SECRET FRIED HALIBUT
This is by far the BEST fried halibut I have EVER had! (That really says a lot being from Alaska you know hehe). Simple and delicious with a "secret" ingredient that will knock your socks off! Even my kids like it and they do not like fish at all. I find the perfect meal with this fish is "sticky rice" and creamed corn, but you decide for yourself!

Steps:
- Cut halibut into portion size pieces (this will vary with every family); set aside.
- In gallon ziplock bag combine all dry ingredients; seal bag and shake to mix. Add halibut pieces to dry ingredients and shake thoroughly again.
- In small bowl combine mayonnaise and mustard; mix thoroughly (secret ingredient!).
- Add some oil to skillet over med heat until oil begins to ripple. You will need to add more oil in small amounts at a time throughout cooking.
- Add halibut a few pieces at a time to skillet until full. DO NOT OVERLAP FISH. Cook until just beginning to brown on bottom side and flip. Once turned, lightly baste browned side of fish with mayonnaise mixture. Turn fish once more and repeat basting. The key to this step is to re brown basted sides of fish before removing from pan. The pieces should turn a deep brown (not black but close). That is when you know they are done.
- Serve while still hot. (May be kept in warm oven until all fish is done).
BEER BATTER FOR HALIBUT OR CHICKEN
This recipe was given to me by an Alaskan friend. I have not tried it yet (we don't eat much fried foods), but knowing the source, I'm sure it is good!

- Heat deep fryer or skillet with vegetable oil deep enough to cover meat to 375.
- Beat egg, and add remaining ingredients.
- Rinse and dry meat on paper towels in order for it to hold batter.
- Dip meat into batter and place in deep fryer or skillet.
- Cook for approx 4 minutes or until golden brown.
- Drain on paper towels.

- Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
- Whisk eggs, milk, and flour together in a shallow bowl. Stir panko bread crumbs and seasoned bread crumbs together in another bowl.

THAI-STYLE HALIBUT WITH COCONUT-CURRY BROTH
Steps:
- In a large saute pan, heat the oil over moderate heat. Add the shallots and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add the curry paste and cook, stirring, until fragrant, about 30 seconds. Add the chicken broth, coconut milk, 1/2 teaspoon salt and simmer until reduced to 2 cups, about 5 minutes.
- Season the halibut with 1/4 teaspoon salt. Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce. Cover and cook until the fish flakes easily with a fork, about 7 minutes.
- Steam or microwave the baby spinach for 2 minutes.
- Arrange a pile of steamed spinach in the bottom of 4 soup plates. Top with the fish fillets. Stir the cilantro, scallions, and lime juice into the sauce and season, to taste, with salt and pepper. Ladle the sauce over the fish and serve with rice.

- Combine butter, honey, lemon juice, soy sauce, pepper, and garlic in a small bowl.
- Portion halibut by cutting it into 3 or 4 pieces with a sharp knife. Set aside a little of the marinade and brush each side of the halibut with the remaining butter-honey mixture.
- Heat a skillet over high heat until it is sizzling hot - test by adding a drop of water to the skillet. If it sizzles and immediately evaporates when it hits the skillet, it is hot enough. - Rinse the halibut steaks and pat dry. Season with salt and pepper, then dust with flour.

PAN-FRIED HALIBUT WITH SPICED CHICKPEA AND HERB SALAD
Fresh spinach, herbs and spring onions come together here in a salad with crispy chickpeas, which is served with halibut and a punchy yogurt sauce for a quick and delicious supper. The Persian lime powder is optional; it can be purchased ground, or you can start with a whole dried Persian lime, roughly crush it with the side of a knife and then grind to a fine powder in a spice grinder. This recipe doesn't really need anything alongside, but some good bread could easily bulk it up. Turn it into a great vegetarian salad by eliminating the fish and adding some extra chickpeas.

- Marinate the fish and chickpeas: In a small bowl, mix the first 6 ingredients together with the lemon zest. Add 2 1/2 tablespoons of marinade to a bowl with the halibut and mix well. Add 2 tablespoons of the marinade to a separate bowl with the chickpeas and stir to combine. Set both aside at room temperature for 20 minutes. Mix the remaining marinade together with the yogurt and set aside.
- Meanwhile, in a mixing bowl, blend the herbs together with the spring onions, spinach, chiles, lemon juice and a good pinch of salt.
- Heat a large nonstick frying pan over medium-high heat, then add 1/2 tablespoon of vegetable oil. Add the chickpeas (and bits of garlic) and fry for 6 minutes, stirring every now and then until crisp and golden-brown. Transfer to a plate and wipe the pan clean.
- Return the pan to a medium-high heat with the remaining 1 1/2 tablespoons of vegetable oil. Add the halibut fillets, spaced apart, and fry for 3 minutes on one side, then flip and fry for another 2 minutes on the other side until both sides are crisp and golden brown.
- Very carefully transfer the fillets to a large platter. Toss the chickpeas gently with the salad, then transfer the salad to the platter next to the halibut fillets. Drizzle half of the yogurt over the salad and serve with the lemon wedges and the remaining yogurt sauce alongside.

JAPANESE-STYLE CRISPY HALIBUT WITH LEMON SAUCE
If you enjoy ordering lemon chicken from your local takeout shop, then you will like this dish. It rather resembles English-style fish fingers-without the lemon sauce, that is! I like to use a good white-fleshed fish; cod is overfished, hence I've used halibut here, but pollack would do just as well. You could even use mackerel if you wished. I like using the Japanese panko breadcrumbs because they have been flavored with honey and are extra crisp, but you could make your own breadcrumbs, of course, using a chunk of stale bread. The dipping sauce is easy to make too.

- For the Halibut: Season the halibut pieces with salt and white pepper. Put the potato flour or cornstarch, beaten egg, and breadcrumbs in three separate bowls. Dip the halibut pieces into the potato flour or cornstarch, then the egg, and coat in the breadcrumbs. Place a wok over high heat and add all but 1 tbsp of the peanut oil. Heat the oil to 350degreesF, or until a piece of bread dropped in turns golden brown in 15 seconds and floats to the surface. Fry the breaded halibut pieces in the oil for 3-4 minutes or until golden brown, then remove with a slotted spoon and drain on paper towels.

SHORELINE FRIED HALIBUT WITH TOFU FRIES, SOY SAUCE AIOLI, MUSHY EDAMAME AND SOY VANILLA MILKSHAKE

- For the spiced soy milk marinade: Pour the soy milk in a wide baking dish. Whisk in the garlic powder, onion powder, cayenne, and black pepper. Add the halibut pieces to marinate, for at least 30 minutes, maximum 24 hours.
- For the shoreline fried halibut: Heat the vegetable oil in a cast iron pan over medium-high heat, or heat the vegetable oil to 350 degrees F in a large heavy-bottomed pot to 1/3 full.
- Line a baking tray with paper towel.
- Put the flour in a paper bag.
- Remove the halibut from the soy marinade and put, a few pieces at a time in a paper bag, shake well and cook either in a cast iron pan to shallow fry or heavy-bottomed pot to deep fry.
- For cooking in a cast iron pan, turn the halibut over on all sides until golden brown, approximately or if deep frying, cook until golden brown and crisp approximately 3 to 5 minutes. Remove the shoreline fry halibut from heat, season with salt and pepper and repeat with the remaining halibut.
- For the soy sauce aioli: Put the mayonnaise, soy sauce, and sesame oil in a bowl and mix well to combine. Cover and put in the refrigerator until ready to serve.
- For the mushy edamame: Cook the edamame in heavily salted boiling water, approximately 20 minutes, until the edamame is soft and tender. Reserve 1 cup cooking water and drain the edamame.
- Put the edamame, 1/2 cup cooking water and 1/4 cup olive oil in a blender. Puree the edamame until smooth, add more water, if necessary. Remove the mixture from the blender and season with salt, and set aside to cool.
- For the vanilla soy milkshake: Put the ice cream and soy milk in a blender and puree until smooth. Divide the shake between glasses.
- To make the fries: Using a deep-fry thermometer to register the temperature, heat enough oil to 350 degrees F in a large heavy-bottomed pot to 1/3 full. Line a baking tray with paper towels. Put the cornstarch in a bowl.
- In batches, coat the tofu with cornstarch and gently put in the hot oil, separating the tofu fries as they are cooking to prevent sticking. Remove the tofu fries from the oil once golden brown, season with salt and repeat with the remaining tofu fries.

- Cut steaks into desired portion size.
- Pound until about 1/4 in thick.
- Place flour in a shallow bowl.
- In a second dish, stir together baking powder, baking soda, pepper and salt.
- Mix in buttermilk, egg, pepper sauce and garlic. The mixture will be thin.
- Dredge each steak, first in flour then in batter.

- Place skillet over medium heat.
- Sprinkle in flour, stirring and mashing to avoid lumps.
- Add chicken stock and cream.
- Simmer till liquid is thickened and the flour taste is gone.

- Set a large resealable plastic bag in a bowl. Pour in the buttermilk and salt. Add the halibut fillets and close the bag. Refrigerate for at least 4 hours and up to 1 day.
- Preheat the oven to 250 degrees F (120 degrees C).
- Place half of the crackers and half of the Greek seasoning into a blender. Cover and pulse until they become fine crumbs. Pour into a shallow bowl, and repeat with remaining crackers and Greek seasoning. Whisk eggs with water in a separate bowl.

NASHVILLE HOT HALIBUT SANDWICH
This sandwich doesn't get as much love as Nashville hot chicken, but who doesn't love a fried fish sandwich? Eat it immediately or wrap it in wax paper and enjoy it under the shade of a maple tree with some unsweetened iced tea.

- In a large pot over high heat, combine 1 cup (240 ml) of the canola oil and the Scotch bonnet, bird's eye, and jalapeño chiles and cook until a deep-fry thermometer reaches 350°F (175°C). Turn off the heat and let steep for 30 minutes. Working in 2 batches, pour into a blender and blend until smooth. Pass through a fine chinois or strainer into a medium pot. Heat again, then add the butter, cayenne, and paprika and stir with a whisk. Set aside and keep warm.
- In a large Dutch oven, heat the remaining 4 cups (800 ml) canola oil over medium-low heat to 320°F (160°C).
- Mix the flour and salt in a medium bowl, whisk the eggs in another medium bowl, and put the panko in a third medium bowl. Dust a piece of fish in the flour, then dip in the eggs, then coat in the panko. Place on a wire rack set over a baking sheet. Repeat with the remaining halibut.
- Once the oil has come up to temperature, use a spider to carefully lower 2 pieces of the breaded halibut into the oil. Cook until golden and the internal temperature is 275°F (135°C), 4 to 6 minutes. Scoop out the fish and rest on a baking sheet with a rack set on it. Repeat with the remaining halibut and spoon the hot chile oil over it until the fish is covered and glossy.
- Build your sandwiches: Lay out the bottom bread, mayo, then pickles, the halibut, followed by the cheese and onion slices. Slather mayo on the top bread and squish the sando down.
GARLIC-AND-HERB OVEN FRIED HALIBUT
Well most of it's done in the oven! The original recipe is from Cooking Light but I've made a couple modifications. While the fish is baking I deglaze the frying pan with a flavored vinegar (I use a tequila-lime vinegar) and a little water, then top the fish with the sauce before serving. - Preheat oven to 450°F.
- Combine first 5 ingredients in a shallow dish.
- Place eggs in a shallow dish.
- Place flour in a shallow dish.
- Sprinkle fish with salt and pepper.

- Whisk together buttermilk, salt and pepper in a large bowl. Slice halibut fillets horizontally, to create thinner fillets, and submerge in the buttermilk. Let sit at room temperature for about an hour.
- Pour the milk for the gravy into a medium pot, place the onion cut-side down in the milk, and season with the salt and pepper. Warm over low heat for about 10 minutes without simmering, to infuse the flavors. Remove the onion, and whisk in the butter and flour, bringing up the heat to medium. - In a separate large bowl or plate, whisk together the flour with the dredge seasonings. Prepare a baking sheet lined with a rack 4. Pour oil into a deep-sided pan, and heat until shimmering. 5. Remove the halibut one at a time from the buttermilk, wiping off any excess, and dredge in the flour mixture, pressing it into the fish. Gently lay the dredged fillets into the hot oil, in batches, so as not to overcrowd the pan. After about 5 minutes, flip the halibut, and continue to cook until golden on both sides, then remove to the rack to drain. Repeat with the rest of the halibut. 6. Serve with mashed potatoes, gravy, steamed veggies, and a fried egg.
