when cooked. The situation is different in boiling, but today our topic is roasting. Since chicken breast meat is a soft meat, it is also one of the meats that cook in the shortest time. Unfortunately, many people are not convinced that it is cooked unless it is on its way to burning, as is the case with many foods. Chicken breast meat cooked for that long naturally loses all its water and dries up. In other words, chicken breast meat is not a dry meat, it dries out during cooking due to the wrong way of cooking. On the other hand, chicken thigh, which is thought to be softer because it is fatty, becomes tough when cooked using sautéing and roasting techniques. However, fat tissue in chicken meat is not evenly distributed between the muscles as it is in beef. The fat tissue is placed in pieces around the muscle tissues, which does not contribute to the tenderness of the meat. On the contrary, thighs (even in chickens raised in cages) have to be cooked in water for a long time in order to soften, as their muscle tissue is strong. Therefore, while the thigh is more suitable for dishes cooked in water, such as chicken with lemon sauce or baked chicken thighs, chicken breast is more suitable for dishes that use a waterless cooking method, such as chicken skewers or fried chicken squid. I know I wrote it too long, but I just wanted to share this general information that will help you in any situation where you can't decide which part to use in all chicken dishes. If we go back to the part about the recipe; you can use any part of the chicken to make chicken doner, but the result you get will vary. If you want the best result, I recommend sticking to the recipe and not overcooking the meat. Enjoy the recipe...
