1 garlic clove, crushed
1 large onion, chopped
1 large green pepper, chopped
2 large carrots, julienned
3 tablespoons soy sauce

Steps:

  • Use cooking spray on medium heat in a large skillet or wok.
  • Break up and cook sausage until browned.
  • Add onion, green pepper and carrots and fry until cooked.
  • Add soy sauce and cook for 2 minutes.

It came to mind immediately when I saw the announcement for CW's Savory Stir-Fry and Skillet Suppers contest. (I didn't tell Mary I entered it. What a nice surprise it will be when she sees her recipe printed in the magazine!)

1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 cup sliced fresh mushrooms
1 cup sliced zucchini
2 tablespoons olive oil
1/2 to 3/4 pound boneless skinless chicken breasts, thinly sliced
1/2 to 3/4 pound Italian sausage links, cut into 1/2-inch pieces
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 garlic clove, minced
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
Hot cooked rice

Steps:

  • In a large skillet, saute the onion, green pepper, mushrooms and zucchini in oil until tender. Remove vegetables with a slotted spoon; set aside. , Add chicken and sausage to skillet; cook until meat is no longer pink. Drain. Stir in the tomatoes, garlic, basil and oregano. , Return vegetables to pan. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

1 package (16 ounces) frozen stir-fry vegetables, thawed
1 can (8 ounces) bamboo shoots, optional
2 tablespoons cornstarch
1/2 teaspoon cayenne pepper
1 can (14-1/2 ounces) beef broth
2 tablespoons soy sauce
Hot cooked rice

Steps:

  • In a large skillet or wok, stir-fry onion and garlic in oil until tender. Add sausage, vegetables and bamboo shoots if desired; stir-fry until heated through. ¼ pound refrigerated cheese tortellini
1 tablespoon sesame oil
1 (12 ounce) package teriyaki ginger chicken meatballs
½ cup pineapple chunks, drained
1 tablespoon hoisin sauce
2 tablespoons extra-virgin olive oil
1 cup chopped broccoli florets
1 cup chopped cauliflower florets
2 carrots, chopped
½ green bell pepper, chopped
½ red bell pepper, chopped
½ small zucchini, peeled and sliced
½ cup chopped celery
4 green onions, chopped
⅛ teaspoon sea salt
⅛ teaspoon ground black pepper
1 tablespoon chopped fresh parsley
1 tablespoon grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the tortellini and return to a boil. Cook until the pasta floats to the top, 1 to 2 minutes; drain.
  • Heat sesame oil in a large skillet or wok over medium-high heat; cook and stir meatballs, pineapple chunks, and hoisin sauce until meatballs are heated through, 7 to 10 minutes. Transfer meatball mixture to a bowl and set aside.
  • Heat olive oil in the same skillet until oil begins to shimmer. Add broccoli, cauliflower, carrots, green bell pepper, red bell pepper, zucchini, celery, and green onions. 1 lb raw shrimp, peeled and deveined
2 teaspoons chesapeake bay seasoning
6 oz sausage
½ cup water
½ yellow onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 zucchini, chopped
½ cup corn
1 carrot, diced
2 cloves garlic, minced
¼ cup chicken broth
½ teaspoon salt
¼ teaspoon pepper
fresh parsley, chopped, for serving
rice, cooked, for serving

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add shrimp to skillet and season with Chesapeake Bay seasoning.
  • Cook shrimp 3-4 minutes, or until opaque. Remove from skillet and set aside.
